INGREDIENTS


Muffins

  1. Heat oven to 275°F (commercial convection oven with fan on low). Line a muffin pan with silicone or parchment paper muffin liners.
  2. If needed, microwave the coconut oil for 30 seconds to soften, but it should not be melted if possible.
  3. Place the coconut oil into a mixing bowl and beat with the sweetener and salt. Add the vanilla extract, egg, and almond milk. Mix together.
  4. Mix in baking powder and then stir in almond flour.
  5. In a separate small bowl, mix together 1 Tbsp of allulose and 1 Tbsp of almond flour
  6. Roll your blueberries in the small bowl from step #5 to give them a coating (prevents them from sinking in the batter during baking)
  7. Fold the blueberries into the batter mixture in your large bowl
  8. Distribute the batter evenly among the muffin cups. Using a cookie scoop can help.
  9. Bake for 20-25 minutes (at 10-12 minutes, take pans out, rotate positions, and put back in the oven), until top is golden and an inserted toothpick comes out clean.


    Lemon Frosting

  10. In a medium-sized bowl, cream the butter and cream cheese together with a mixer until fully combined. It helps if the butter and cream cheese have softened some before doing this (you can zap them in the microwave for 15 seconds to help)
  11. OPTIONAL: Pour the granulated sweetener into a blender or food processor. Blend the sweetener until it is fine, fluffy, and powdered. Powdering your sweetener makes for a smoother frosting.
  12. Add the sweetener, lemon extract, vanilla extract, lemon juice, and lemon zest to your bowl and beat slowly until the sweetener is incorporated (go slow to avoid it getting blown into the air)
  13. Once the sweetener is incorporated, beat on high for 2 minute or until fluffy
  14. Use a piping bag (something like these) to pipe the lemon frosting on top of the muffins you baked in the steps above. Feel free to garnish the top with some fresh blueberries!
  15. Enjoy! Keep any remaining blueberry muffins in an airtight container in your fridge. If refrigerated, they should be good for about a week.

The cheapest item on my wishlist are these mini cupcake liners. Something else that I really, really want is this AMAZING tea kettle!. I LOVE tea (and coffee too!), and currently, i still use a traditional stove kettle. But this electric one would be so much more efficient and convenient- it even keeps your water warm for your second cup! I would be over the moon to receive this! =D

I started from this YouTube video.

I did 12 at a time with medium silicone cupcake molds or 8 at a time with large silicone cupcake molds. Spread the molds around the outside rim of your turntable so they will all cook evenly.

  • For the 12 medium silicone molds and 3 quartered cheese slices, I cooked for 2:30.
  • For the 8 large silicone molds and 2 quartered cheese slices, I cooked for 2:00.
  • For the 8 large silicone molds and 3 portioned cheese slices, I cooked for 3:00.

    Just pop out and repeat as often as needed. I was using Pepper Jack, Havarti, and Colby Jack slices. Shredded cheese works, but they are a bit more "prickly" and crispy on top where the shreds stuck out. With the slices, it's easy to make a few dozen pretty quickly. I used to bake them in the oven on a silicone baking sheet, but this is so much faster, and the silicone molds keep them from spreading all over.

    I had a few of the smaller ones with my "chili" yesterday and they were fantastic for dipping. Pre-keto, I used to love Club crackers with chili, using them as a spoon (but eating the spoon). I used the larger ones today as crackers to put egg salad on. But they are great on their own. My (non-Keto) mom even had a half dozen or so. :)

Nordic Ware makes really great sheet pans, make sure to check that the size you buy will fit in your oven. I also recommend getting a Silpat for easy cooking with no sticking and easy cleanup. As far as gloves, this is the one I have and it is very good quality.

You may also want to get some muffin tins, just in case. Honestly, I have some cheap trays, but I have silicone liners that are also great for easy baking and cleaning.

-Cabbage: Saute onion and cabbage with soy sauce, salt and pepper to taste, until soft or desired level of cooked.


-Chicken: Wash and pat dry chicken thighs with paper towels. Cut into bite size pieces. Coat with corn start and cook in a nonstick pan with a little bit of oil (not fried) until golden brown. Add enough teriyaki sauce to coat and cook a little longer to get some nice darkening.


