I've personally had an excellent experience with MSI laptops. They have got cooling, servicing and upgradability down.
A little disappointed with the prices to be honest. For $100 less than Razer's cheapest model, you can get one with the same specs but a 1070 graphics card and 15.6" display.
I guess Razer's models are for people who prefer smaller displays above all else.
This ASUS ROG GL502VS-DB71 would be an great pick for you. It matches your criteria very well and sits right within your budget. It has a powerful i7 quad core processor, great 16 GB RAM, a nice storage with a 1 TB HDD plus a fast 256 GB SSD and of course, a fantastic GTX 1070 dedicated graphics card (one of the best graphics cards available). This laptop will run the latest games inclusive of the new ones on high settings. The great thing about it is that with all its performance power, it is not heavy and has a very sleek and nice aesthetically pleasing design.

These Max-Q SKUs are not replacing the existing laptop GPU lineup. Just giving more options to people who wants higher performance in thin and light form factor.
Saying the same thing over and over again doesn't make it true.
Since both of them have almost identical specs I would consider the bells and whistles and for me this GL502VS-DB71 has them, 1 it has PCIE SSD which is faster than normal SSD(not by much, but it is still a bonus point), 2 it is lighter by 1.5 lbs, I know you said it doesn't matter but you are getting a laptop for portability so lighter is almost always better, 3 it comes with ASUS 1-year Accidental Damage Protection with 30 days Zero Bright Dot Guarantee.
They offered to send out a tech, but warned it would be awhile before one was available. I opted to return the machine and buy the Asus equivalent which has an extra 8gb RAM, 256gb SSD, and an IPS screen.
Oh, and it's a premade, so it will have the right GPU

1080 prices shoot way up and probably past your budget except for a company like sager or clevo

If I had that budget, I'd start my search with an Alienware 17 laptop. It's a pure gaming laptop and people have said you can get a GTX 1080 in it. There's also the graphics amplifier that you can get a few years down the road when the 1080 doesn't cut it anymore. For a few hundred dollars more, you can buy the amplifier and any desktop GPU and plug it into your laptop for even better performance.
Otherwise, like you said, check out Sager's laptops, MSi GT73VR, or even EVGA's own laptop.
Those are all 17 inch laptops. If you want a smaller, and lighter laptop, check out the Alienware 15, Asus ROG Strix GL502VS, MSI GT62VR, or an Acer Predator 15 laptop.
There's also System76's Oryx Pro if you want to try Linux instead of Windows.
It's not BAD but it isn't comparable to a laptop with even a 1060, and the other laptops will be cheaper because they aren't Apple.
Here is a decent example and it is $600 less than the base 15" macbook pro

Found a warehouse of this for about $1400. Runs everything like a champ. Don't have a docking station, I just use a usb hub for kb/mouse and plug up the other monitors to it.

There is stuff like the Razer modules you can swap parts around but those are stupid expensive and also defeats the purpose of it being a laptop IMO. It's cool that it's an option, def has potential as a concept, but I can't recommend it to anyone in it's current state. But yea in general the cards are already specialized to fit into X brand of laptop so upgrading isn't common, I've never heard of it at least. It is also not unheard of for notebook components to be soldered or otherwise inaccessible.
Anyways - You should check some of these new machines out, MSI and Asus have some really good specs for $1500-1700. Like I'm not gonna price check this myself but one reviewer quotes that a comparable DIY desktop to this https://www.amazon.com/gp/aw/d/B01K1INYD0/ref=cm_cr_arp_mb_bdcrb_top?ie=UTF8 would be about $1000 (take it with a grain of salt obviously, if you have the time I'd love to know if he's correct). I purchased this back in Nov, so far I love it. For the hardware that it has I think it is quite slim and portable. It can run a bit hot but nothing to serious, middle of the keyboard seems to be where it gets the warmest. I just use it on a chill pad for most of my serious gaming and problem solved!

