This question is really really subjective. Before I answer, r/headphones and r/audiophile are good sources for more in-depth stuff.
I believe that headphones have a "luxury car" market. There is a sweet spot for value, but yes, more money will get you more things and higher quality sound. Since you want it to stop outside noise, you want closed-ear headphones. You will also probably want them to support gaming surround-effect, in order to not get disoriented while playing. This already sets you at a price floor pretty high, at least for most people. I would advise you to take this purchase very seriously, and consider the longevity of the device. I personally have used my Sennheiser 598's since I bought them for $300 in 2011. These won't work for you because they are open-back. That is a long, long time for a piece of equipment. Please consider the lifespan of these things in your purchase.
Beyerdynamic DT 880 (it says semi-open, but actually more like fully open).
AKG K612 Pro: some prefer this to the K700 series, even though it is far less expensive.

i've heard phenomenal things about the sennheiser HD599 headphones. it's up to you whether you like the aesthetics of them, though.
If you can, I would recommend you go ahead and test them yourself, as everyone likes different sound signatures.
Also worth mentioning, when you get new headphones, don't judge them right away, as they don't generally bring everything to the table right away. Use them for a decent amount of time, as they may change the sound quite notably, and you might grow to like them more too.

Hey if you are looking for good headphones I always recommend the Audio Technica ATH m50x's. They have to be the best bang for your buck when it comes to all around sound quality and comfort. I have not found anywhere where there is a sale on those though. How ever because they are such a good price already you can grab them off this link for $179

I'm an FPS gamer (and plan to start streaming) and am building a new silent gaming rig! I currently have some terrific headphones and am looking to find some minimal bass 2.0 Speakers for my sit/stand desk. Parts being considered are below. Questions at end. Thank you! Also, regarding "minimal bass", that is an absolute requirement - unless it's easily adjustable. If you’re looking for really great wired headphones, don’t go with gaming headphones. They are overpriced for what you get. After being unsatisfied for years, trying some of the “best” gaming headphone, I finally ditched the whole lot of them and went the audiophile route:

HD599, the revision of the HD598, is an excellent choice for an all around there. That's a well-balanced sound, and it is easy to drive.

I splurged a little and got some Sennheiser HD 599 and they are great. They also have some less expensive versions as well.
Dipping a toe into audiophile world a little, and these ones are generally regarded as pretty good for gaming purposes.
They are Open Back, so if you have lots of background noise you want to block out they definitely won’t be for you.
I'm a big fan of these headphones' expensive cousins, but I haven't tried these ones out.

As far as headphones I bought these. I've had them for 4 years with no issues, not a big fan of the color but the sound makes up for it. The mic you have is much better than mine so you are probably all set there.
I would split your budget to get two headphones for dedicated use.
b. Gaming microphone => Get the ModMic 4.0 (ModMic 4.0 Amazon Link) for $50. These are great and can be driven using your motherboard. However I would suggest pairing them with something like this (USB Sound Card Amazon Link) for best results - add another $15 for this.

So you will be spending $157 for the gaming headphone and mic and $148 for the music/movies headphone. I know this has a huge drawback of switching headphones when you want to do either, but you can also use the HD 599 for gaming as it has good imaging. The sound stage is not as wide as the AD700x but it is still good enough for positioning shots. However this will give you the (relatively) best of both worlds for your budget. :)
If you need a mic, Sennheiser Game One, otherwise this cheap HD 599.

I don't think that you can expect any prices on Black Friday that would make a 10-month wait worthwhile.
If you want to buy in a local store, you can always try Media Markt or Saturn or Conrad, but they don't necessarily offer the best prices, even if they claim it's a special offer.

Bose Quiet Comfort of course are also very nice to have, but I haven't seen them on sale <200.
In any case, I would check them out in a store. Put some music/songs that you are very familiar with on your smartphone and plug the headphones into it. That way you can tell whether you like the way they sound as well as checking out whether the headphones feel comfortable to wear.

Get the Sennheiser HD 599 SE. They're the upgrade to the 598. They were just half off for Prime Day on Amazon, normal price is $200. Currently, the ivory color version is $142 on Amazon. Best high audio headphones you can get for $200 or less.

Keep in mind those are both open-back, unlike the other headphones you listed. There will be no isolation and a not-insignificant amount of sound leakage if you're wearing them around other people.
