The easiest way I can think of is a toslink to RCA converter and the a RCA to 3.5mm cable.
I use something like this for my AppleTV (so I can use Airplay without TV on with my stereo)

Haven't tried it with the FireTV. I'll give it a try tonight and tell you if it works. I don't know a usb head set will work, I tried a usb DAC that works with android with no luck. I would try looking at the xda forum for Amazon Fire TV

I can't find the exact page, but this is the same one that comes with a TOSLINK cable.

Honestly, I would just get a sound bar with digital coax in. You could also get a stereo amplifier with digital in, but it's pretty much the same concept as that converter but more expensive. If you don't want to buy a sound bar, you can get something like this: http://amzn.to/1lIUECM this will convert the coax digital out to analog to your speakers (and cheaper than the best buy one) or if you strictly want to amplify your console sound you can just buy that cable I linked earlier. You may need to buy a digital audio coax cable if you don't have one (http://amzn.to/OwwyQy) although I read you could use the video cable from the standard component set although it's not suggested.

also rca converters - not all that expensive. not sure why you are worried about dolby? shouldnt matter, you're making a digital signal analog, the dolby stuff happens elsewhere in the chain

Most older receivers don't include an optical input. Many new ones do, but they will be much more expensive. If you have an optical out at the source (TV, BluRay, ect), you can get one of these to convert the signal.
I do not know of anything that will mix the TOSLINK (Optical Digital) along with all your other analog sources, but these Rolls mixers are good...

You might need to use a TOSLINK (Optical Digital) to Analog converter box in order to include that source as an input to your mixer.

Anything that can convert optical to RCA, e.g. this thing, should work. Since your speakers are wholly analog and only have inputs for a left and right channel, there is no discrete channel for the subwoofer. Instead, it'll use a low pass filter to send any signal below a certain frequency to the subwoofer, and a high pass filter to send signals above that frequency to the regular speakers.

Note that it has a USB connection. That is just for power. You would plug that into any USB AC charger dongle thingy, or a powered USB port. (Your TV might have a powered USB port built in)
I haven't heard the CR3s. Reviews I've read have made them sound kind of like cheap computer speakers. Computer speakers typically don't sound great in an audiophile sense (they tend to have exaggerated highs and lows) but IMHO they're fine for TV; they'll be an upgrade over a TV's built in speakers at least and should sound better than a soundbar at the same price level. At the $75-ish price level a 2.1 Logitech setup might actually sound better but I'm just guessing.
