I have not tried the Fitbit, but I have used the sport and each of the other gear watches over the years so I am pretty comfortable with them.
Battery Life
The batter life on it is good enough to get through a day or two comfortably, but it is nothing like pebble where you can just forget to charge for a few days and it not be an issue. I think my biggest complaint about battery life is it does not charge as quickly as the pebble. i used to love taking off my pebble to shower and it being fully charged after. The Gear will not charge completely, so it needs to be charged overnight. For me this is a pretty big downside.
Fitness features
I did not use it a lot for fitness, but the features it did have were excellent. The heart rate seemed to work pretty well, though I had nothing to compare it against. The steps were accurate enough and the UI was excellent. I really like Samsung's fitness app and that helps.
Notifications
I noticed no issue with notifications. There were easily accessible which was nice and I do not recall any missing notifications. The actions that you can do with it is not quite as good as pebble, but it does still let you interact with them.
Tasker support
I do not use tasker so I apologize I cannot comment on this part.
Smart Alarm
I'm not sure if they have it, but since the battery life isn't good enough for me to sleep with I never would've been able to use this feature. Also, even though the Sport is only a little thicker than a Time Steel, it feels thicker and less comfortable to sleep with.
Music Control
Music control is perfectly fine. I had it set up as a quick launch so I could get to it quickly and it worked great. No complaints.
AOD
The Sport has it and it works well. The fitbit does not from what I have heard. This is part of why I haven't gotten it as I don't want to shake my arm and hope it notices every time I want to tell time on my watch.
Honestly I was really happy with the Sport. I will probably go to it after my collection of Pebbles all die. Hopefully there will be an improved selection by then. Two things I wanted to note that havent come up so far. If you use a band that wraps like this one it will block the heart rate sensor. I knew that and figured that would not be a big deal, but they use the heart rate sensor to determine whether or not to turn the display on. So if you use bands like this, you will have difficulties with the screen turning on.
Also, the next generation of Gear watches are rumored to come out soon, so if you need a watch now, the Gear is a great option and will probably get updated as they are still updating the S2. But if you have a few months to decide it may be worth waiting to see the next gen of Gear as well as what Google I/O has in store for us. Google I/O starts soon IIRC.

I originally assumed I'd do the stainless band since I have the stainless/silver 360 but have to say the grey leather strap really grew on me while I was trying to figure out what kind of metal bands were out there that'd work.
If it wasn't for the lack of a easier to remove clasp on the leather strap that came with the 360, I might have even kept it on there.
I found after a full day of wearing the leather band though that moisture was getting stuck under the watch due to sweat and hand washing.
Since the leather strap is to much of a pain to quickly remove every time I washed my hands, I'd just not bother.
With the metal band, the quick release clasp on the bottom makes it very quick to remove/loosen the watch to dry under there after each hand washing now.

You'll need to either use the spring bars/pins that came with the watch or buy some like these.
Best Buy also sells the same Pebble Steel bands for the same price as Amazon which is where I got mine from.
Some tips with removal and install. The spring bar/pin holes in the Moto 360 are made from plastic. Be extra careful with removal and putting the new ones back in. If you misshapen or break those holes, you're screwed.
If you don't have a proper spring bar tool like this, you'll need a jewelers sized flathead screw driver.
Getting the existing bands out is the easy part, I found putting the new band back in with the spring bars that came with the leather strap to be a lot more tricky in the metal band. I found the best way was to try and compress the springs on both ends of the bar and go straight into the opening. If you try to put one side of the spring bar in first then compress the other side, it didn't want to fit.
I enlisted my wife with her tiny little hands to assist and it made things a lot easier :P

As mentioned elsewhere in this thread, you need to decide what you are looking for in a bit more detail. Is it a particular look or style? Is it an automatic or quartz movement? There are a lot of options even once you get these two aspects narrowed down. You can always buy the watch and strap separate as well, to get the combination you are looking for.
I personally have a Citizen Nighthawk on a black Hirsch Liberty strap and a Citizen Eco-Drive with blue hands on a brown Hirsch Liberty strap. These are very likely much cheaper than you are looking for as a grad gift, given the $700 limit listed, but the Citizen Skyhawk is closer to your limit and is really nice too.
When it comes to automatic movements, it will be quite easy to get to the $700 limit. Hamilton is a favorite, with both the Khaki Field and the Jazzmaster being good possibilities.
My only advice is to stay away from "fashion" brand watches. A little reading in /r/watches, particularly the buying guide and sidebar, should help you a lot.

