I've been on a keto diet for a little over a year, but it's been over five years since I've had good biscuits and gravy. That ended tonight - this was delicious! I found a promising keto pastry mix and substituted it for the flour in Alton Brown's biscuit recipe. I won't eat it often, but it is a nice comfort-food treat.

For five biscuits:

(I halved the recipe for a dozen, but only got five biscuits instead of six - guess I formed the dough too thick.)

1 cup Farm Girl low carb pastry mix

2 t baking powder

1/8 t baking soda

1/2 t salt

2 T cold butter, cubed

1/2 c cold buttermilk

Preheat the oven to 450 F.

Sift the dry ingredients together and using your fingertips, quickly rub the butter into the mix until it looks like crumbs. Create a well and add the buttermilk. Stir until just mixed and turn out onto a floured surface (I used more of the baking mix). Fold the dough over on itself about five times and pat into a 1" round. Cut with a biscuit cutter and place on a baking sheet with parchment paper or a silpat. Bake until golden brown on top - 15-20 min. Brush the tops with melted butter.

Per 1 biscuit: 105 cal, 11.2g total carbs, 3.4g net carbs, 5.6g protein, 6.5g fat

For the gravy:

1 package Jimmy Dean hot sausage

2 T Farm Girl low carb pastry mix

1.5 c heavy cream

2 t pepper

1/4 t cayenne

Brown the sausage over med-high heat. Sprinkle the pastry mix over it and brown a bit more to remove the raw flour taste. Lower the heat to med-low and add the heavy cream, pepper and cayenne. Cook until thick.

Per 1/4 of recipe yield: 600 cal, 2.5g total carbs, 2.5g net carbs, 15.7g protein, 57.8g fat

EDIT - I just had one of the leftover biscuits warmed with butter and sugar-free blueberry jam. It was yummy, but without the strong taste of the gravy, I could taste the baking powder. Turns out, there's baking powder, baking soda and salt in the Farm Girl mix. I probably should have read the ingredients... I'd back off the baking powder, soda and salt next time, but I'm not sure how much.

The KFC used to but I hear they're bringing it back in a couple weeks. It's just regular kfc chicken with This Type of waffle. They're fried before being served so they come out pretty moist(although unhealthy) and taste pretty similar to funnel cake if I'm being honest. It tastes more like a desert but I figure if you're eating at KFC, you're not trying to be healthy.

I am not going to tell any Postal Worker about my addiction to large quarantines of Thomas', Corn Bagels. They don't sell them in the local stores anymore, so I need to order them online. But my private Bagel Consumption habits are no business of the government jackboots.

Stayed in bed til about 11, wasn't hungry so I had lunch around 2. Leftover chicken salad, no bread. Probably would've been 1.5 sandwiches worth. Snack, had 2 little beef jerky sticks. Dinner was a bacon cheeseburger with all the fixings on a bun I made from this recipe:

Is it possible to abuse the "carbs - fiber = net carbs" line of thinking? I've been doing keto for about 3 weeks now, and I'm not sure if I'm in ketosis. I want to trust the process but wondering if short-cutting things.

I travel a lot for work, so I'm rarely at home. I've found doing salads at Sweetgreens (x2 meat, with cheese and avocado; no bread, potatoes or starchy things). When I am at home, I've been using a "zero carb" bread (ex: https://smile.amazon.com/ThinSlim-Foods-Calorie-Cinnamon-Bagels/dp/B00GU2E8UA/ref=sr_1_12?keywords=no+carb+bread&qid=1557158845&s=gateway&sr=8-12 ) along with low carb ice creams or chocolates (generally using sugar alcohols).

So far, I've lost about ~3 pounds over 3 weeks. Not bad, but not amazing either. I'm wondering if it's due to keto, or due to calorie restriction from having salads every day!

A few other data points:

  • The second week I was having horrendously smelly farts. That's since gone away
  • I've tried using the "ketostix" urine tests. I know they're not ideal, but think I'm getting the "0.5 ketones/mmol" range but I'm bad with colors *shrug*
  • I will be honest and say I've had 4-5 cheat meals over the past 3+ weeks

    Am I over thinking things? Or need to add more fat?
