Yes, I edited my recipe to include spraying the molds with nonstick spray. I also use a spoon to sort of jiggle it out - I use a long Korean soup spoon but any smaller, thin teaspoon should work I'd think. :)

We bought these spoons from Amazon just to mix formula and they work amazingly well! We never have clumps anymore and mixing is a lot faster! Can’t believe we didn’t buy them sooner. We keep them in an empty water glass in the same cabinet as the bottles so the are always very clean. On the go we take a few spoons with us in a ziplock

When I make mochas at home I just put in two heaping scoops* of unsweetened cocoa and six of sugar, then pull the shot and mix it before steaming/stretching and pouring in the milk. YMMV.

There was a good recipe for making syrup on here or /r/coffee a couple months ago, but maybe it'll be reposted.

.* Those spoons are tiny. The cocoa mounds up while the sugar doesn't, so it isn't 1:3, probably more like 2:3.

That's the same one I use at home.

At the bar, I like to use what's called an "English Bar Spoon" that has a flat weighted end opposite the spoon so you can give a brief muddle with it, or layer drinks using the flat end to slow the pour at the drink's surface.