Bought this + 16gb ram upgrade ($80). This system has met my every need - and I get my Vive tomorrow (so I can update regarding quality).
edit- It does NOT use optimus resulting in sub-par battery life but no issues playing VR (there are reviews claiming as much)
I think the new ASUS ROG for $1680 is an especially good option you should look into. It's a 15.6'' with a new GTX 1070 graphics card which should work extremely well for all AAA games on the market currently. It has great specs with a Quad core i7-6700HQ processor, 16GB SSD and a 1TB HDD + 256GB SSD. It also has a full 1080p IPS display, a good build quality, and pretty good cooling.

Consider this one too. I have it and it is amazing, handles everything with ease, slim for what it is, and heat management is fantastic. The Witcher 3 on ultra, with dual screens running multiple programs at the same time, only brings the gpu up to 83 degrees celcius.
I recently bought a $2000 USD gaming laptop but favored larger size and gpu in lieu of sleeker and more battery life. However I found one sleeker smaller laptop that fits your needs:
this asus 15.6" will handle any game you throw at it, and PCIE SSD + i7 cpu will make design software run extremely fast, backup 1 TB HDD for all larger files.

Don't buy origin. ASUS and MSI are both good. Razer is something you can consider for portability. 16GB of RAM is the sweet spot. If you are buying a laptop, make sure to buy one with the 10 series of cards (1060 or 1070). They are MUCH better than the 960m/970m. You definitely want an SSD but it's okay if it has a second HDD (as long as it also has an SSD). I wouldn't buy an AMD laptop currently. Some options for you to consider:

I got this laptop for 1400 on sale at microcenter. It's incredible for the price range and you'd be able to stream almost any game on the laptop or through a capture card.

Now, here is the major gotcha with this laptop which I've noticed.
The power adapter doesn't actually supply enough power to the laptop to run at full steam. That means that the laptop's battery begins to drain slowly as you're running the graphics card and cpu on high. I was running overwatch at max settings and clocked that the laptop would simply run dead in about 9 hours of gameplay.
Reducing the graphics settings and locking the frame rate solved this issue for me completely. Since the laptop's screen is only 60hz I locked the game to 60 fps and life has been happy since then.
But this is a gotcha which I'm kind of disappointed in Asus with.
The second issue which is more just a concern is that the graphics card runs at 90c which seems very hot for any graphics card. Again limiting performance resolved this and it now runs closer to 75c on my cooling pad.
I'm every other way this laptop is incredible. It out performs my brother's $2500 Alienware laptop (purchased at the same time) for $1,000 less. It's also quite light as far as gaming laptops go.

I would go for a laptop with a 1070. 1060 can run vr right now, but as it intensifies it may be better to "future proof" a bit by going for a gtx 1070. If possible though I would get a desktop. They are more bang for your buck and can be upgraded. The best prebuilt desktop i have seen is the MicroCenter "Powerspec g313" and "Powerspec g413". If you do not have a microcenter you could have a place like NCIX build you a computer of your own parts choice for 50 dollars if you dont want to build your own. Alternatively you could try to find someone else to build it. Your last option should be ordering one from amazon who somewhere else as they are far overpriced. Building your own will be the cheapest. The powerspec g313 is almost the same price as if you build your own, with added bonuses such as 1 year warrant for the computer itself. Good luck
I got the ASUS ROG GL502VS-DB71 (~$1600) last week and I've been very happy with it. It's got a GTX1070 with 8GB, a Core i7 6700HQ, 16GB of DDR4-2133 RAM (expandable to 32), a 256GB NVMe SSD and a 1TB 7200RPM HDD. The display is a 60Hz IPS panel with G-Sync. Great specs for the price.
It has no problem maintaining 90FPS in most games (supposedly the minimum for comfortable VR) on ultra or high settings. It also weighs around 6 pounds so it's easily portable, and it's quieter than my MacBook Pro when under load.
If you research this model, you will find complaints about the supplied 180W power brick being insufficient so that the battery will slowly drain under heavy gaming loads even when plugged into the wall, but that was fixed in an update. I have tested it and have not had this problem at all.
The battery life is not very good but it's a gaming laptop.
For your money, I'd honestly recommend the Asus ROG GL502. I have the much older ROG G750JZ, it's a good station for when you have to have performance on the go and you're in places for extended periods of time.
I do have the late 2016 Razer Blade 14 with the GTX 1060 as my daily driver since I am on the move a lot and carrying a 10 lb laptop around just isn't practical. I also have a desktop at home, though I'm in the middle of upgrading to Skylake and a 10-series GPU.
On a side note, if you really want to go balls-to-the-wall "portable" computer, buy an MSI GT83VR

