You said you'll be riding for "fun and fitness" - Do you ever think you'll bike to work? If so, the lack of rack mounts might suck, but a backpack should do fine. If you ABSOLUTELY need rack mounts, which you shouldn't unless you plan to commute long distances or do some light touring, then get the Jake.
The felt is also a fucking sexy color, as girly as that makes me sound.
So, if you can deal with no rack mounts, get the felt bike, along with this and this and you'll be all set for exercise, and you can wear more "normal" clothes for "fun". But the cycling jersey really helps to carry some food, a spare tube, and some necessities in the back pocket like cash and I.D.
One last important thing that could throw you off completely: orthopedic issues - make sure you try the bike and that you have no hip pain - if you do, you might consider getting a hybrid for a more relaxed position. If you feel comfortable on the F75x, then it's one hell of a bike, and I wish you luck.
EDIT: Not sure about the wheels, but the Felt is about as good as the Jake the Snake, even at the MSRP it would be a really good deal. If you can get it $1100 out the door, then that's an insane deal.

Neck warmer, unless it's super duper cold, then try full Balaclava
Windproof gloves, and if you want extra padding, try Pearl Izumi from LBS. They're pricier, but may be worth it depending on your comfort tolerance levels.
For Florida/summer:
Best "cheap" bibs! Double stich and will handle lots of washes.
Comfy jerseys with high quality zipper (the zipper is usually the first thing to break on the cheapies).
For ladies, my wife loves these kits. Comfortable and durable.

Is that one way or round trip? Maybe not the most necessary if that is a round trip total, but if you are going to doing it every day, it will makes things a little more comfortable.
If you want something a little quicker to get in or out of, you could pick up some MTB shorts which have padding in them.

Seat is trickier, ideally you'd go to a bike shop and try some out, but my shop doesn't carry many seats. So I did all the research I could for seats that were good for bigger riders and I had narrowed it down to a Brooks or the ISM. At the end of the day, it seemed like the ISM was made better for longer ride comfort.
The seat that came with my bike was a true ass hatchet and was awful only a couple miles in. So I knew it was the wrong one for me.
Your local bike store might have a try before you buy and they can probably help get you fitted. That might be a legit part of your problem is that the seat you have isn't awful, you just need a proper fitting for your bike. At one point, I was having some knee issues from riding and a seat adjustment fixed all that. Also, you can hit up a site like www.bicycleseats.com where you can buy a few options and they will accept returns of the seats you didn't like.

That's the bare minimum, I'd say. You can ride with less but it'll be less comfortable and more inconvenient when you get a puncture. You'll also need lights if you ride at night, of course. A proper cycling jersey is also really nice and a massive improvement over a t-shirt but you don't need it.

I also got some without the bibs, and I really, really recommend the bibs. They're great for holding the shorts in place. They also prevent buttcrack optical enhancement for nearby persons.
A lot of people are down on the cheap shorts, saying they don't last, but a lot of those people are also the kind taking long rides at really high speeds, not so much just humming along to work. It really helps me not get "Friday taint fatigue" like I did before.
I would also recommend a CAAD 10 with 105. You get a really nice lightweight bike and money left over for gear and extra components like a rack, Topeak. Which is what I have on mine with a Bag to hold all my repair equipment and my lunch. I commute 23 miles to work (one way) and have no issues with my bike. Also for the weekend rides i recommend a Bib and some this for your nether region.
Carbon may seem like a good choice but since you are just getting into it the little weight that is shaved off will not be worth the extra price since all you will be doing is commuting and weekend riding.
Honestly your best bet is to go to you local bike shop and ask to try out different bikes.

The Black Bibs. Was hoping I found that coveted cheap-but-good, but no, they're complete garbage. I've put about 600 miles into this pair and they're already essentially unusable, chamois totally worthless, sitbones aching like you wouldn't believe. Hey, at least they were only $40... and better than nothing when I miss laundry day, I guess, though only by a slim margin
Now, this thing... surprisingly good value, I assumed it would be Chinese crap but I bought it at the same time as the Black Bib and this one's still doing fine, some of the stitching isn't perfect but it's still in one piece and the chamois performs admirably on my weekly century. The leg openings have a raw silicone band which kind of sucks but it does the job and doesn't wear out --- unlike the Black Bibs, whose compression leg openings are already totally stretched out... can't emphasize how crap The Black Bibs turned out to be.

Bib shorts?
I have a pair of cycling "shorts" from a company that makes this bib that I have saved in my cart for a few months. The quality is decent, and the price is the main attractant tbh. I only ride with a jersey/shorts(padded) maybe a handful of times a year. I also have a couple jerseys that I have picked up for cheap over the years.
Should I go with the linked bib, or shell out a bit more for some Pearl Izumi. One day I would like to ball out on a full flashy Cadence or Heavy Pedal kit, but I am not sure I am ready to make that investment (or that will just incentivize me to ride kitted up more often)...
Any suggestions or insight would be appreciated. This year I am planning on riding a century as well as getting on the track.

They are as I like to say, "delightfully average." I wouldn't spend more than about 2 hours in them though.
I ride a 168mm saddle, I really like the Specialized RBX Comp bib and Baleaf bibs from Amazon are just as comfortable if not more so and same quality of construction.

amazon sometimes have decent prices on some castelli stuff. These bibs and this jersey are both pretty good (if you're in temperate to hot weather).
If you're in the UK, Wiggle's own brand DHB make decent quality stuff at very competitive pricing. Just check their sizing guides.
I'd say in general that if your waist is in the 31-33" range go for medium on bibs etc and if smaller go for small. Whether you want a small or medium jersey depends on the size of your chest and arms. I'm 6'2" and around 150 and wear a small jersey cause I'm scrawny as fuck up top.
I love my Pearl Izumi Elite bibs. I'm fine with cheap jerseys as long as they have nice rear pockets. I shopped around and found the bibs for as low as $70 in the past.

I have a pair of Przewalski from Amazon. $30. Did a century in them with no problem. I like them better than the Pearl Izumi ones that I have which were twice the price. I also tried out a Performance Elite one and didn't like it at all. For the next pair I might try out The Black Bibs as I've heard good things about them.
