A KitchenAid Mixer Why? I like to cook and bake. My mother has one that I used for years when I was a kid and still living with her. I'm 30 now. I remember she got it when I was like, 5. Over a dozen moves, being abused for holidays making bread and cookies and cakes, being used by my Dad (I swear, he looks at appliances and they break) and it STILL FUNCTIONS PERFECTLY.

I started keto just over 5 weeks ago, but I'm planning a keto Thanksgiving with my best friend (who is also doing keto with her fiance!) Here's what I was thinking:
The two things I'll be missing that I haven't figured out how to keto-fy are green bean casserole (just can't do it without those crispy onions) and sweet potato casserole. There are no bread in a box products for bread machines? The depth of your knowledge on this topic you profess so passionately about is showing. How about Here, Here, Or Here. That's right, it's actually very common for bread machines. See how this wouldn't count as something to show off to a bread subreddit? "I purchased a box, dumped it in, and literally pressed a button!" Is better suited for showing off the capabilities of a breadmaker than the skill involved in making bread.
I don't know/care what you heard in some interview somewhere... I've heard just about everything from both sides of a given issue somewhere. Can google an interview on either side in a half second to make my point, but I've no reason to. If the fear of failing to make something in the privacy of your own home is enough to turn you off from cooking/baking for life, then /r/psychology or /r/anxiety is probably a better place for you to make a first post. Baking bread is an art, one that's ancient and respected. Having a machine that can do it in one pass is great engineering, but isn't in the spirit of what this sub is about. The fact that it brings you a sense of accomplishment I find pretty amusing however. Does pouring milk on your cereal give you the same pride and satisfaction of a job well done?

Honestly, I buy a loaf of Udi's bread for $4something ($3something with the coupon from their website) at Publix/wherever once a week, and that's enough for me. I find enough variety and don't find I need substitutes.
I get buy on Kinnickinnick Bread and Bun Mix which I buy in bulk on Amazon (http://www.amazon.com/Kinnikinnick-Foods-Gluten-Free-Kinni-Kwik-35-5-Ounce/dp/B000LKTVXQ/ref=cm_cr_pr_product_top). I split it with my brother ever few months. I can make bread, little buns, hot dog buns (buy mini tins from the store and bend them!), whatever I want. You can also mix the mix and water with baking soda (a bit of experimenting) and add some powdered sugar and make pancakes! Regular folks corn bread is often GF. I also get Namaste Pizza Crust (http://www.amazon.com/Namaste-Foods-Gluten-Pizza-16-Ounce/dp/B000LKZA1I) for special occasions. Pasta is super cheap and delish -Tinkyada is $2.99 a bag at Walmart...I prefer Publix for ethics reasons, which is $3.95, but still. Not bad!
I don't know. I'm a college student (grad student now --even worse!) and I make it work. You just have to be crafty.
But I totally understand. My boyfriend goes grocery shopping and buys $0.99 Pasta Sides and Kraft Meals and soups and yummy mcyumyum foods that are super cheap and look great, and I get to by quinoa and $4 bread...but it can be done on a budget! I just smile because my food is less processed and lower in sodium and preservatives!
For sure! A product called Chebe has been a lifesaver. It is mostly tapioca ("manioc") flour, I think it has some cream of tartar or something else too.
I use the general mix according to the directions on the box, but I do my own thing once the dough is mixed up.
One batch of dough on one cookie sheet will make a thinner crispier pizza that still won't snap if you fold it, thin but not like a cracker.
One batch on a 14" round pizza pan will give you a more chewy and slightly thicker crust.
Follow the directions on the box, but use a tiny bit less water than they say. Only add it if the dough refuses to pick up residual flour in your mixing bowl. It should be sticky but not "wet" when it goes in the pan.
Once the dough is mixed, oil your pan and press the dough in. It's forgiving, so you can manhandle it and smack it around until it's uniform in thickness with a slight dip at the middle. Just make sure there is dough everywhere and no bare spots and you'll be fine.
Bake the crust at 350 with nothing on it for 7 minutes. Pull it out, and slide the whole thing off the pan back into the oven directly on the rack for 8 more minutes. Then pull it out, set the oven to 450, top the pizza, and pop it in whenever. I never time the next part, watch it after 10 minutes for the right level of cheese-browning that you like. I let mine get brown all over.
Its a great mix of textures, crispy and chewy. And it even reheats well!

Can you afford a bread machine? If so, buy a Zojirushi and then use this box of flour (GF Pantry Favorite Sandwich Bread).
If you get motivated, you can experiment with other bread recipes but I never had really consistent luck.

This bread mix is AIP by itself. The cooking instructions call for eggs and cheese for the original bread recipe. You could omit the cheese and substitute gelatin eggs. It might be a good mix to start sourdough experimenting. I can usually find individual boxes at my local grocery store near the alternative flours section in the baking isle. I’m in the US.

When you get to your goal weight, you can eat stupid once a week and be just fine. You'll feel much better when you're at that point. It sucks for a solid month or two. After that, you're good. They even make low carb tortillas and low carb bread nowadays. But don't be eating this bullshit until you're past the induction phase. Stick with the meat, vegetables (no starches) and water. If you want alcohol, drink Vodka or Red Wine, but know that when you drink alcohol, your body will burn that first before burning fat, so try to stay away from alcohol when you can.

They sell the cheesy bread dough in a box. You just add water and eggs, roll into balls, and pop 'em in the oven for 25 mins.
