I have the Garmin Forerunner 310XT which is hella cheap for a tri watch (like $100-ish now, since it is obsolete, haha) but does not track laps. My league does 2 skaters at a time, we're small enough that it usually takes about half a practice. Most phones have lap timers on the clock app, so everyone has a partner and the partner just has to hit the 'lap' button while their partner skates and counts their laps themselves. I usually make sure we have some bumpin' tunes. Everyone else sits on the sidelines and cheers and encourages eachother on.

It could use a bit better of an explanation. It took me 2 full tries before I understood what I was supposed to do.
My first attempt, I thought "shutter" just meant to start it. After I hit the spacebar everything started, and I was just counting myself thinking I would type in the number at the end.
My second attempt, I tried pressing the space bar like I was taking pictures, so instead of hitting space on every one, I was waiting until there were a few new ones on them on screen at the same time.
What I think would be more intuitive would be something like a number clicker counter being shown on the bottom right corner. Every time the player presses the space bar, it's clicked once with a click sound effect and the player sees the number increment. I think something that small would make the minigame very intuitive.
As for the game itself, where will it lie in the balance between reflexes and simulation on a scale of 1 being Diner Dash and 10 being Restaurant Empire? What will the player spend most of the time doing while playing the game?

But I know that probably not exactly what you want (they count too high). But I thought those different colors might be handy for you. As for dials.. I don't know. I was sort of imaging a smaller, wooden version of the spinner in "Life". You know though, if there were a 10-sided, "top" kind of thing, kind of like a dreidel with 10 sides, maybe that could work (it would have no moving parts and would like nice as wood).
(Don't know how realistic this is, but--) maybe you could get one of these clicker counters. Every comment/remark they make throughout the day, just deadpan stare at them and click, every time you hear "wow again?" hold it in front of their face and click. If they ask what you're doing, tell them you're preparing your case against their workplace harassment.

Beginning on the third week, it says you can measure by distance, or by time. It's up to you, but I went by distance. How I measured this, was running around an indoor track. I knew each lap was 200m, so I used a golf counter like this one to count laps.

So yeah, the options are pretty much flow sensors (expensive and complicated), by weight (similar issues, and many weight sensors have issues with static weight) or by just simple counting by adding something like these to each tap which is a low tech method, but you can't really count half a pint if you go for smaller pours.
If you have to count a lot of something, there is a gadget for that. Or group them (like, by tens or by how many fit on each shelf) and count the groups. Or the fastest way: count them by weighing the whole lot (in a bin or box if needed, just remember to tare) and then dividing by the average weight!
I really like this stroke counter. It's a spring loaded analog one that goes all the way up to 12 strokes. It's the size of a quarter and you're supposed to stick it on your glove.

I had a clicker at one point for headache tracking. Every time I had a headache, I'd click it. My only problem was that I'd dissociate and click it multiple times for the same headache.
Also, things like drawing a line for every time I wanted to SH was a good preventative/also kept track for me of how many times that happened.

Notebooks/Journals: Heavy, bulky, half the time I can't read my own handwriting. Also awkward.
Apps: I don't have a smartphone.
Open ended questions/Anything more than one variable at a time: Too complicated and overwhelming. If the answer is repeatedly "I don't know", I feel like I'm failing. So, if I have to pick a word for how I feel, I'm unlikely to do it. If the question is "Do you feel sad?" I'm much more likely to at least try.

I run on a 160m indoor track at times when the snow piles up here in the northeast and I got so sick of counting the laps that I sprung for a handheld counter device. It's such a simple thing, but it lets my mind wander and focus on the music or podcast or whatever I'm listening to, instead of obsessively repeating the lap count in my head (plus it makes it much more difficult to forget if I just finished lap 49 or have been on lap "49" for three loops in a row because I zoned out)
