oh lord I had pancakes this morning and they were so good!! You can follow any old pancake recipe and you can use an egg substitute (I use these) and then I also use soy milk but because it's a little thinner than cow's milk, I add a tad more than the recipe calls for. I make them for friends when they are over for breakfast and they say they taste the same as "normal" pancakes.

The Vegg - I've only used it to make French Toast, but it could help make other egg-sub recipes taste more authentic. I haven't tried adding it to this egg salad recipe, but its a great recipe even without (and without the fresh herbs if you're lazy like me) and adding the Vegg would probably make it better yet.

If you're feeling stressed out by it, why don't you do what will ultimately make you happy?

You say

So why not take the same approach for the remaining things you consume that aren't vegan? Meaning: try to find replacements, one at a time, for them?

Just dont use meat or animal products.

In all seriousness, I was a vegetarian on keto for the longest time - with the only animal product being Cheese and Eggs. It's super easy.

Vegan is a little harder - mostly because of how simple it is to bake with cheese (fathead pizza) and eggs.

Just use substitutes for things like eggs in baking.

Granted, I miss cheese. I have not found a low carb equivalent of cheese.... And if I was a millionaire, I would seriously consider buying a small farm and raise a few cows and chickens (for cheese and eggs), assuming I could guarantee their well being. Factory farming farming being the way it is... i just ended up going vegan out of morality.

But ya. Vegan Keto is possible and not hard.

It's not difficult actually! Hold on I'll get you links.

Edit: ok, here's the finished product! They were still a little delicate so next time I'm going to throw them in the air fryer after baking them in the oven. And I'm irritated that even though I used a silicone baking sheet they still stuck, so I'll probably spray the baking sheet beforehand. They were delicious though!

Edit 2: here's the recipe! I will say I didn't feel like buying a huge thing of cashew milk just for this recipe so I used almond milk creamer. And instead of egg white protein powder I used [meringue powder] (https://www.amazon.com/dp/B07D31GPNP/ref=cm_sw_r_cp_apa_i_fLIiDbAKAW6TB) bc it's a fraction of the price.
