oh lord I had pancakes this morning and they were so good!! You can follow any old pancake recipe and you can use an egg substitute (I use these) and then I also use soy milk but because it's a little thinner than cow's milk, I add a tad more than the recipe calls for. I make them for friends when they are over for breakfast and they say they taste the same as "normal" pancakes.

The Vegg - I've only used it to make French Toast, but it could help make other egg-sub recipes taste more authentic. I haven't tried adding it to this egg salad recipe, but its a great recipe even without (and without the fresh herbs if you're lazy like me) and adding the Vegg would probably make it better yet.

In all seriousness, I was a vegetarian on keto for the longest time - with the only animal product being Cheese and Eggs. It's super easy.
Vegan is a little harder - mostly because of how simple it is to bake with cheese (fathead pizza) and eggs.
Just use substitutes for things like eggs in baking.
Granted, I miss cheese. I have not found a low carb equivalent of cheese.... And if I was a millionaire, I would seriously consider buying a small farm and raise a few cows and chickens (for cheese and eggs), assuming I could guarantee their well being. Factory farming farming being the way it is... i just ended up going vegan out of morality.
But ya. Vegan Keto is possible and not hard.

I don't eat eggs for ethical reasons, and just recently ordered some of Follow Your Heat's VeganEgg
It comes out to be 40 calories per "egg", and it scrambles up like chicken eggs. It actually smelt so much like eggs while I was mixing it that I felt off put. I figured maybe someome around here who is cutting calories would be interested in still being able to enjoy their scrambles in the morning.
I use this egg replacer for 99% of my egg-free needs
also, may i recommend a simple shortbread recipe as your vanilla cookie? something like this would be delicious, I'm sure

The Vegg one can make about 100 "eggs". The Follow Your Heart one can make about 12. However I'd assume they've got slight taste differences. I've never heard Vegg being used to make omelettes so I'd go with FYH for those very egg-y applications. For baked goods, I'd go with Vegg.

I wouldn't say it's AMAZING but it works especially if you want to eat it along with other food, in a breakfast sandwich, etc. I add garam masala or other spices to mine :)
You don't need eggs, and they're not even healthy for you (egg companies cannot legally say they are nutritious). Consider making tofu scrambles if you want clean protein, or making chia seed french toast. If you REALLY want that eggy flavor, check out kala namak (black salt) or the Vegan Egg.
(Sorry if I came off condescending I just really love chickens and hate to see them used for their eggs)

Edit: ok, here's the finished product! They were still a little delicate so next time I'm going to throw them in the air fryer after baking them in the oven. And I'm irritated that even though I used a silicone baking sheet they still stuck, so I'll probably spray the baking sheet beforehand. They were delicious though!
Edit 2: here's the recipe! I will say I didn't feel like buying a huge thing of cashew milk just for this recipe so I used almond milk creamer. A lot of cheap sandwich bread at the grocery store is vegan. The $1 buns where I shop don't have any animal products. Those are certainly not "fake."
Baking vegan is easy - just use a plant-based milk (soy, almond, etc.) and egg substitute (flax/chia seeds, aquafaba, VeganEgg, etc.)
The dairy industry is probably the cruelest of all. There's no getting around that. Cow milk is for baby cows.
"Free-range eggs" is a selling point that means almost nothing (basically the chickens have access to a small door leading to a small outdoor area where they could theoretically go).
I used to hold your views until I started watching a lot of YouTube videos and documentaries. Earthlings and Speciesism: The Movie are a couple good ones. The truths behind these industries are painful to learn, but necessary to be aware of IMO. It's good that you're aware of the sustainability issue. Cowspiracy is a good documentary about this (on Netflix).
Personally, I wouldn't eat meat from a lab because I haven't eaten it in years and it would just be gross to me. I don't need it.