-Broccoli: Heat a pan with a little bit of oil until very hot, add broccoli and toss to coat. Add a few table spoons of water and cover with lid to steam the broccoli. Once all the florets are bright green remove the lid and cook off any remaining water and continue to cook to get some brown crispy sides on the broccoli. Season with salt and a little bit of sesame oil. (This is my absolute favorite way to enjoy broccoli. It doesn't even need the sesame oil in my opinion)


-Fruit Salad: Cut apple into slices, use veggie cutters to make cute shapes. Mix with cut strawberries. Squeeze over the juice of half a lemon to keep them fresh and prevent browning. Also adds a wonderful freshness to them.

If I'm eating things that are liable to spoil, I include an icepack, or use my Zojirushi Mr. Bento ( https://www.zojirushi.com/app/product/sljae ) for hot items.

As far as using your existing glass container, but wanting dividers, you might look into getting some silicone muffin / cupcake cups or pinch bowls. They're very affordable, and can be trimmed to fit your favorite container.

I put one pound of chicken breast in a crock pot with about 3/4 of a jar of medium spicy salsa and let it cook for 4 hours on high. I shred the chicken about two hours in and it soaked up all the salsa juices. This yields four servings.

I have thrown in — corn, cauliflower florets, salsa, pinto beans, riced broccoli and cauliflower, and some lettuce. I like to put lettuce in those reusable silicone muffin holders so I can easily remove it when I warm my lunch up and then I pop it back on time ready to eat.

I’m trying to do dairy free of sorts so this is missing cheese and sour cream. I’ll let you know how it tastes!

silicone baking cups for egg muffins, which are my go to snack
place in muffin tin...
half a piece of bacon in each, crack one egg on top, bake for 20 minutes at 410 or so, place egg muffins in silicone cups directly into tupperware. people do fancier ones but these taste fine.
I make a batch whever I run out , takes no time and then I have a zero carb protein, fat snack on hand at all times, I literally just pop em in my mouth cold.

Reasons I like the silicone cups

  1. zero clean up, scraping egg out of muffin tins is annoying.
  2. the bacon fat congeals to the egg, so I get to eat it and not lose it in the muffin tin.

I'm a big fan of using card stands/holders for tableaus so that they can be passed around easily rather than everyone having to stand up and hover over them.

Alternatively business card racks are super handy for that type of thing as well.

Make them for your family! I've bought silicone cupcake liners that are reusable. It also makes it easier to pop the breakfast cup out of the liner, easy to clean.

My recipe is easy. 10 eggs and 12 pieces of pre-cooked bacon. Add ham, bacon bits, green onion, etc if you wish. Wrap the bacon in each cup. Whip up eggs, add extras, pour equally into the cups. I can eat about 2 for breakfast. Make extra for family members who want them.

Mom here, I do the food prep while the hubby gets the kiddo up/dressed. However he travels quite a bit, so I pull double duty too.

Preselect the day's clothes the night before. Saves 5-10minutes of dithering.

I prep veggies and fruits on the weekends/at nights into separate containers or into serving sizes using square silicone cupcake molds. I always have 3-5 different fruits and 3-5 different veggies available so every day is slightly different for the kiddo. There's always prepackaged fruit gummies or cookies as back up if I run out. The only thing I do for the lunch is just assembling it into the lunch box. Takes about 5 minutes. Add another 5 minutes if I have to do the lunch meat roll up.

Here's a pretty good example of a Go station for lunches. Everything is pre-prepped and you can just pick out what you want for the day.

Have all the book bags/water bottles/jackets/things that need to go to school with them prepped by the door. This way there's no "where is my (insert item)? I have to bring it today" mad scramble for item ensues and everyone is late.

If there's anything I learned about having a preschooler, prepping everything the night before usually means a smoother/faster morning routine.

Hmmm, either this little dude at $11.33 or some colorful baking cups for $5.34.