These are just examples, but a good guideline. At the 2k price point, you'll be looking for a laptop with a GTX 1070. Feel free to look for more, such as on Newegg (they have really good search algorithms, though I'd rather buy from safer places like Amazon)
Though of course, in the end, the best solution is spending around $1600 of your budget to get a very good gaming PC with a GTX 1080, while spending the rest on a laptop. You can game on your PC while the laptop can be used for the portable work.

I'd get a laptop with a HQ type CPU and a new Nvidia GTX 1000 series GPU. For $2k your looking at a 1060, maybe a 1070 but both can run games at 1080p.
TBH though, I used to use a Xbox 360 on deployments since you can easily hook a couple together for multiplayer halo matches with 8+ people, and if it gets stolen (a big issue underway) it's only a few hundred bucks. Oh, yeah, invest in a good lock.

It us more than a 5-25% price difference. This laptop is half the price of mac, and has the better specs, as it has a good graphics card and more memory.
I generally never use customer support so I can't really comment there.
While yes Apple is most reliable, there are solid windows picks as well. You can avoid those build quality issues if that is what you want to invest in.

The price is $1,699.00 so it is affordable.
The only thing that concerns me is the quality of the laptop. It is made of plastic and I've seen a lot of complains about the low quality.
Since you want laptop I would look at Asus. I had previous model and worked great for me. For your budget this what I would buy. Just pick up a good mouse and mouse pad to travel with you. Maybe headset depending where your playing at.

It does seem to have better build quality than the others ive seen from MSI, Asus, and Acer, although i would have to say that Alienware is a sturdier machine, albeit they do weigh a lot more and are nearly twice as thick. And more expensive.

I really dont know if i want a traditional laptop or an ultrabook. As said in my OP, if just an ultrabook, i will budget about $1,300 max as that is what my current macbook is worth and it would be a even trade to get into something different for an ultrabook. So if I'm just willing to drop my notion of size requirement, I can get a 1060 for $1500 (base models can come cheaper, but require too many compromises), and the cheapest I can get a 1070 for is $1700, but I need to compromize on size and RAM clk speed.
Cheapest I can satisfy all wants and dreams for is $2000, but it's not at a particularly good efficiency (most 2k laptops come with more than 128gb ssd).
Not sure if swapping out the SSD would be easy, the Razer laptops come unibody. I imagine any swap would require some screen removing shenanigans.
Also my one serious annoyance with the Razer laptops are they don't come with an ethernet port and you have to carry around a dongle to use it. Sometimes depending on the hotel chain you have to switch over.
Also just want to add I have also been peaking at the ASUS ROG GL502VS-DB7 since it actually has a G-Sync and is under 5 lbs. I would be sorely tempted by it if my current laptop was actually acting up.

I just got the GL502VS-DB71 a week ago for my new work laptop and it's a beast. Check the reviews on amazon, the positive ones are pretty accurate. The only gripe I have is the size, it was oversold in the pictures (angles, photoshop ect). But for the hardware inside it, the overall size is pretty good for a gaming laptop. I have thrown fallout 4 and the Witcher 3 on ultra with hairworks and it runs a solid 55-60 fps at full HD. If you have questions or want some actual photos of it let me know.

