Not OP, but I'm a pretty decent amateur barbecutionist and run my smoker twice a month - usally ribs one day and a pork sholder or brisket for the other.

While most storebought sauces are a crapshoot, the Heinz regional ones are surprisingly competent and can be found at most grocery stores. I'm a firm believer of certain sauces pairing better with certain meats, so don't looks for a do-everything one; it doesn't exist. Here are my preferences:

  • Pulled pork - Carolina sauce - Lillie's Q makes great sauces, and theirEast North Carolina Sauce is the best vinegar style IMO, but the Heinz Carolina mustard style is very good as well for a change of pace
  • Ribs - Tennessee style dry rub - Heinz Memphis sauce is actually my favorite rib sauce
  • Brisket - You want a rich Texas-style sauce - This is one where I think the Heinz Texas sauce is the best I've had, but Stubbs is a good alternative (I like Stubbs on ribs too)
  • Chicken - nothing can touch Alabama white sauce - Big Bob Gibson's is the standard for store-bought.
u/fishbedc · 1 pointr/vegetarian

If you want to stick with it make sure that you get the stuff that satisfies. You will inevitably end up focusing more on getting flavour into your food than when eating meat, this is a good thing, because you can have loads of fun.

For me umami, that sense of savouriness, or "nom, nom" is vital to help keep me happy with my diet. Cooked mushrooms, cooked tomato (lovely thick sauces), soy sauce, hard cheeses, spinach, seaweed (yup, nori is your friend), if you are going the vegan route yeast flakes are gamechanging, (or not vegan, I'm veggie but wouldn't be without it). Get them all in there somewhere and you won't even think about meat.

OK, maybe you might think about bacon. But a few tiny drops of this stuff, in a recipe with plenty of proteins, fats, umami and salty sweetness will hit the right buttons.

A word on proteins. Two words. 1) Don't worry about getting enough proteins or complete proteins or whatever, if you eat a varied diet you will get more than enough without trying, so relax on that. 2) Proteins are delicious, they also satisfy. So aim to get decent quantities of enjoyable protein (I like seitan) in there on a reasonably regular basis. Not because you need it directly but because it's fun, keeps you happy and reduces tendencies to binge on sugars and carbs.

Enjoy yourself.

u/GoldenGonzo · 1 pointr/GrilledCheeze

Not my photo but I actually make this one or twice a week. It's criminally delicious. I use Tostito's scoop so each nacho grilled cheeze is a hand assembled, perfect bite.

Take a baking sheet, line with aluminum foil or wax paper.

Put a ton of scoops on it.

Cook your chicken. My preferred method is to take a chicken breast completely trimmed of fat, sprinkled with salt and pepper, and sauteed a pan with just enough oil to cover the bottom. Dry the excess oil off. Make sure you get your chicken to 165°F (75°C) in the THICCest part.

Optional: Dice a raw onion, or green onion. About one US dime size of normal onion, or a few rings of green onion/scallion is enough for each scoop. Note: if you use green onion/scallion, sprinkle them on after you broil.

Put some cheeze on that shit. My personal favorite is Vermont white sharp cheddar (yellow cheddar is no different from white, except it has no yellow dye).

Super awesome pro tip, sure to get you laid: instead of buying that shitty pre-grated cheese which is covered in corn starch to stop it from clumping, or from grating your own, buy sliced cheese, take the number of scoops you have, divide by four, take that many slices in a stack, and do a cross cut into four even squares. Those squares will fit perfectly over your scoop.

Now shove that into the oven set to broil on high. Watch carefully, if you burn your scoops, you're a dingus and deserve burned nachos grilled cheeze. It only takes about 30 seconds in an already hot even!

Put some fresh cracked black pepper on dem thangs.

Optional: To make some S P I C Y B O Y E S, take you favorite hot sauce and put a drop or two on each scoop. (this is mine, says grilling, but can be used as anything. Amazing. Literally liquid gold. Literally.)

Enjoy!

I have an entire shelf devoted to hot sauce. Here are my faves.

El Yucateco. All of these are bomb, but my fav is the green and black habenero. I believe the Caribbean and chipotle have some sugar in them, but the rest are sugar free.

