I know what you are dealing with, and I'm so sorry that you're going through it.

What I've found helpful is to try making different levels of effortlessness for various daily tasks. Basically, it's just having contingency plans that I can implement as needed. Making them pleasant is also important.

For example, here are my breakfast contingencies:

  • DEFCON 5: Use whiskware to make protein pancakes. (1 cup of water+1 cup of pancake mix+1 optional egg, shake it up, squeeze onto skillet, and eat; add chocolate chips, blueberries, or whatever you want if you're in the mood.) Or make scrambled eggs and toast.
  • DEFCON 4: Oatmeal of choice (tip: no need to measure water precisely, just pour some boiling water directly from a kettle to make it as thick or thin as you like) or some healthyish cereal with oat milk (because oat milk keeps longer than dairy milk, which means fewer surprises, and tastes the most like dairy milk out of all the options)
  • DEFCON 3: Instant oatmeal cup, Kodiak to-go cups, etc. These cups are great to have on hand, and lots of brands make lots of kinds of them. Go wild.
  • DEFCON 2: Tsogo in a blender bottle, or whatever meal replacement powder you prefer (BlendRunner can help you compare options)
  • DEFCON 1: Soylent meal-in-a-bottle, Ensure Complete, Met-Rx meal replacement bars, or any equivalent zero preparation product that's specifically meant to be a complete meal replacement, because you need the nutrients and calories when things are this tough. (Beware the really small, cheap meal bars. They're too small to be satisfying, so you end up eating a bunch and it doesn't save money.)

Another thing that really helped me a lot was learning to drink more water. For almost everybody, this sounds as simple as just grabbing a water bottle and making an effort to change habits. It probably doesn't even occur to them that this might need to be streamlined for people like us.

    For me, here's what worked:

  • The right water bottle is big enough that you won't need to get up to refill it often, insulated well-enough that the small pleasure of ice can be added before you go to sleep and still be there in the morning, and – perhaps most importantly, I found – has a lid that doesn't even require you to open it when you want a sip (because people like us really do need to save every spoon possible)
  • The right ice tray doesn't require you to ever wrestle with it. You don't need to get rid of your other ice trays, but silicone ones will never cling too hard to the ice. This makes you more likely to get the ice, and the ice (if you're like me) will make the water more pleasant, and making it more pleasant makes it require less mental effort to get yourself to reach over to take a sip.
  • The right reminder won't require you to press a button to deactivate an alarm, won't ever make you scramble to turn it off so you don't wake up your roommate, and can be ignored relatively easily (just turn it to face away) so that you're still in control.

These are all things that require spending some money upfront, but are cheap to maintain.

Basically, the strategy is to accept that you're already doing what you can to help yourself, so making the tasks easier will let you do more and live better with your limited energy. Having contingencies that accept how bad some days can be will help to keep one very bad day from turning into a very bad week because you won't need to stretch yourself to get something done when you can least "afford" to do so.

Don't be embarrassed or ashamed by the lengths you need to go to in order to live decently. Others won't get it, but we both know that you're already used to people not really understanding.

If you want to talk more and exchange ideas about more ways to "save spoons," then just let me know. Good luck!

Fellow celiac here! I have a horrible selection for grocery stores, so I buy a lot of things off of Amazon a case at a time. It is way cheaper than I can find anywhere this way. Stop buying the Udi's muffins. Honestly, they taste like crap and you can make ones that are soooo much better! I like to do a lot of baking mixes so I don't have to guess on what ratios of flours to use. Anyways, here are a few of my favorites:

  • Pasta that tastes good and has good texture - Tinkyada

  • Pizza crust mix that my husband likes even better than the gluten filled stuff I used to make - Bob's Red Mill GF Pizza Crust Mix

  • Bread mix that we make in a dedicated GF bread machine - Glutino Gluten Free Bread Mix

  • Muffins - King Arthur Muffin Mix

  • Pancakes, waffles, cookies, biscuits, muffins, just all around awesome baking substitute - Pamela's Gluten Free Baking Mix

If you get adventurous and want to try baking your items with a flour substitute, Cup4cup or Better Batter are both great. I've used them both as replacements of regular flour in things I've made and turned out very similar to using regular flour. I also make my own chicken fingers using the GF Bisquick (there is a GF chicken finger recipe on the box). We also eat a lot of rice and quinoa.

