From the looks of it, you need a longer bit.This would do fine, but there are many others. As for your other questions, the less wood you take off, the cleaner cut you'll get, so it's better to trim the piece close before you use the router. As for the accuracy, as long as the template and router are square to one another, you should be fine. I also would have as little of the cutting edge over the template as you can.