High Altitude Gourmet is my absolute fav hot sauce company, and makes my fav red habenero and chipotle sauce. Neither those, nor the Caribbean lime have sugar. I can't recall about the rest of their product's though. I do think that despite the label saying 0g carbs/tsp, they might be a little more carb heavy than some others because the ingredients are just lime juice, peppers, garlic and salt, no water or vinegar. For some reason they don't even mention this product online, but if you're in CO, USA they sell a really good habenero yellow mustard at Kroger stores.

Zulu Zulu Peri Peri is my go to for chicken if I'm not feeling chipotle.

Finally, for BBQ sauce I just recently discovered G. Hughes. I've only had the hickory, but it's pretty good. It's a little sweet and needs a spicy rub underneath it to balance that out IMO, but other than that I like it. They also make a ketchup I'd like to try.

I GOT IT! YES! Now I have to wait for the goddamn blockchain to catch up so I can import the private key. Is there a way to get the coins more quickly given the private key?

EDIT: Got the coins out finally. Blockchain.info was being a bit glitchy on me, but it's all good now.

Thanks so much, OP! That was a lot of fun! I look forward to all future scavenger hunts! :D

DOUBLE EDIT: Sorry, I forgot to include the answer! The 'Xxxx Xxx' referred to "Baby Ray", which is a reference to the glorious Sweet Baby Ray's BBQ Sauce, the greatest BBQ sauce of all time. As OP said, it is the PERFECT ingredient for a summer picnic. I'm so pumped right now! It's 4am here, I should probably go to bed.

u/Scienscatologist · 1 pointr/AskCulinary

> I've never bought pre-made sauces. Always made some by myself but lately, it's been taking too much time. Do you think pre-made sauces are worth it?

It depends.

On the one hand, I like to make my own Texas-style bbq sauce, even though there are some outstanding versions readily available (Franklin, for example). I'm always changing it and it's just something I've done for years.

On the other hand, there are some sauces whose taste is so iconic, like A1 or Heinz 57, I can't really think of a good reason to try to duplicate them, other than just for fun.

u/sassytaters · 2 pointsr/keto

My favorite is Stubb's. It's not sugar-free, but it works great in the right amount. You can't exactly slather meat in it, but you can eat a decent amount for 5-6 carbs. I've had the original and the spicy, both awesome:

http://www.stubbsbbq.com/product/original/

http://www.stubbsbbq.com/product/spicy/

There's a couple sugar-free ones, too, but I haven't had them. People seem to like Guy's a lot: http://www.netrition.com/guys_bbq_sauce.html

As well as G Hughes: http://smile.amazon.com/Hughes-Smokehouse-Bottle-Select-Hickory/dp/B00PF5M0VC

I haven't seen either of the sugar-free ones where I live, but people claim they find them at Wal-Mart, so you might check.

Looks like you could go nuts with the sugar-free ones if you wanted to. If you've got a slow cooker, do a Boston butt roast in there and you'll have pulled pork for days. So tasty.

If you're missing spaghetti sauce, too, by chance, check out this brand; they have it here at Kroger and it tastes great: http://www.delallo.com/catalog/sauces

4oz should last you a fairly long time if you're careful to be efficient with it.

Liquid smoke is "real smoke" in the sense that it is made with real smoke. It's basically made by producing smoke in a humid environment, and having it condense on a cold metal plate. The condensate is collected and bottled.

Liquid smoke gives you an alternative to using a real smoker. Ham (unless it's parma/serrano, etc) is smoked. Building a smoker is expensive and complicated in itself, so trying for a first time using liquid smoke is very convenient.

These are expensive examples. In Canada (and in the United States, I assume) you can buy it in most grocery stores, and it's less than $10.

https://www.amazon.ca/Stubbs-Hickory-Liquid-Smoke-148ml/dp/B0011BPCVO/ref=sr_1_1?ie=UTF8&qid=1501766154&sr=8-1&keywords=liquid+smoke

https://www.amazon.ca/TRY-ME-LIQUID-SMOKE-OZ/dp/B00CO1ZFVC/ref=sr_1_3?ie=UTF8&qid=1501766154&sr=8-3&keywords=liquid+smoke

I will be honest in that I have never used liquid smoke to simulate real smoking, but I know that some commercial producers do it, and it should work. Just be careful not to use too much - it is quite strong.

If it were me, I would acquire that prague powder, and some liquid smoke and I would give it a try :) Do some experimentation. It probably won't be exactly like a commercially produced ham - especially if you're used to American "country ham" which is much dryer.

