Need a few things to get the ball rolling:

  • A couple pounds of meat. Pork or chicken are common, but whatever is on hand would work.

  • A bag of dried masa dough. Purists will insist you use fresh, but they can go piss up a rope. Dry masa will get you 90% of the way there flavor-wise, and can be shipped anywhere.

  • Sauce. A strong red chile sauce is perfect. You can make this at home out of dried peppers, my own personal formulation is a mix of chile guajillo and chile de arbol.

  • Corn husks.

    And then the basic steps are:

  1. Boil meat, retain broth.

  2. Mix a couple pounds of masa flour with about a tablespoon of garlic powder, and about a teaspoon of salt. Reconstitute masa with broth.

  3. Soak corn husks in water for about an hour.

  4. Shred boiled meat with a couple of forks, mix in salsa until the meat is moist.

  5. Spread a layer of masa dough on a corn husk, spoon on a bit of meat, and roll.

  6. Steam for about 2 hours.

    Yeah, it takes all goddamn day, but you can feed a ton of people and everyone loves them.

Arepas are really easy to make at home. All you need is this corn meal which can be bought in a lot of grocery stores:

Add water, salt (to taste), and mix until it can be shaped in little disk shaped things. Put them in a flat pan with olive oil or cooking oil. Takes like 10 minutes to make like 5.

Fill them with cheese, meat, butter, tuna, anything that you can put in a sandwich will taste awesome in an arepa. They are a spanish dish, I used to make them all the time.

I make 'frittatas' for my husband.

  • 1 cup chickpea flour
  • 1 cup PAN corn flour - this is NOT masa harina! (or more chickpea flour)
  • 1 tbsp VEGG (optional)
  • 3 tbsp nutritional yeast
  • indian black salt to taste (optional, it just gives and eggy flavour)
  • 1 tsp baking powder
  • 2.5 cups water
  • Salt
  • Pepper
  • other herbs spices like paprika or oregano are nice too

    Mix the above until smooth

  • ½ onion - finely chopped and sauted
  • 1 bell pepper - finely chopped and sauted
  • ½ package frozen spinach - thaw and squeeze out excess liquid
  • ¼ cup sundried tomatoes

    (you can use different veggies if you want, these are just my preference)

    Mix veggies and egg mixture and spoon into lined muffin tins
    Bake at 400˚F for 30 minutes or until a knife comes out clean

    IIRC these come out to about 50 cal per muffin, so you can have a few. They also freeze well, so you can make a bunch all at once.

    Heads up - the chickpea flour will smell real gross before it's cooked - don't worry, that's normal! It will smell much better after it's cooked.

Getting cornmeal in the UK might be difficult, but making cornbread isn't and sweet cornbread is delicious.

This recipe is really quite good and worst-case scenario you could get a couple of boxes of Jiffy from Amazon to see if you and your family likes the taste of cornmeal. You could also just go with plain Quaker Cornmeal as well, because that's not a box mix that's just cornmeal.

Any pool supply will have it. Home Depot, Lowes, Ace Hardware has it. Even Amazon has it. Looks like about the same price per pound as corn meal too. Of course sand is about 2.5 times denser than corn meal but it really is a lot better for this application than corn meal.

A lot has to do the with brand of masa. I've made corn tortillas with at least 10 brands of masa and now I have settled on Torti Masa. This brand makes a tender soft white tortilla that fabulous for soft tacos. For a firmer tortilla that I use in enchiladas, I use Bob's red mill masa or Ma Se Ca Masa. Both of these products are yellow corn masa.

I'm really sorry. Even if you've tried them, I'm gonna suggest my nuclear options for when everything is just shit no pun intended

  • Boiled potatoes with a dash of salt: Peel potatoes, boil them, mash em, put a bit of salt.
  • Matzo crackers: As bland as they can be. I always carry some on my purse
  • Arepas: Made with Harina Pan. Traditional dish of my country, super easy to make. Nutritious and if you're worried about american processed food, this is all done in south america so it's different.

    I can almost guarantee that you haven't tried arepas :)

Arepas: Get your Harina Pan (you need this type of flour because it's precooked cornmeal and you can't make arepas without it). Make dough balls according to the instructions, which are printed on the package.

Make rice, heat up canned beans, shred cheese.

You fry the arepas until they are golden brown, then finish them off in the oven before slicing them open and putting your cheese in there.