What helped me the most was time. Seriously, it just took a while to get the hang of a new lifestyle. Over time I felt better and better and learned more easy recipes and cooking techniques and it all became easier.

One thing I missed the most was good baked sweets, but then a friend who's son is allergic to wheat turned me onto this book http://www.cakemixdoctor.com/books/the-cake-mix-doctor-bakes-gluten-free/ and told me, "It'll change your life. I use it for all the kid parties and no one even realizes they're eating gluten free."

Recipes, I haven't yet done the whole make your own flour thing. SO much extra work. I've found that the Pamela's baking mix makes a pretty good sub in. http://www.amazon.com/Pamelas-Ultimate-Baking-Pancake-4-Pound/dp/B000NMJWZO I just bought a 25lb bag on amazon because it was less expensive in the long run. Also, the gf pasta with a combo of quinoa, corn, &/or brown rice is better than the just brown rice alone pasta.

And for easy, meat, veggies, and potatoes or rice with some easy sauces (BBQ & curries). Read all the labels, and really, it does get easier/better with time. Good luck.

Yes! Good advice above!

If she was born and raised in Hawaii and went to school here, she will definitely be familiar with li hing mui! The seeds are these little sour dried plums, and like /u/thefightclubber said above, it is also very popular in powdered form. Along with pineapple, it basically goes well with all sorts of fruits from apples to oranges. Things like li hing mui gummy bears and other gummy snacks coated with the powder are also very popular here.

------------------------------------------

Another suggestion I have are these Hawaiian Sun Pancake mixes: http://www.amazon.com/Hawaiian-Sun-Pancake-Assortment-6-ounce/dp/B00GHYP9EA/ref=sr_1_1?ie=UTF8&qid=1414756606&sr=8-1&keywords=hawaiian+pancakes

They're relatively new and popular among tourists here to take home as souvenirs. So although, these won't invoke nostalgia for her since these pancake mixes weren't around 20 years ago, the "Hawaiian Sun" brand also produces a well known fruit drink that she might be familiar with.

It's very nice of you to be helping her with her homesickness! Good luck! :)

Cup4cup is flour, made with things that are not wheat - like, rice flour and tapioca and potato starch. I work in a kitchen store, and the gluten-free customers are really enthusiastic about it.

I'm not a health professional, but to my understanding, going gluten-free essentially has no health benefits unless you are Celiac or allergic to wheat or have some level of gluten intolerance. Some people don't even realize their slight allergy or intolerance until they go gluten-free and suddenly feel better. As long as you maintain a healthy balance, gluten-free is not actively unhealthy. You can still eat rice, quinoa, barley, millet, potatoes, and other starches.

The benefits of supporting your spouse and not having to plan twice the number of meals might make it worth a try.

Bonus: Here is an easy way to fix rice, barley, or millet. In a covered casserole dish, combine some rice, barley, or millet with twice as much broth (beef, chicken, veggie, mushroom, whatever you like), cover, and bake at 350 for about 45 minutes. For softer barley, you can add more liquid. Easy squeezy.

Pancakes are cheap food that every student should know how to make in his/her own room. Here's some advice about how to do this. Buy pancake mix that specifically says "Complete" on the box. That means you only need to add water. I suggest that you buy a large 5lbs box like this, because it's the most economical. A large OXO food storage container is useful to keep the mix sealed and away from pests. Also buy one of these Bisquick Shake-n-pour bottles so that you can reuse the bottle if you've got a fridge to store any extra batter. A little spritz of cooking spray is all you need for pancakes or waffles, but you may need to add some cooking oil to the batter for waffles in order for them to brown, crisp, and release from the iron. Non-stick electric skillets are easy to find. Amazon will probably have same-day prime delivery to your room. Students can sign up for Amazon prime for free. The trick for pancakes is to use very little oil and medium-low temp. Wait for the bubbles to rise on the surface of the pancakes twice, using a spatula to check the edge for burning. It's better to start with low heat and only gradually increase it to speed up cooking as you learn the proper setting to keep it on for multiple pancakes. The items I linked are just examples. Feel free to use whatever similar items that you find instead.