I'm assuming you live in the US. If you're anywhere near a microcenter, drop by and have a chat with the staff before deciding anything. I haven't been there myself, but I've heard almost exclusively positive things about them.
What I currently use is this. I am very happy with it, the performance is good (1080p 60FPS in most games on very high settings), it runs surprisingly cool, and the screen is overclockable to 100Hz. The particular model I linked has a 1TB HDD, I'd recommend also buying this and installing it immediately (this is also a good excuse to do a clean install of Windows, which helps get rid of bloatware). It also has 16GB RAM, which can be doubled for ~$90 (just make sure it's the correct type of RAM, DDR3L).Do keep in mind that it is a couple years old at this point, and sine nVidia dominate the laptop market, the GPU will not see much support at this point (AMD is a much better company but you don't have a choice when buying gaming laptops). It is however the best I can find for the price at Amazon.Amazon search sucks, get this. It has a GTX 1070, which is way better than a GTX 980m. If 16GB RAM isn't enough later on, upgrade it with this. Also get more external HDDs. Always have multiple backups of everything important.

Depending on what kind of size you're looking for, I might actually suggest the new XPS 15 too. $1500 should be able to get you a pretty decked out laptop. I wouldn't accept anything with less than 16GB of RAM, an i7 (ideally HQ SKU), and a dedicated graphics card is going to help with your video editing.
The UX501 is a pretty slick option.. It's got a 960M, you'll be able to game on it anyway, take that! Bonus is that one has a 4K screen, so that's cool too.
The ASUS ROG GL502VS is another option, which is barely outside of your price range at $1600. That said, it's got a 1070, which is way way overkill for not-gaming use. Though, it will mean you can potentially rig up a sweet VR backpack I'd you're ever into that. It's also got a more "gamer"y look to it, which I'm not a huge fan of.
The Zenbook UX303UB is also a really nice option if you're looking for a 13" screen. It's got a less powerful CPU and GPU, and 4GB less RAM than the other choices, but it's pretty good for that small form factor.

The price fluctuates a lot. Before the holidays it was much cheaper. Right now it's on the high end but if you're willing to wait it can (probably) be had for $1300-1500. There's also a cheaper version with a 1060 and also a 17 inch version also with a 1060.

The GS63VR can be nice, but I would avoid buying it from Best Buy unless you can 100% confirm it has the IPS (PLS) display, and not the washed-out TN display.
The GS63VR has what is to my knowledge one of the absolute nicest FHD displays there is, but you need to make sure the one you buy actually has that display.
That listing looks suspect to me, due to its low $1399/$1549 price, and the fact that it doesn't list IPS under its display feature description or specifications.
Do you live near a Microcenter? You could get a GTX 1070 for that price. EDIT: You can see the full specs on this less cheap listing for the same product. The display is IPS and G-Sync. Downside: only 2 hours of battery life according to reviews, due to the fact that G-Sync (without a MUX) requires the dedicated GPU to be wired to stay on all the time.

I picked up an ASUS ROG GL502VS on sale from MicroCenter for $1300. It has an i7, a 1070 GPU, and is a thinner laptop when comparing to others with similar specs.
 
The downsides of it for me were 1. The screen isn't great (1080p) 2. The keyboard is average (chiclet keys) and 3. There was a few preinstalled programs I had to remove (took 5 minutes).
 
Battery life was average for a gaming laptop - 5hrs using, 3hrs playing. All in all, I'm really glad I purchased it.
I'm just not a huge fan of Sager laptops or any other rebranded Clevo laptops. They are too generic and plasticky. The ASUS will have better build quality and materials, longevity, warranty, parts, etc., which easily warrants the extra dough. Actually, with twice the RAM and an SSD compared to your config, the ASUS is a better value just for the performance.
