We have had great luck with stainless steel. We have plates, bowls, and cups. They are heavy duty, can go outside, and they double as our camping dinnerware. The brand I really like is Caveman.

Most Asian stores sell little flat metal sauce bowls with 2" diameter. They are very cheap (50ct each) and perfectly fit the legs of a camping cot, even if the rubber feet are damaged and the sharp metal is sticking out.

I don't know what they are called exactly, but they look similar to this: Korean metal bowl

If you want extra protection, you can glue a piece of carpet to the bottom of the bowl. Don't go with the tennis ball, this will not distribute the weight enough and the foot will puncture the floor of the tent if the soil below has any give.

Here is a picture, 80mm is too large for the army style cot, but the smaller one (60mm ?) fits the feet perfectly.

I could be wrong. I only see the one photo of it and I can't really tell if it's sloped on the right side.

The cheese boards I'm thinking of are often made of ceramic but, you can find slate versions of it. I think the slate versions are much more expensive and might be harder to find. I see a lot of cheap-o ones way overpriced in shops but occasionally see slate cheese boards at wineries, like in winery gift shops.

I think a cheapo one-switch rice cooker is always needed. A really good vegetable peeler. Hand held vegetable spiralizer. A tomato knife (I use it for most everything). A fish spatula if you can use metal with your pans. I love my cast iron comal (tortillas, arepas, gorditas, pancakes, crepes, eggs, grilled cheese, and as a pizza stone in the oven). I got a plastic sushi roll mold and then a wood one—awesome—makes doing sushi rolls and gimbap at home painless (but a lateral press mold only not a bazooka model—here is the narrow one and check YouTube for how to use it https://www.amazon.com/Happy-Sales-HSSM-FTMKSM-Japanese-Accessories/dp/B07NK85RKV). If they have a variable temperature setting. This could be accomplished easily by not turning it up past the limit.

If you had a hot plate with a 600 watt burner, you could probably turn it up half way and it would work if you had a 350 watt power inverter like the one I used to have.

Also they have inverters that hook up directly to the car battery and provide much higher wattage.

What about a cake stand or plate to display her baked goods?

Or if you wanted to go with strictly equipment I'd say a cooling rack is pretty essential if she doesn't have one. Also a small strainer/sifter to sift dry baking ingredients is pretty necessary for some recipes.

I bought [this pan](Fiesta 6-3/8-Inch Small Pie Plate, Scarlet https://www.amazon.com/dp/B0007D80TS/ref=cm_sw_r_cp_apa_i_6mBaCbGEYFKPX) off amazon and I love it. Cut a regular pie recipe in half, and bake it for around the normal time. It's enough for four people (or six if you make very small slices) to have a bit of pie after dinner with no leftovers. I also bought a mini springform pan for cheesecakes. Cutting my recipes as drastically as I can still gives me the joy of baking without as many extra temptations.

Pretty sure we got these from our local dollar store and they're really nice. They're ceramic, microwave safe, and dishwasher safe. They're Royal Norfolk plates.

I hate to burst your bubble, but this ban is part of that teaching you want so badly. One of your first goals when trying to lose weight, or trying to help someone lose weight, is re-educating them on portion size. You can even buy plates now that help with that goal. Americans no longer think 20+ ounces of soda is a large portion of soft drink, and they need to be re-educated.

I've spent a lot of time in Japan, and a large McD's coke in Japan is the size of a small McD's coke in the U.S. The Japanese people don't order two cokes to get around the size limit. They accept that 16oz of coke is a large portion of soda, and they should, because it is.

Limiting the size of soft drinks in NYC isn't going to curb obesity because people can't drink large sodas, because they still can. It will curb obesity because people we be re-educated on proper portion control. The city is teaching people about portion size.
