Get a freewheel removal tool and replace that multispeed freewheel with a singlespeed freewheel ASAP. They're only about $10 and they screw right on (although you'll probably need to adjust your chain length. (Just make sure to get a removeable one, so you can move it to your new wheelset when the time comes.)
In terms of cafe racer handlebars, a lot of folks have been going with 1" riser bars turned upside down lately. I don't like the look much, but it does look similar to the motorcycle bars you posted.
If you just want something different, a set of mustache bars might be a good plan, as those give you a few more hand placement options.
