My cat was starting to get more fat than fluffy, I bought a puzzle feeder and she has lost about a pound and a half in the past year or so. In addition she isn't throwing up near as much from eating to fast because she has to pull what she wants to eat out of the feeder. I used to feed her about a cup of food a day, now with two cats I throw food in whenever it's empty, maybe once a day? They just bat some out when they're hungry, I never have to worry that they're starving.

I have a cat that is a larger breed had the same problem with free feeding from a bowl. She was getting a few pounds overweight, losing energy to play or do anything and vomiting all over the carpet on a near daily basis after speed-eating (gross!)
I bought one of these bad boys about a year ago and ever since my cat eats slower and has drastically cut back 95% of the vomiting. Not only that, she has dropped a few pounds and is wayyyy more active around the house. Plus I think they enjoy playing with it lol. You might here little clinks throughout the day as the kibbles hit the next level, but overall a great stress-reducing investment for me.

My girlfriend's two cats go ballistic if there isn't food available at all times.
My cat eats til she pukes, too. To try and prevent that, we bought two puzzle feeders. My cat also tends to harass us until we go with her to monitor her eating.
Since we got the puzzle feeders, our cats eat a lot less food overall. But mine still needs a chaperone.

No advice on whether or not to get a second cat, but on entertaining your cat when they're home alone:
-Leave the TV on Animal Planet
-Get some treat balls or puzzles to hide in different places around the house every day
-Rotate which toys are out instead of having them all out at once. That way they stay new and exciting.
-Get your kitty some nice window perches so she can look out the window.
Your best bet is to feed him his meals in some sort of food puzzle.
I alternate my scarfing stray between these:

Treat Ball
And then sometimes I feed him pellet by pellet by literally just throwing his food down the hall for him to chase. He loves this, it gets him some exercise, and it forces him to eat much more slowly.
Not sure how well it would work for your kitties, but my roommate's cat got super chunky last year until my roommate bought one of those feeder tree things that forces the cat to knock food down from inside. Once he had to work for his food he stopped eating so goddamn much all the time.
We have the ball, but we block a couple of the holes with tape.

We switch up what one we feed them in to keep it interesting. They are much happier now, less destructive, and are kept entertained
It's not uncommon for cats to not chew their food, but crushing it could help.
Another cause of the vomiting might be that she is eating her food too fast. Scarfing food too fast or scarfing/then drinking water can cause cats to vomit (drinking after eating causes the food to absorb the water and swell in size).
Observe how fast she is eating, and if that's the case look into getting her an enrichment feeder. It forces the cat to slow down on their eating.

We already have 2, and two others that we tried and she figured out really quickly.
The problem with most of them is that she is capable of figuring out the "human" way of opening them/disassembling them, and somehow does it. Like, she's figured out how to operate latches and twist things that are twist-drop-locked into place.

My cat loves this toy. He plays with it independently so he is much less needy when I get home from work. Cat towers also keep cats occupied because they love to climb. You can also keep him entertained with a feeding puzzle like this one. You seem to have a good play schedule, but maybe your cat just needs more mental stimulation! I understand you need to respect your roommates space, so hopefully adding some of these things into the cats life will help!
Little off topic, if your cat is throwing up regularly and not due to any specific medical issue it's often just from eating too fast. I scatter kibble across the floor, or put it in a food dispenser, to slow them down. The Petsafe Fishbowl, a cut open tennis ball, Busy Buddy Twist and Treat, or similar food toy. Or there are neat towers like this one that my cats love.
I had the same issue with my cat eating a lot and puking afterwards. My other cat never had this issue. I bought them a CatIT Food Tree and it really helped slow them down and also keeps them busy!

The new cat hasn't been spraying outside the litter box has he? If so, it may be worthwhile to give any problem areas a really good clean up.
Is it this feeder? I've used it when my cats were kittens and we were free-feeding. This allowed both our cats to eat their fill. They've both mellowed out and learned to share both dry and wet food so we don't have to worry as much anymore, but maybe the feeder will help!

Would a slow feeder toy be a possibility? I let my cats forage food out of one and it's legit just sit and use one paw to get the food out.
This is pretty much my cat arsenal. Not sure if these will work with your man but figured i'd put them out there. I also buy cat sticks for them to chew on but usually you have to supervise them because big chunks get chewed off.

You could try a feeding tree as below. Cat will need to 'work' for her dry food. Hopefully this will make her eat more slowly and give her a chance to feel full up. Then she can come back to it throughout the day.