You could try curing pork chops (kassler) or pork loin.

Personally, I like to make cured/smoked pork ribs, pastrami (beef brisket, blade, or cheek with lots of spices), cottage roll (unsmoked cured pork shoulder with cloves and extra sugar), etc.

I find it easiest to do smaller pieces of meat, and do it in a ziplock bag. That way you don't need as much water, which means you don't need to use as much prague powder or spices. You just need to turn it over every day to make sure it's getting well mixed/exposed.

u/rogueblueberry · 10 pointsr/Cooking

It might be because barbecue is largely an American thing, but check next to the Worcestershire sauces in your grocery store shelves; they're good at hiding.

Otherwise, Amazon is always a safe bet (though I'm not sure about shipping prices to Canada... hopefully it's not a problem). In general, Amazon is just amazing for a ton of things you might need, food related and whatnot; you can even get free shipping on a lot of items.

Oh Amazon. Be forever mine.

u/nexuschild · 5 pointsr/sousvide

I like to do asian style. I season the belly with char sui rub (make your own or something like this), bag it and let it sit for at least a day in the fridge. At this point you can as well freeze so it can be dropped directly in a bath at a later date.

I then do either 68C/154F for 36 hours or if I have less time 70C/158F for 16 hours. The longer one has better texture but it is a small difference.

Then cooled, pressed, and cut into 2"x2" squares. Then brushed in char sui sauce that is slightly thinned with rice wine vinegar and put under a very hot grill (broiler) to caramelize the sauce, turning so all sides are crispy.

Serve with rice, stir fried bok choi, and quick pickled cucumbers to cut through the richness.

As mentioned by someone else also save some for the Kenji porchetta recipe as that is also very good. Also the chinese steamed buns (also a SE recipe) are good if you can get the buns from an asian market.

u/Toopelo · 2 pointsr/keto

Look for Lynchburg BBQ sauce. https://www.amazon.com/Lynchburg-Tennessee-Whiskey-Gourmet-Grillin/dp/B002PN2U58/ref=pd_lpo_325_bs_t_2?ie=UTF8&psc=1&refRID=HHFQ5EGHCG4X2SDQWXA3

I've found it in Kroger for $5.89 and it's completely awesome stuff. 1 carb per tablespoon and sweetened with sucralose. The spicy is wonderful. The sweet has a slight aftertaste. I put it on a pulled boston butt last night and was a happy camper!

u/ammobandanna · 1 pointr/CasualUK

ok,

right.

BBQ Saucethis stuff is bloody lovely and dead easy to make only takes an hour or so.

pulled pork now i sub cider for the 1/4 cup (effin americans and thier cups) of water and add 2 tablespoons of liqued smoke for a nice off the grill hint. cut the skin off your shoulder ofc b4 you slap it in there and make crackling out of it to go in the buns too for bonus points ;)

ill not insult you by linking you a coleslaw recipe...

p.s. you may find the 'liqued smoke' hard to find, amazon has it and so do alot of tesco.. its worth the effort hunting it down though.

p.p.s. dont worry about it looking like 'there's hardly any sodding liqued in this slow cooker!' the pork will make its own.

u/ekthc · 3 pointsr/Cooking

If I've got nice rib chops I will grill them one of two ways:

  • Filipino Adobo Style

  • Carolina Treet - I generally don't like to buy prepared/bottled sauces, but this one is just too damn good on a chop.

For boneless I love to butterfly, pound, bread and fry in the style of schnitzel. Serve with lemon, as others have already recommended.
u/toowm · 1 pointr/Keto_Food

It's a little sweet for my taste; I mostly do just dry rubs. Here is the sauce we like better: https://www.amazon.com/Guys-Award-Winning-Sugar-Original/dp/B0079OWL16

u/roobert_doobert · 1 pointr/nextfuckinglevel

Here you go, you can get this on amazon.com - it's one of the Big 3 brown sauces in the UK. There's HP, Daddies Sauce and Chop.

IMO, once you try brown sauce on smoked bacon, nothing else compares. A bread bun, lightly salted butter, an egg that is still slightly runny, two rashers of grilled, crispy smoked bacon. Perfect cure for a hangover!

edit: ohh, when you lived there! I'll leave this up despite my reading this comment as a native USA resident haha.

u/MoustacheSteve · 2 pointsr/sousvide

I use this one: https://smile.amazon.com/Lee-Char-Chinese-Barbecue-Sauce/dp/B0001DMTM8

Should be about half that price if you can find it in a store, looks pretty expensive on Amazon.

