I sill play through both of these every few years. The best part is that they've gotten even better since they were released due to the cult following.
Modders have gone through every line of code in these games and fixed all of the bugs that originally released with the game, and even revealed hidden features with unofficial patches for both Fallout 1 and Fallout 2. And I highly recommend the high resolution patch for both Fallout 1 and Fallout 2 for better graphics.
I'd also like to give a shout out to Fallout Tactics. It doesn't have the same open-world RPG elements as the first 2 Fallouts, but it has better and more interesting combat mechanics. Definitely worth a play if you liked the other 2.

Also, I'm literally waiting for paint to dry right now, so that's why I'm spending this much time on something this stupid.
The Trilogy is $18.49 on Amazon, $6 each at Good Old Games (GOG), or $10 each on Steam, and I occasionally see it in Meijer or Walmart for $10-15 when they are clearing things out.

Start with Fallout 1, of course! The actions of the Vault Dweller are really important to the overall plot of the later games. Do make sure you play through Fallout 2 as well though, because gameplay-wise it improves on everything started by the first. New Vegas has SO MANY references to Fallout 1 and 2 that are really easy to miss if you haven't played them.
I also am running Windows 7 64 bit, and had no problems that a quick google search wasn't able to solve. I think there were a couple problems here and there with color conversion, but there are easy-to-use mods available to fix it.
This is the version I bought, and it runs fine on my machine.
If I'm not mistaken, I think gog.com has them for cheap as well, and they're probably optimized even more for a modern OS.
If you mean in-store I have no idea. But they have this on amazon.
Some of my favorites...
AllMost of the Sim games (SimCity, its sequels and its sister games like SimTower). Avoid most of the post-EA Sim games like The Sims, SimCity Societies and Spore. There are good non-Maxis, SimCity-inspired games like Cities XL and Tropico. Worth checking out sincee the "real" Sim series has gone to shit lately.Good Old Games and Steam are good resources for finding PC classics on the cheap as well as being patched to work on modern PCs (Windows 7 64-bit).

I don't think you can beat many of the RPG's for depth (in terms of content, immersion, etc) so I'll stick to those.
Baldur's Gate series, Fallout series (the older ones especially!), Icewind Dale series, Dragon Age, Mass Effect - in short, basically anything from Bioware. If I had to choose one among that list it would probably be Baldur's Gate 2 - it isn't easy to convey how deep the game is so just check it out and see for yourself.
A lot of these games I mentioned are older and are available cheaply in collections (talk about value for money!). You may need to do a little bit of tweaking to run them on Vista or Win 7 but it is easy to find directions online with a little bit of searching:

I'd probably also recommend Morrowind (from Bethesda) and Oblivion, though I'd recommend Morrowind over Oblivion if you had to pick one.
If RPGs aren't your cup of tea, I also have a short list of shooters that offer tactical depth in single-player and/or develop their game worlds well:
The Orange Box (HL2 + Expansions), Far Cry (trust me on this one it is actually a decently long FPS that can be quite engaging and tactical), Crysis (if you have a strong enough PC to run it, you'll find it offers some very intense and involved firefights).

I got both, with Tactics all together for fairly cheap. The "Fallout Trilogy". I already owned 2, too. :) Best way to do it IMO.
