Metroid Prime, 1 and 2 (recommend playing prime 1 first, prime 2 is Nintendo hard at times. Also IMO Prime 1 is better for popping your cherry between the two. There is a third game for the Wii and the first two games were ported to the Wii with updated graphics and controls, in case you would prefer to play the Wii version. Def play Prime 1 first however)
Legend of Zelda: The Wind Waker, Legend of Zelda: The Twilight Princess (pick one and play the other if you like it. Also TP was ported to Wii with motion controls, and the whole game was mirrored to accommodate for that. IMO the 'cube version is better. That said, Nintendo tried for a more realistic stylization and thus it hasn't aged nearly as well as WW)
Starfox Adventures (if you liked the Zelda games, def check this one out)
Starfox Assault (absolutely nothing like Starfox Adventures. But a good game nonetheless)
F-Zero GX
Super Monkey Ball 2 (don't bother with Monkey Ball 1, Monkey Ball 2 is just straight-up superior in every way)
Super Mario Sunshine (This classic has aged like fine wine. Graphics were good back then and still hold up today, thanks to its stylization)

This is untrue, Nintendo released Gamecube controllers for both Smash 4 and Smash Ultimate. If you're specifically looking for an original GameCube controller, as in it was released during the GameCube era, then yes, I guess you'll want to look for the Nintendo GameCube text.

You can also emulate both games on Dolphin and play online with other people at Smash Ladder, as long as you have ISOs for the games and a GC controller->USB adapter. Adapters aren't very expensive (~$15) and netplay is a very good way of practicing with people if you don't have anyone around you.

They are 100% identical to the original gamecube controller except they have the smash decal. I just played mario party 6 using one of these last night. 23 bucks is hard to beat as well.
They remade the Gamecube controllers for the release of Smash 4 on Wii U. So you can just buy the Wii U model. It'll work with a gamecube and netplay.

Poor controller... You can buy a black SSB edition one for $20 on Amazon, the only differences are the triggers (they click when fully pressed) and the Nintendo GameCube thing on the front is replaced by a flaming Smash ball/ logo

That's not a N64 controller. However, this should still work when using the right input plugin. I recommend using the NRage Input Plugin: http://sourceforge.net/projects/nragev20/

Typically no. Especially for larger tournies, wireless controllers pose as a logistical issue. You may be able to get away with one at a local with below 50 attendees, but once you go larger than that, you'll have a hard time finding TOs that'll allow them.
IMO, you're better off with a GameCube Controller:

For the release of Super Smash 4 WiiU they released the adapter, and started reproducing the original GCN controllers, only with a different face plate with the Smash logo inside of saying "Nintendo". The wire is also like 8 feet instead of the 4ft the original had.
On 20xx vs normal Melee: it doesn't matter. 20xx has L-cancel lights and random music if you're interested.
On stage zoom: there might be something out there but you'll get used to the camera pretty quickly, it's fairly good and intuitive
On Xbox controller: other people have you advice on how to set it up but if you're ever planning on going to an actual tournament you'll want a real GameCube controller. To pick one up for Dolphin you can get an adapter here:

Actually it's 90€... I've never in my life bought a second hand controller that I liked for any console (and I've bought maybe 15 overall), and with the recent spike in prices I can't see good second hand controllers being super cheap either.
But if you're fine with that then good for you I guess.

Playing melee on Wii has no differences from on a real GameCube, so that should be fine. As for controllers, the best option is to get the new smash 4 branded controllers, authentic and from Nintendo.
Looks to be a little under $40 for a used Smash one.
I know you said that you don't want to buy a console but think of this:
You'll get started with Melle for $150. Less if you can buy locally and find things on CL.
Otherwise, if you want to do Melee. Dolphin and Melee with a GC controller and Adapter will be the best for you.
SmashBros is not only great, it's also still super grassroots, not run by a company, and completely free besides the initial cost. This documentary is a great intro to the scene.

The adapter exists.
The Switch dock exists and has 3 USB ports. All the game needs to do is respond to input from the adapter. It works on Android, Windows, Linux, Mac and Wii U (OS?). I'm pretty sure they can add it into a new Smash or a port without any issue.
And why? Because the fans use GC controllers and they've kept supporting it for 3 generations now. They're still making and selling SSB-branded GC Controllers.
Also, how have you been waiting since Brawl came out? There is a better Smash after Brawl, with a different engine/physics. Even for an entirely new one, people would want GC support. I don't/won't feel like buying 3 more Pro Controllers, when me and my friends all have SSB brand GC controllers.
You can play online on a Wii using Wiimmfi, thought not many people do that.
Sorta, yeah, but if you're just starting out it's not terribly important. Wavedashing is a fairly simple concept, so even if you can't do it right now you'll eventually get it down.

I'm probably just echoing what everyone else said, but here we go.
Fox is technically the best character in the game, but I wouldn't recommend him for a beginner personally. The tier list assumes that all players play as perfectly as possible, and the things that make Fox good require you to press a lot of buttons very quickly at very specific timings, which is more difficult for newer players. To find out which character (I'd recommend just one to start) you want to main, I'd recommend watching some professionals play matches and see if any of them catch your eye. The easiest characters for beginners to pick up are probably Marth or Sheik, but the most important thing by FAR is to main the character YOU want to main. If you want to main Fox, do it! If you find that you really have your heart set on Kirby, don't let anyone stop you! Hell, I'm from Minnesota, and our 3rd ranked player is a Kirby main. You have to play with whoever YOU find the most fun to play with, otherwise practicing won't be fun, and you'll never get anywhere.
Oh, and get a gamecube controller. Get a gamecube controller. Get a gamecube controller. They're practically designed for Smash Bros, and they're the only controllers you'll be able to use in tournaments if you decide to go to any in the future. Don't get a cheap knock-off either, they're not nearly as good and they break easily. Get this one, or a different color of this one. It's by far the best for a beginner. If you happen to get really into Melee, you might want to get one of the older editions of the GC controllers, as they're considered to be slightly better, but they're way more expensive. If you're using Dolphin, you'll also need an adapter. It might be a little annoying to get set up, but Dolphin Emulator's site has troubleshooting for every possible issue.

I also bought a lightly used original gamecube controller, which I like more. Either will be a great improvement.
I've used 360 controllers without issue. I set up a PS4 controller for my friend yesterday and that also worked without issue. You'll be fine with either one, though the PS4 controller needed DS4Windows running to make it work properly. The 360 will just work with windows.
The best solution, however, is to buy a Super Smash Bros. Gamecube Adapter and a Gamecube controller.