I've used this recipe and it was solid, but the jar stuff is pretty close if you can't find the ingredients: https://pupswithchopsticks.com/sweet-sticky-chinese-bbq-pork-aka-char-siu/

u/rimjeilly · 0 pointsr/snackexchange

I order this off of Amazon because i can't find anything locally. It's sweet and smoky. It's also runny, which is a positive, for me, because I'm not a fan of really thick BBQ sauces.

u/[deleted] · 4 pointsr/keto

It's a manual input error on Kraft's part. It's 15 grams of carbs, 13 of which are sugar per 2 Tbsp. Say what you will about it, Walmart is good for checking nutrition info for products.

As usual, I recommend not eating Kraft products. They are cheap because they aren't nutritionally dense and use a lot of sugar. Can I recommend this low carb friendly BBQ sauce, this or with more but acceptable carbs -- this?

u/Wrinklestiltskin · 3 pointsr/todayilearned

Is this a good kind to get? I really want to try some.
I can see hp sauce going out of stock on amazon because of curious redditors.

u/mrandish · 2 pointsr/keto

> Do you guys think the Mcdonalds that I'm eating is stalling me?

Are you kidding? You're kidding, right?

Just in case you're not kidding, you can find the nutrition info for the entire McDonald's menu online. Google is your friend.

However, why are you paying all that money and wasting the time to drive to a drive-thru line to eat that over-priced crappy beef? Go to Costco and you can buy much better ground beef and cook up a week's worth of "burger's" in half an hour on Sunday, that you can heat up in a minute in a microwave at work, school or home. It will taste way better, be faster and save you a ton of money.

Ketchup has carbs. Pick up some Heinz Low Sugar Ketchup at your supermarket. If you really want to throw your tastebuds a frat party with lap dances, just get some of this: https://www.amazon.com/Hughes-Sauce-Bbq-Sf-Hickory/dp/B00PF5M0VC (my local supermarket stocks it) and put it on your burgers. Your mouth will never want to sit in a drive-thru again.

2g Net Carb per 2 tbsp. Amazon is a bit expensive, it seems. My local grocery store carries them in their regular stock.

Not in the UK, but you might want to look around for an American specialty store or the like. Amusingly enough, when I lived in France I used to buy liquid smoke from the same store I bought my UK products from.

Edit: Just had a quick look, you can get liquid smoke from Amazon. What else are you looking for?

I'm a fan of G Hughes Sugar Free BBQ Sauce. Very low calorie

Speaking of sauces, what is the thoughts on sauces made with soybean oil? How much concern do you put on the inflammatory effects of soybean oil? I love Hellmann's Mayo and try to have it in moderation. Homemade avocado mayo is good but spoils quickly.

u/lk3c · 3 pointsr/keto

I found the G Hughes brand sugar free Hickory at Publix here, it's also carried at Wal-mart. It's as good as any barbecue sauce I've ever had.

u/NorwegianSteam · 1 pointr/AskAnAmerican

Video's campy, but it still shows off the sandwich pretty well. Sliced thin, served hot. Most get them three-way, which is sauce, mayo and cheese. I go sauce and cheese. Regardless of the roast beef place north of Boston you go to, they use James River BBQ sauce. Or they aren't very good.

u/Mysterion_Lannister · 2 pointsr/astoria

We used to have it in bulk at an old wing place I worked at in college. I always noticed a little taste difference between the consumer size and bulk bottles. Either way, definitely good stuff. Glad you found some!

Edit: This is the bottle my old wing spot used.

Here's what my old wing place used to have in their fridge. Still says open pit, but the logo is different. Maybe 'original' flavor is slightly different from consumer size? But most likely, its the Illuminati.

https://www.amazon.com/Open-Pit-Original-Flavor-Barbecue/dp/B00CBKURD2/ref=sr_1_5_a_it?ie=UTF8&qid=1523291061&sr=8-5&keywords=open+pit+bbq+sauce

some oversized Onion rolls, that must be toasted with butter, and some good quality, super thinly sliced roast beef (served at room temp)

mayo and cheese optional.

and you will have a decently close version of the Kelly's style roast beef that is popular all over MA, but especially the north shore. Almost all the places use that sauce, or some variety of it

u/redditrandomness · 4 pointsr/keto

I order my groceries through FreshDirect so technically I get 90% of my stuff online :).

