That was the first result when I googled HDMI converter. I have seen someone else on this sub recommend something very similar to that to someone also wanting to avoid HMDI.

On closer inspection I see its just a 2 speaker deal so the yellow goes to the projector and the red and white go to the stereo

Haha I am not sure about how you would mod your wii. I have been able to play the in-development build of Rivals with a GC controller by using this adapter though.
