They're expensive because they're rare and in demand. A lot of people want them, there isn't much to go around, so they cost a lot. They're a type of mushroom.

You can buy truffle oil relatively cheaply. Here is a small bottle for $15. It's also probably artificial rather than actual truffle. But it's still great. You add drops to whatever; you don't fry stuff in it like it's peanut or olive oil.

It's hard (for me) to explain the taste. But it is really concentrated, and it adds its own flavor while also making just about everything taste better. For example, you can just add 2-3 drops to a box of mac and cheese and somehow it's streets ahead of what it would have been. Obviously it can be used for more sophisticated recipes! But it's not limited to enhancing fancy dishes. I've even added some to a simple salad dressing of oil/dijon. Just don't use too much :-p

If you're interested then I encourage you to go buy some truffle oil and try it for yourself. The stuff lasts forever.

I could not disagree more with you. It was extremely delicious and very well balanced rather. this isn't my first time eating truffles and i can assure you the truffles did not over powered the rest of the dish.

If you want to know what they taste like without spending loads of money you can get truffle oil on amazon for pretty cheap like this. It's good in mac and cheese and on green veggies.

I'd recommend to freeze the oils personally and thaw for use.

IMO the salts approximate flavor of the truffles even better and if you can I would salt to taste with them in your recipes.

And the other poster is correct. Theres either no truffle or negligible truffle in "truffle oil." It's all the chemical 2,4-dithiapentane (which I think smells nice and in some ways I prefer it to real truffle)

In my experience, truffle salt always contains small pieces of mushroom. Now, it could be something cheaper like porcini or black trumpet making up the bulk of it, with an artificial flavoring added to alter the flavor, but it's not like truffle oil which rarely contains truffles or mushrooms of any kind.

For example, this one claims to be 10% black truffle, but I'm guessing that's by volume and not by weight. It also lists "flavoring" as an ingredient, which is probably the same junk they use to make truffle oil.