Picked up a Casio Edifice EF-503D-1AV WW when it went on sale the other day. It didn't take me long to pull the trigger, considering this watch has been on my three watch grail list the past year or so (the other two are Omega Speedmaster and Railmaster). I know it's cheap for a grail watch, but this is honestly the most I've spent on a watch to-date. It's giving my beloved Citizen BM6400-00e a run for its money.
Picked up a different strap and clasp for my new watch as the metal bracelet is nice, but a good leather strap just sets this watch onto a new level. The metal bracelet is nice and heavy, but ultimately not my style. Really digging the deployment clasp. Might switch all of my casual watches to a deployment clasp.

I've got a Hirsch strap on my Montblanc and I think its a great piece. Not sure what kind of quality leather you'll get for under $30, but the Hirsch straps are about $40 and well worth it.
My Ball (pre-owned) came with an Orion strap that is pretty nice, though the buckle is ungainly) and it seems pretty nice as well.
The DW strap you linked seems pretty good, why not just go for it?
You won't be disappointed with this watch, it's only 37mm too so it should fit his wrist pretty good, and he'll love the famous Seiko lume when his wrist is glowing in the dark!
It's also perfect for going nato strap crazy, which you should encourage. Pair it with a fun nato 3 pack!

I'd say most non-OEM endlinks will not be a perfect fit because of the lug angle of the 104, but you may not need one. I think the watch would look good with a super engineer style bracelet.
The stock thick brown leather band that came with the 104 is pretty good, actually. The 104 is a "strap monster" basically any strap will look good on it.

Lovely watch! I have one as well and it's one of my favorites. To answer your question, I don't think that there's any "official" nato strap manufacturer - it refers to the style rather than any specific brand. Personally, I'm a big fan of Crown & Buckle. They've got a huge array of nato straps, including some leather ones that I'm particularly fond of. I think this C&B chromexel NATO would look excellent with the Maratac.
That said, I've currently got my Maratac on a brown Hirsch Liberty strap and I would be remiss if I didn't recommend that as well. It looks absolutely fantastic with the Maratac. The stitching on the strap matches the off-white lume on the dial almost exactly.
EDIT: for metal bracelets, I think that strapcode is pretty well-regarded. I like the looks of the Super Engineer Type II, and I've heard some good things, but I don't have one myself.
Depends on what you want. Nato, Zulu, and Perlon straps are cheap, and the former two have leather variants that look pretty nice. The big catch to those styles is they are rather casual and not meant for dressing up. The leather ones though can pass in dressy situations if you want.
Other than that you have a variety of metal bands like engineer's, beads of rice, milenese/mesh, oyster, and jubilee to name a few prolific styles.
Then there is leather which comes in a number of exotic styles from alligator, crocodile, and caiman to chicken, ostrich, and stingray and the normal cow leather. With leather bands it would be in your best interest to invest in a deployment clasp to prolong the band's lifetime.
Those are a majority of your option when it comes to straps!
I got this one and this one cuz I couldn't decide on the nato or two piece strap. Mostly just looked for leather straps on Amazon with good reviews from verified purchases. I've heard lakehouseleathers.com is good too. I bought a strap from them a week ago but hasn't come yet but I've heard good things. Eventually I'd love to get a jack foster horween strap but didn't wanna spend that much on a strap before I'd seen the watch! Might end up getting a horween strap before the bracelet honestly

I have an Orange Monster, and got this strap. I really like the orange and brown combo. It looks just like this. I saw a guy with the same combo on watchuseek and was like "YUP!" I know leather of this nature on a diver is a little bit of a no no, but let's be honest, I don't wear this thing diving ever, and it looks great this way.

I'm looking for a leather band suggestion for my SKX007. I received it as a gift on the standard Jubilee bracelet and have a few simple NATO straps which I use everyday, but I want to find a rustic looking brown leather band. As popular as the SKX007 is, I'm hoping you all can supply some suggestions!

Probably something like this providing the end links fit. Edit: Or this could be a safer bet, just check the lug width of your watch, obviously. Anything made by strapcode that you like will be decent.
But I'd seriously consider taking those small amounts of yellow on it and pairing it with something like this or this. I personally think that would look better than an oyster.

I have one that came along with another nato from Amazon, and although it was leather, it was very thin, and just kinda looked like brown plastic. Picked up this one, still really cheap, but it's thicker, looks way nicer, and I've been wearing in on my new Seiko turtle, but it's also been on other watches in my collection. Just a nice looking strap for not much money. I just want one that looks like actual leather I guess.

You could if you really wanted to. Something like this would almost certainly fit (or any straight-ended 20mm bracelet). One risk with that is that the tone or finish of the metal may not match the watch's very well, since it's not made by the manufacturer.
Metal bracelets are typically more for informal wear rather than formal. It seems counter-intuitive to some people, but trust me, a nice neutral leather strap (black or dark brown) looks a lot dressier than a bracelet, and can really make the watch "pop." Metal bracelets were originally designed for sports watches, which is why you typically see them on divers.

