I love giardiniera on sandwiches and veggie burgers... but I prefer the hot variety, packed in oil and in small bits. Here a link to my preferred brand... you may find you like it!

i already put mayo on the toast anyway since the first time i made this it felt really dry. I also have ketchup on the opposite piece of toast for moisture. I thought about putting these sweet hot pickle slices that i have on it- Famous Dave's Devil's Spit pickles
they are like $4 a jar at kroger, and they are one of my favorite pickles now.
Go find an Indian food market and ask for something called 'achaar'. My favorite brand is Shan, and the one I always get has the orange lid.
Anyway, it's an Indian pickle made with mangoes, oil, and spices. Super delicious and goes very well with basically any Punjabi/north Indian dish, particularly the subzi (curried vegetables) and paratha (a kind of flatbread usually made with a savory filling).
I love that shit.

I do not have a recipe. The one time I made it, it was pretty mediocre. Fortunately I'm in Chicago.

My bet would be to try Kakulas Bros in Northbridge first, and then maybe pop in to some specialty/international grocers and ask if they've got them. They're the little red buggers in prepared spanish olives. Get a jar and dig em out maybe?
