Finding cheap tablets that run Minecraft well is a bit tricky, and finding cheap tablets that may continue to work well for the next few years makes things a bit more difficult. I would only look for devices made after 2014 if possible. Anything before then would likely be worse than your current Samsung Galaxy Tab 3, or may not keep up with the ever more demanding games and apps in the coming years.
It's worth mentioning that there aren't many kid-friendly tablets that would be a significant upgrade from your current device. For example, the Kindle-Fire kids edition, while an excellent first tablet for kids, performs similarly to the Samsung Galaxy Tab 3 and thus wouldn't be much of an upgrade. The devices I list are meant to be possible upgrade suggestions that utilize better hardware than cheaper tablets geared towards kids. However, some of the tablets I list can make for a great family tablet, and you can find accessories and cases for some of the options that make them more durable from inevitable drops and other accidents that may occur.

There's the Nvidia Shield Tablet, regarded as one of the best android tablets released in the last few years. If the rest of your devices live in the Apple ecosystem, the iPad mini is a great device. If you prefer to have the same 7-8" form factor in an Android device, I love my NVIDIA Shield K1. Unfortunately, it's sometimes difficult to find it in stock. The new Huawei Mediapad M3 is another 8" Android device that's getting very solid review.
I use an nVidia Shield tablet like this. I've been using it for over a year and it works great. Highly recommend.

I got my fiance's Nvidia tablet in the mail yesterday. I booted it up and started a new account because they had the Lego Jurassic World game for over half off until today and he's not getting it until next week. Only to discover you basically need the controller to play anything that's not a tablet game. So I ordered the stupid controller and he better love it because geez this is expensive. Had I known this, I would have ordered the tablet and controller together, but it only would have saved me $1. It was my understanding that it had on screen controls, too, but I couldn't find any. Oh well.
I went grocery shopping yesterday. This seems like not a big deal except it has been literal MONTHS since I've properly grocery shopped. We've been scrounging like mole people. I didn't really have the money for it but I'm so tired of not having actual food. But now we do! At least for the time being. And now, with my new seasonal job, my hours are much better. It's just swollen/puffy on the lower/outer lid and there's a definite dot of pain. Maybe a stye? The Switch is definitely not more for less, at least in terms of hardware. Nvidia's K1 Tablet is weaker than the Switch would be since it's using the K1 rather than the more advanced X1. It also doesn't have an internal fan, detachable controllers, Type C, or docking capability.
I hear people on this sub saying that the Nvidia Shield K1 is more than adequate but its $200.
The Asus Zenpad is also around $200 and it has decent reviews.
And finally, there's the Lenovo Yoga Tab 3 for $125. Just some options for you to consider.

Amazon.com ships to Aus the nVidia Shield K1, $199 USD (about $270 AUD), a hereditary sucessor to the N7 2013 2nd edition IMO, but it's almost never in stock so look out for it. Goodbye your N7, I'm scared for the day my 2013 bites the dust.
I have spent all night looking for the best solution. My main concern being how well the device is supported by Kali / Nethunter, I thought the range of Out of The Box supported devices was wider. Now I'm also looking for a good price.

Like others have said, the N7 2013 is a bit long in the tooth, and probably won't get updated to Android N. You might want to wait it out, and pick up a deal on the N7 2013, on Swappa, while you wait to see what the holidays brings towards the end of the year in the way of deals, and new hardware releases. The NVIDIA Shield K1 $199 on Amazon is pretty good if you don't want to wait.

You think this is expensive? This is one of the best value/money tablets out there right now... I don't know if you can get better for under 200 unless you forget about getting a 16:9 tablet.

I would not recommend you buy samsung, sony or apple tablet. They usually are much more expensive and not worth to pay so much.

Google it, all the reviews for it are almost all positive. The only downside for some is its WiFi only, no 4G/mobile connection, but I tether my phone. Nvidia updates it constantly, its designed for gamers in mind. No lagging on anything.

OK, well since I don't personally have this device for testing - it's hard for me to verify a fix (this was somewhat of a stab in the dark).

The K-1 is the current model, it has pretty much he exact same specs as the previous shield tablet but has no stylus or charger. It also won't burst into flames like the old one.
The K-1 should be the cheaper one (seeing as there's no stylus etc.), at least it was that way when I bought mine.

Both Amazon and Newegg have it in stock in the US. I've heard other people sayings it's routinely out of stock overseas, but I've yet to see it out of stock in the US. Rumors of an X1 tablet have been floating since the release of the X1 chip, but as the K1 tablet was only re-branded in December, I'm willing to bet it will be for sale for some time in the future. I've had my eye on it for the past month, finally pulled the plug and it gets here today supposedly.

A newer model of the shield tablet came out with the exact same specs, and sells for $200 brand new. It appears that you can get a used one for $130-$170, unless is yours the 3g/what does it include?
It all depends on size. Most tablets are used for reading, videos/movies, possibly gaming, and mostly are used as multimedia devices. The normal goal with a tablet is to deliver a solid display and enough horsepower to keep things going smoothly at that resolution. All of the next mentioned tablets fit this bill. Suggestions-

Most Samsung tablets along the lines of Tab 3-4 etc or Tab S2 fit the bill also, but the main problem with these is no android updates and TouchWiz, which slows everything down(IMO).

Just make sure you get the K1 version if you do buy one. The previous model was the same thing without the K1 and they fixed a few of the issues it had with the new version.
The xiaomi mipad 2 is a decently priced device. It runs android so your apps will be usable from your Nexus. I have used it and it's a very good tablet.
A lot of people here also praise the nvidia shield.
Edit. There are also a lot of cheap chinese tablets with dual os (android-Windows) that can also double as netbooks. The quality varies though.