I have had my Mako ii with the blue face for a while now, it has become my favourite watch to wear but been having problems with the original metal band it comes with. I think the band will kick the bucket soon so I want to change the band to a leather strap. I have been reading online that Orient watches use certain spring bars and not all straps work on it or something like that.

While I think it would only look good on a chunky watch (my pilot is fairly large) as it is a thick (4.06mm) leather strap with a sizable Pammy-syle buckle, the quality is just crazy-good for the money.

It is fantastic. Solid, straight end link is the safest bet for fitting without being able to test it in-person.

Originally got it for my Maratac mid pilot, but ended up liking it a lot on the Stowa, even though it definitely is pretty rugged compared to the watch itself.
I love the SNK789, I wear it every day. I have about 6 different straps for it, I usually wear a NATO strap like this or this, unless I am dressing up a little more formal with a shirt and tie and nice leather shoes. In that case, I will use either a brown leather strap or a black one to match my shoes and belt.

Yeah you can swap out straps until your heart is content. Pick up a spring bar tool and 20mm leather strap from Amazon and you should be good to go.

I posted this SNKL41 last week, along with the blue (SNKL43) and black (SNKL45) variants. At that time, I squeezed a 22mm black leather strap into the 18mm lugs. While I thought it was a good color combo, I realized that the thicker band threw the proportions off.
I sourced this 20mm strap from Amazon, and squeezed it into the lugs (a little more challenging than you might think). I think this combo is outstanding (P UR E C L A S S, really), and total comes in at just south of $100.
The Citizen Eco Drive is a fantastic watch, great for everyday use. I paired it with the NATO band and it looks very sharp!
I have a Capeland chronograph's brown croco strap that I replaced with this from Amazon. I love it and it feels 90% as good as the stock B&M strap.

I've had this one on my SKX007 for 6 months now I really like it. One of the photos on the Amazon page is of mine.
Sure! It uses standard 20mm spring bars, so you can fit any 20mm bracelet / strap to it that you want. It's pretty easy to swap out yourself with a spring bar tool, or you can have any jeweler / watch repair store do it for a few bucks.
Something to be aware of though, is that the end links on a bracelet (the little piece that makes it look like there is no gap between the watch and bracelet) won't just fit perfectly with any bracelet. Hamilton doesn't make an official bracelet for this watch.
However, if you didn't care about the end links, you can get a metal band without end links, like any of these, or many, many more:

Im completely nicking this from a thread last week, but (a) I have one and (b) it was a great suggestion. How about a Seiko SNK809. It’s quite small and based on an old pilots watch. You could also get these NATO straps for it so he can change the look. The grey one is very similar to the one James Bond wears.

Finally replaced my cheap NATO, with a cheap leather Nato.
I have been eyeing the Crown and Buckle versions, but I figured I would by a less expensive one first. The strap feels pretty good, though the hardware doesn't exactly match the case of my Seiko.
I am considering attempting to use shoe polish to dye/age the strap after I have worn it for a while.

I picked up the Silver 5 with the intention of coughing up the $77 for the leather band. Well It was delayed, then delayed some more, so I said screw it and just bought this guy for like $15.
You can easily unscrew the pins from the Fenix and just slide them into that band and it works like a champ. No quick changes, but that's not a high priority for me.
I got mine from seiya. It's still $130~ but if you are on a tight budget you can get this for 45 bucks.
I will warn you the bracelet does feel cheap and at that price range is a stamped clasp as opposed to the solid scissor style.
The end link isn't solid and you will need to bend it a bit to make it fit but it will be flush.

You really need a notched band. The ones for Pebble steel apparently work quite well. I ordered one of these per another redditor's suggestion.
On a slightly more positive note, can somebody help me pick a strap for this watch? I'm thinking dark brown leather but I don't know a thing about watches so I dunno if contrast stitching like this would look ugly on it.
This is what changed my mind about getting the pebble.
I asked a watchmaker what they thought about the pebble. I think the metal version looks sharp, like a 70's digital seiko. Anyways her only comment was "watches are supposed to be timeless, electronics become obsolete"

Not bad considering it's roughly the same price range as the official Moto band. I think this band is a no-brainer for the folks that don't mind the price since A) It's available right now, B) It looks so much better than the official one(in my opnion) and C) No pressure on the back of the watch as OP claims. Not that the official Moto one appears to put pressure on the back, but too many of the other 3rd party bands out there appear to do that.