My husband recently went to Disney world with his grandparents for their 50th anniversary. There's a bunch of back story behind why I couldn't go. I was so jealous though, as I'm a huge Disney fan. Hence, the Cheshire cat. And I like to back a lot and take cupcakes to work, which is why the colorful cupcake cups. :)

Homemade lotion bars:


  • 1 part coconut oil
  • 1 part shea butter, cocoa butter or mango butter (or a mix of all three equal to 1 part)
  • 1 part beeswax (can add an extra ounce or two if you want a thicker consistency, which leaves less lotion on the skin when used)
  • optional: Vitamin E oil to preserve. I added 1 tsp vitamin E oil for this recipe made with 1 cup of each ingredient)

    Combine in double boiler, add essential oils until incorporated, pour into molds, let harden.

    I use silicone flower molds to pour these; you can see what they look like when finished here. I got the molds at Amazon

These salad dressing bottles aren't as cute as the animal ones, but are easy to clean and spill-proof, too.
Depending on the consistency of the sauce/dip, I'll either use a silicone mold or a small sauce container.

Another great option for holding chips is silicone muffin cups. Inexpensive (I got mine cheaper than the linked price, just keep an eye out for sales), easy to store, come in lots of colors.

Silicone Cupcake Liners - For use at the table.

Condiment Cups - For use in some games to hold chits, cubes, etc. I can often find these at a price of $3 for 50 at a local wal-mart.

Also, cheap Plano tackle boxes are great as well.

Most of my games are baggied, with cards wrapped in Hugo's Amazing Tape. I've also started buying these silicone cups figuring they're cheap enough to leave in the games as opposed to getting a generic set that I carry everywhere.

I've had bad luck with the Plano type organizers, finding ones that will both fit in the box and hold all of the pieces.

I don't do foam core because my perfectionist tendencies far far exceed my abilities. I just wouldn't be happy with the final product.

Some games I've been buying inserts from TheBrokenToken . They are far and away my favorite inserts, but a little pricey for doing all of the games.

If availability or storage is an issue, then another thing you can do is keep all your pieces in the little baggies (preferably one resource per one baggy) and then get some silicone muffin cups. To setup, you just empty each baggy into its own muffin cup, and you won't have to do any digging. To clean up, just empty the muffin cup into the baggy.

Best is that you only need to store the muffin cups, and you can use these cups for any game with a lot of bits (whereas Plano boxes are only going to be usable for the game you store in it).

I have an emergency gaming kit that has pens/pencils, post-it notes, coin to flip for first player, extra dice of varying sides, and these cupcake liners to store bits while playing. I play weekly at a bar so having these always seems to come in handy.

I'm sure there are a few other things in the kit, but I can't think of them off the top of my head.

It's been a hit/miss for us.

LO is picky with textures so it would take a day or two for him to happily eat the homemade stuff.

I use an old silicon ice cube tray for when I first introduce a new food, and have purchased some Baby Cubes as well. I also use silicon baking cups. I borrowed books from my local library instead of buying puree cookbooks; saved me a lot of money.

I like to make them in batches, but I also keep a lot of jarred stuff around just in case I run out and don't have time to make more, or if I'm lazy and push off making more. Right now I'm on the lazy train but hope to make more this weekend.

We tried BWL but, again, he's picky about textures and has no desire to feed himself.

Cut up the leftover baguette into small cubes. Soak in milk. Blend until as smooth as possible. Pass through a fine sieve. Add whole eggs, flour, sugar. Deposit into iSi siphon. Charge with N2O. Deposit into microwaveable silicon cupcake mold. Microwave.

You'll need to mess around with this to see what works, i.e. adding flour, sugar, fat(s), and so on. You can also add some yeast for a slight 'bready' note. For example, the technique can be used to make microwaved brioche, microwaved olive oil cake, and microwaved banana bread.

For $7.99 I got this 12-pack of silicone cupcake cups that work just like muffin cups, just cheaper! Just put them on a cookie sheet or a piece of tin foil. Food slides out of them so easy it's scary.

Yeah, I think the vanilla extract might be a nice touch, but really, just some additional ingredients - e.g. caramel, chocolate chips, etc. - would do the trick. I'm not sure if an egg is needed, but it can't hurt to try! All I know is more than 1 cup of flour and shit would've gotten real - real shitty, that is.

We found our silicon muffin/cupcake cups at a local store that had them on sale. Amazon's got em for $9.99 and they're worth every penny. Seriously, these things are game changers. :D
