12 volt switches are dirt cheap. All you need is a bit of plywood, a drill, electrical cables, some soldering skill and the switches themselves.

You can buy 10-packs of switches for 10 bucks. Higher quality ones are a few bucks each, but probably worth it for reliability.

If you want indicators that a circuit is on that's easy too (a light that goes on when it's active) - LED lights that are ready to add to a panel are also cheap. Though you can choose what level of quality you want to go for. These look decent (possibly too bright).

Panel I used http://amzn.to/2xUZWqV. Lights I used http://amzn.to/2AnurHR.

I already had power in the rear of the vehicle for the audio amps so I tied in to that. I will do a full write up on the entire process but I also have a few more steps to go this was basically proof of concept. I wan to get this whole system isolated to an aux battery and make this work and look even better as well as add more lights, dimming features etc. I am also thinking about making the entire system bluetooth controller http://amzn.to/2zlnwPu

For an outdoor application, anybody know where to acquire weatherproof switches? I'm finding a bunch of marine stuff, but 12V isn't going to cut it.
