great story and totally relatable to my nuuumerous keto pizza disasters as a fellow pizza fanatic on keto. i never could get cauliflower to work right despite 5+ attempts and recipes with almond or coconut flour or not, soft or hard cheeses etc. always end up eating with a fork. also cauliflower+fat head variants didnt work that great. my fathead pizzas have worked, but i didnt like the taste, even with copious amounts of seasoning.
so yea things that worked for me: agree with chicken crust recommendations. it works pretty well and tastes ok. i really like mini eggplant pizzas (like slice a big eggplant shortways, so you get a bunch of cm thick circles like coaster size, brush with olive oil and italian seasoning +/- garlic and bake 10 mins then put toppings and bake again). can do with big mushrooms too but to me the eggplant really meshes better with other flavors and i prefer the consistency (its more like doughy thick crust pizza than crispy. my best suggestion though would be these off amazon premade lowish carb crust theyre 8g net carb but really great taste and crispy. worth it to me to sacrifice carbs on. gl with your next pizza :)
Honestly, I buy a loaf of Udi's bread for $4something ($3something with the coupon from their website) at Publix/wherever once a week, and that's enough for me. I find enough variety and don't find I need substitutes.
I get buy on Kinnickinnick Bread and Bun Mix which I buy in bulk on Amazon (http://www.amazon.com/Kinnikinnick-Foods-Gluten-Free-Kinni-Kwik-35-5-Ounce/dp/B000LKTVXQ/ref=cm_cr_pr_product_top). I split it with my brother ever few months. I can make bread, little buns, hot dog buns (buy mini tins from the store and bend them!), whatever I want. You can also mix the mix and water with baking soda (a bit of experimenting) and add some powdered sugar and make pancakes! Regular folks corn bread is often GF. I also get Namaste Pizza Crust (http://www.amazon.com/Namaste-Foods-Gluten-Pizza-16-Ounce/dp/B000LKZA1I) for special occasions. Pasta is super cheap and delish -Tinkyada is $2.99 a bag at Walmart...I prefer Publix for ethics reasons, which is $3.95, but still. Not bad!
I don't know. I'm a college student (grad student now --even worse!) and I make it work. You just have to be crafty.
But I totally understand. My boyfriend goes grocery shopping and buys $0.99 Pasta Sides and Kraft Meals and soups and yummy mcyumyum foods that are super cheap and look great, and I get to by quinoa and $4 bread...but it can be done on a budget! I just smile because my food is less processed and lower in sodium and preservatives!

Cauliflower crust is a popular option, but I can never get cauliflower crust to work for me.
Tortillas work well. If you can find them, this Golden Home brand is also good because it's 330 calories for a 12 inch crust and shelf stable (I get them from Dollar Tree).
For vegetable bases, I like using rounds of eggplant (Here's my process) or zucchini "boats". As well, I'll make pizza "bowls" using a base of cauliflower rice, sauteed cabbage or spaghetti squash: whatever it takes to get those pizza flavours!
For toppings, I find a small amount of good quality salami goes a long way. Same with cheese: instead of a ton of crappy cheese, just a little bit of smoked gouda or something else flavourful works well. Then, I like to fill up with banana peppers, tomato sauce, onions and garlic.
If you live near an Aldi's, they have the best pizza crust around. My boyfriend likes it and he eats gluten food normally. I like to doctor it up by adding some Italian spices and garlic powder but I'm pretty sure it's good on its own. I'm actually a huge fan of Pastorelli Thin Crusts.. They sell them at Cost Plus, along with a quite decent pizza sauce that comes in individually sized pouches that are just enough for one pizza. What I really like is that they don't try to make it a soft-crust pizza, but play to the prepared nature and give a great thin crust.
I usually use these for when I want pizza (I’ve seen people on r/1200isplenty using tortillas which makes me so sad lol) but I’ve got a few packs of Trader Joe’s garlic naan in the freezer so I’ll think I’ll try that. Yay for new ideas :)

you could also use a small flour or wheat tortilla as your pizza crust, add toppings cook and if you keep the toppings to a minimum you can roll its p and carry it with. another option for a heavier meal is to use the Boboli pizza crusts for your pizza.

If you aren't interested in buying a flour blend, this is going to be difficult. I'd just go for the bob's red mill pizza crust mix. It's pretty good (not as good as some of the crazy from scratch recipes!), pretty available, and reasonably priced.

I've made it a few times. The recipe isn't as good as the cooks illustrated or some others .... but it's SIMPLE in comparison. Also, you should check in the bulk section of your grocery store. You might be able to put together just enough for the pizza crust and not have a bunch of flour left over that you don't want.
