Sounds like you got burned and are gun shy. But have you considered doing subscribe & save with cheap "filler" items? Like these ~$2 sardines? Sign up to get 1 or 2 boxes of soylent and then 3 or 4 tins of sardines. You get the %15 discount on the soylent and a couple of sardines (which are super healthy and taste great on crackers.).

Then even if you get an unwanted/unexpected shipment of soylent, the surprise bill is more like $60 instead of $600.

One of my favorite appetizer recipes is a caviar dip (stay with me...it's not snooty ;) )

You will need:

  • 1/4-1/3 cup heavy whipping cream
  • 1 jar of red caviar (it's the small-grained, not fancy stuff you can find in the same grocery store aisle as canned tuna in most stores, don't bother going fancy. Try and rotate the bottle through the hole in the box to make sure you're getting a nice, fully red batch)
  • 1 batch green onions

    Whip the cream just to stiff peaks stage.

    Gently fold in most or all of the jar of caviar - don't over mix as the cream can only take so much.

    If you have some time to strain out the liquid before adding the caviar, that would be better, but it's not wholly necessary. Again, not really elaborate - as simple as just holding a spoon up to the side of the jar and letting most of the liquid drain out. You want a really heavy density of caviar, so aim for less cream to more caviar.

    With a kitchen scissors, snip in small slices of the green onion to taste.

    Put in a pretty bowl and serve with water crackers, preferably ones with cracked pepper.

    You can make this a little ahead of time, but I wouldn't do it earlier than the morning of your party.

    And technically, black caviar works, but instead of getting an appetizing, valentine pink appetizer, you get a really nasty looking gray appetizer.

Lol man it makes me laugh every time I get on reddit and check my messages. Without fail I always have a message from you waiting and it really makes my day. It must feel pretty valiant to defend a company who doesn't give a shit if you're there or not. I'm glad you're making a difference in the walmart world. They don't appreciate you and never will, but good for you. How you can get so butt hurt over a company that thinks you're disposable is beyond me, but if walmart was ran by people who fought the way you did, maybe they'd be around another 70 years. But as we both know digital is the new marketplace, and walmart probably won't be around by the time we're dead...because the company didn't realize that internet shopping was going to be a big deal. A chicken fillet sandwich is not a chicken burger. To make the sandwich: you take a bread roll (demi-baguette) and add mayo, lettuce, some grated cheddar and a little finely sliced raw onion (last two are optional). Then you take a southern fried chicken fillet (something like this https://www.amazon.com/Tyson-Premium-Cooked-Breaded-Chicken/dp/B073XZQ8M2 I figure you'd get something like this in any frozen food section of a supermarket) and slice it into diagonal strips, then lay that into the roll. And that's it. Perfect.

Sous vide is interesting if you want to do an artsy, fine-dining sort of thing as ChefSteps does here, but it won’t be any easier than the traditional method, especially if you’re trying to get a “classic” result. Personally, if I were looking to streamline beef Bourguignon, I’d look at doing it quickly in a pressure cooker, or doing it unattended in a (gasp) slow cooker.

But, if you want to do SV, I’d modify your plan a bit. For example, in step 3, are you planning to bag the meat, veg, wine, and stock together? That’s going to be a pain, and you’re going to need a big, strong bag and a huge container for the bath. Instead, I would cube and brown your chuck first, then SV it alone at 135° for 24 hours.

In the meantime, you can build your sauce with whatever recipe you like. With SV, you’ll lose evaporation and roastiness, so you’ll have to make that up elsewhere. Start with the pan from your pre-sear so you don’t lose the fond, then I’d go a little heavy on cooking the bacon and vegetables, and also sauté the tomato paste a bit. Then you can deglaze and reduce the wine, and put this mixture in the fridge for the next day.

When the beef is done, give it another quick sear, then leave it in the pan and add your wine mixture and some demi-glace and/or beef stock concentrate. Then add water to get the consistency you want and simmer for a bit to marry everything together. Correct for thickness, acid, and seasoning, and serve! (Somewhere in there you might want to do the pearl onions and mushrooms, too, either as part of the vegetables or separately like Julia. On a weeknight, I’d skip the pearl onions and throw the mushrooms in the with the other veg.)

Most deli's have the whole pieces available for slices. I just ask them to lob a big hunk off and not slice it for me. It's also on Amazon. If you can get pork belly, it's also really easy to cure if you wanted to try to make your own. It would take 7-10 days. I've used this recipe with great results.

Does anyone have any experience with vegan 'Caviar' (alginate based) such as Kelp Caviar? Seems like it has potential.

I've tried Tangkorn, the Ikea version, and it was amusing, but I've not had the real stuff in ages, so I have no idea how it compares. But it has nice texture, and is hilariously inexpensive compared to the real thing.

I have a WF right across the street from my office, which is really nice. You can order the salmon jerky online, but it's not that cheap. I just don't like beef jerky... but salmon is amazing.

I like meat or cheese sticks (very portable), or meat/cheese roll-ups.

My favorite products:

  • Sogo Jalapeno Beef Sticks
  • Sargento Pepper Jack Cheese Sticks.

    If you don't need the portability, it's a lot cheaper to buy a block of cheese and cut it into sticks. Or just eat slices. :)

    For my meat/cheese roll-ups, I usually use either Pastrami or Corned Beef. You can also roll them around a dill pickle, or add some cream cheese. Add a few spices. So many ways to go... :)

You can even get Omaha steaks off amazon, so you don't have to go outside. However, the steaks at the meat counter at the grocery store will almost certainly be way better.
