Hi there. I'm half turkish half greek. While you have the right idea here, I'd say execution can be better. I'm not trying to be snobby about my cuisine or anything that, I genuinely want you to make better kebabs.
Now, issue #1 is the ground beef/veal mix. Veal is very lean, I wouldn't use veal at all. Personally I'd go for lamb, but ground beef works too. You want some fatty stuff, preferably 80:20.
Now there are different schools of kebab, but you could also add finely diced onions, crushed garlic (roasted if you like your garlic mild), chopped parsley, maybe a little bit of finely chopped mint (best with lamb) and your favorite mix of spices. Sometimes I go with just sumac and cumin, sometimes I do the whole nine yards. The latter makes for milder kebab. I'd also add a shitton of cayenne (better yet aleppo pepper) but I like my food spicy. You gotta knead the mixture until the texture is smooth and the fat is better distributed.
Now, it works best to use flat, wide skewers like this or this because it's best to make your kebabs flat by pressing down on them with your fingers. This maximizes your grilling surface and gives you the most crust.
Your salad is really low effort, if you want to make a proper greek salad, you should chop everything much finer and dress with just olive oil & lemon. But anyway, we don't eat kebab with salad, just some flatbread (lavash) and very finely sliced red onion mixed with chopped parsley, sprinkled with sumac, salt & pepper.

try looking for a "churrasco rack." looks like there's one called the "super skewer", too. plenty of product links with that search term.
they're all pretty pricey, however. fwiw, i have a set of these. i dunno if you'd be happy with kind of setup, but for the price you could buy 3 or 4 sets and jury rig your own rodizio, heh!
I've used bamboo skewers before for stems, wrapped in florist's tape that i got from my local florist (who also gave me a demo on getting it to wrap around nicelyl.
For keeping the flowers' shape, that's where i'd use floral wire. Go around the petals with a sc over floral wire and you'll then have posable petals that should hold up to being thrown.
I'm not sure how clever it is to throw the wooden skewers, but they're cheap enough that you could practise and see if you can wrsp them and throw them safely.
We definitely eat corn on the cob, at least in the south. The normal preparation is to boil the corn cobs and then when the person is about to eat it, they take a pat of butter on a knife and spread it over all the corn, then you sprinkle the corn with some salt and pepper all the way around, and then you eat it straight off of the cob. Because the corn is hot and slippery, often people will have little skewers to stab into the end of the corn so it is easier to hold, like these.

It's a kind of kabob skewer. For larger items, that would just spin on a round skewer due to their weight.

So if you're using a charcoal grill, you generally have 2 grates. A lower grate where the charcoal sits on, and then an upper grate where the food sits on. Light your charcoal, put your upper food-cooking grate back on, place the racks on the grate, skewer your food, and cook away. You can make direct and indirect heating zones if you wish, and that's usually what I do to have some maneuverability.