That being said...the stuff I get outside of that site are:

  1. Japanese Mayo to make the spicy mayo that you get at sushi restaurants (just mix in Siracha).

  2. Emergen-C Electro Mix for my electrolytes kick.

  3. Erythritol cause....sugar.

  4. Stevia for a different sweetener used in mostly drinks/liquids where it's more difficult to dissolve the Erythritol.

  5. [Liquid Smoke] (http://www.amazon.com/gp/product/B0005Z8NCM/ref=oh_details_o08_s00_i00?ie=UTF8&psc=1)

  6. BACON JERKY!

  7. Maple flavor

  8. Awesome awesome peanut butter

  9. Kerrygold unsalted butter. My grocery store doesn't carry it :(

  10. Vitamins from various places...Vitamin D-3, Magnesium, Daily Multi-vitamin, Cod Fish Oil, etc.

    EDIT: Formatting.
u/pippx · 6 pointsr/GifRecipes

Step up your game.

There is a serious ingredient lacking from this technique: the smokiness of a camp fire.

When I do this, I like to make my own marshmallow frosting. There are a few different ways to do this, with or without actual marshmallows. My favorite is just this method from Martha Stewart. One additional ingredient is needed though -- a dash of Liquid Smoke.

I promise that if you make your own marshmallow, smoke it up, then torch your cupcakes after you've frosted them, you'll actually feel like you're eating a s'mores.

G Hughes is good, I also like the Alternasweet brand (expensive, but worth it imo).

Both pork ribs (simple dry rub omitting brown sugar) and beef brisket are easy to make low carb. Guy's sugar-free sauce is what I serve both with. For sides cole slaw and/or collard greens.

Oh so you must be talking about liquid smoke for giving meet a smokey taste. I have not been unable to get any in Galway, I get mine online on Amazon http://www.amazon.co.uk/Stubbs-Hickory-Liquid-Smoke-148ml/dp/B0011BPCVO/ref=sr_1_1?ie=UTF8&qid=1421160515&sr=8-1&keywords=liquid+smoke

It's easier to buy a bottle at the store.

To drink smoke you need it to be a liquid first. This used to be quite an ordeal to make so most people didn't bother. Nowadays though you can just pick it up at the store. https://www.amazon.com/Colgin-Liquid-Natural-Hickory-4-Ounce/dp/B0005Z8NCM

This is the sauce that Nick's, Kelly's, and probably others use: https://www.amazon.com/James-River-BBQ-Sauce-Pack/dp/B004D4UQA8

I've tried this: http://www.amazon.com/Lee-Char-Chinese-Barbecue-Sauce/dp/B0001DMTM8/ref=sr_1_2?s=grocery&ie=UTF8&qid=1408003032&sr=1-2&keywords=char+siu

It's a reasonable copy of what you're looking for, but you really have to marinate it to get it as flavorful.

Intro level offerings don't get much peatier than Ardbeg. You could try adding some of this stuff http://www.amazon.com/Colgin-Liquid-Smoke-4-0-Ounce/dp/B0005Z8NCM (don't actually do that)

I made BBQ ribs at the weekend for a bbq, i made a sauce on the fly just by guessing. A couple of squirts of reduced salt and sugar ketchup, a few dashes sriracha, sukrin gold sweetener, salt, and some of this natural smoke flavour.

For the ribs, i coated both sides with Frenches mustard, then made a rub of salt, cumin, chilli, garlic, pepper

You should be able to find the sauce on Amazon. If you're using the bottled, the ingredient list shrinks down to four things - LKK Char Siu Sauce, Honey, Soy Sauce, and Pork - the latter three being available at basically any supermarket.

G Hughes I stick with the hickory flavor.

You ... don't have time for liquid smoke? It comes in a bottle, you know. http://www.amazon.com/Colgin-Liquid-Smoke-4-0-Ounce/dp/B0005Z8NCM

few drops of liquid smoke and you can make them in the oven or grill with the same classic smoke ring. chemically, it's the same as actually smoking the meat with a lot less hassle.
