All I can say is that it gets easier. Weā€™re 4 years post diagnosis of 2 kids, now 11 and 5. Your endo and diabetes educator are great resources, and weā€™ve developed an amazing relationship with ours.

As for resources, here are some things we find invaluable - a food scale (makes carb counting so much easier), measure bowls for cereal, yogurt, etc (similar to this: https://www.amazon.com/dp/B00WHEF0IO/ref=cm_sw_r_cp_api_i_aAMHDb46AETKP), and the CalorieKing app is great for finding carb counts on things. We also track all their numbers via the BlueLoop website/app, and their endoā€™s office and the school nurse can see everything there, too. And if youā€™re in the US where insulin is expensive and you have private insurance, call the manufacturers and ask for copay cards. I hope this helps, and it will be sooner than you think before it becomes much less overwhelming.

If you are going to get a dutchie - I'd go with enameled. You are limited in what you can do with a naked cast iron DO. No acids = no braising.

The 10.5 inch round griddle is another go to - I use it for tortillas, pancakes, crepes, warming my homemade English muffins. The occasional egg (they work well for making omelets too).

The Green enameled 6 qt Lodge dutch oven is super cheap right now. Just sent one as a wedding gift, 38 bucks. The other ones are 50-60 bucks.

Finally, I love my side dish master I use this for small sides (think 2 or 3 people). I also use it EVERY time I use my grill. It can be used for oven to table dishes too (think single serving enchiladas). And it's the new heat enhanced material - so it doesn't rust. They say you can put it in the dishwasher - but I don't have one.

Is that Fiestaware? If so, you should try using the fruit bowl for ice cream. It's a small bowl that makes a 1/2 cup of ice cream look massive! It's perfect for single servings of high calorie treats and snacks.

I found this at Bed Bath and Beyond that I carry my sandwiches in. I used a backpack for my commute then I saw the light and invested in a rack and panniers. That container works well for sandwiches for whatever you decide.

I just have a regular glass spice container with a shaker top, like this, but mine doesn't even have that handy little pour spout. If I need a lot, I just pop the top off, or grab the box.

IIRC you can find them under 'seasoning box' (or maybe Chinese seasoning box, which's what I just searched on Amazon)... this one is four compartments but you could always toss MSG or flour or something (for rouxs and stuff for Western cooking) in the last container.
