In that case, the implication is not that Chinese speakers "can't figure it out". Characters must be chosen to produce a phonetic reading of "co ca co la" and the selected characters, are, additionally, going to have meaning of their own. The myth is that Coca Cola's marketing is ignorant, not that Chinese people are stupid. The myth states that Coca Cola chose a phrase meaning "bite the wax tadpole", but as awa64 explains below they actually came up with a very elegant solution and "bite the wax tadpole" was only used unofficially by native Chinese themselves before an official writing was decided upon by the company.
I picked this up at random in the library the other day and read it: http://www.amazon.com/Word-Myths-Debunking-Linguistic-Legends/dp/0195375572
This legend is covered, as well as "Chevy No Va", "Rule of Thumb", "Ring Around The Rosie" and a few other big ones. It's very dry, but interesting if you're into that sort of thing.
If these stories interest you read The Vanishing Hitchhiker. It's an EXCELLENT book on urban legends. I took Mythology and Urban Legends in university and we read it. It's fun and informative. Also it comes in handy when people share stupid shit on Facebook, as you can literally point to a book and demonstrate that something is a known urban legend.
Have you heard of John Titor? If I remember right, someone was posting on physics message boards back around 2002-2003-ish claiming to be from a future America after Civil War II, stated he came from Gainesville, which people were calling Fort UF. Some would press him for info about his timeline, others would press him for proof/explanation on time travel. As I recall, some of the things he said weren't known at the time but some has been verified since. He's considered one of the greatest hoaxes of our time, assuming he's a hoax. The original book on the matter was a limited print run by a small publisher, copies going for hundreds of dollars now, but there is also this book now that I've been meaning to pick up. https://www.amazon.com/Conviction-Time-Traveler/dp/1453643184/
This is the book. Too Good to be True
This is a clip of the author on Letterman
The story is from this book. The story, word for word, is written out on page 260.