u/interstellargh · 2 pointsr/running

I am really, really terrible about breakfast but I'm trying to be better because I think I end up binging on lunch/dinner/snacks if I don't eat every 3 hours-- especially if I want to ramp up my running! I learned a few months ago that on weekends I really like protein pancakes (kodiak cakes brand, found at target). Weekdays have been terrible as usual in the breakfast category, maybe a granola bar or yogurt. Found these protein flapjacks-in-a-cup deal at target. OMG THEY'RE GOOD. I haven't quite gotten the texture right, but its like pretty legit at 200 calories and 10ish? grams protein. Anyway, they also sell them on amazon and I'm going to be buying a lot once I figure out my fave flavor: https://www.amazon.com/Kodiak-Cakes-Unleashed-Flapjack-Buttermilk/dp/B014SFW8DE/

u/suitcasemythos · 1 pointr/progresspics

Not dumb questions at all! So my protein waffles are just waffles made in a waffle maker using a high protein waffle mix. I really like Kodiak Cakes waffle mix because I get great waffles using just mix and water. So no extra sugar or calories. Some people make them using protein powder but I haven't been brave enough for that yet.

& I'm definitely not eating just 300 calories a day, lol. My TDEE (what I burn in a day) is around 1800 calories, so I eat about 1500. Therefore I'm cutting out and not eating those extra 300 calories I burned.

Feel free to ask any more questions! And if you're female I highly recommend checking out /r/xxfitness it's an incredibly helpful subreddit and I learned a ton from reading there.

I've tried gluten free baked goods mixes and they're pretty good!

Plus the cd on my list gets you in the ballpark of $100 - just some ideas.

I love Kodiak Cakes! The dark chocolate kind is amazing, I’ll make it in the microwave and it tastes like a brownie in a mug 😍 Good luck!! You got this!

u/CC-2389 · 8 pointsr/WaltDisneyWorld

Just a bit of practice. I've had some batches that were a little too much or little but the cup that came with the waffle iron really does have a near perfect amount when a hearty scoop is taken. Also the mix I'm currently using is responsible for them looking as good as they do. It's apparently the same one used in parks and it tastes (and looks it). The recipe is super simple and printed on the container of the flour Here you go if you need it

u/yuk0njack · 1 pointr/CasualConversation

BREAKFAST: Pancakes. I buy the "just add water" pancake mix so it's super quick and easy to whip some up, and they're really filling which is great.

I buy this at Aldi. It's like $1.89 a box. They also have real maple syrup for $6.49. If you've never had it, buy it. You'll never go back to that corn syrup-based nastiness again.

LUNCH: Leftovers from a previous night's dinner. I have a cheapy $6 lunch kit from Dollar General, and some glass bowls with plastic lids that I take it in.

I got these cheap at Big Lots (like $3 I think), except mine have red lids instead of blue.

DINNER: Can be lots of things. allrecipes.com and cooks.com have some good simple recipes, as does pillsbury.com. FYI, pillsbury.com's Reuben Casserole is like crack in food form. It's so addictive and so tasty.

edit: i failed at reddit markdown again lol

I use Birch Benders Paleo Pancake Mix and Walden Farms Maple Syrup. I’m too lazy to mix up my own ingredients for both 🤣 11 net carbs for both and the O Calorie & Carb syrup is really good. Found both at the grocery store or available on Amazon. With Costco bacon this meal was only 300 calories FTW

Pamela's pancake mix. Light fluffy pancakes every time. Also, redditors, don't give me crap about how easy it is to make pancake mix.

Raw Meal chocolate replacement meal. This is my breakfast everyday. I drink it with almond milk. Doesn't taste good with regular water. Whole Foods sells this for $50-60ish.

Tamanishiki Super Premium Short Grain Rice. Only applicable if you have a rice cooker. Best rice I've ever cooked. Maybe cheaper if you have an asian market near you. I do not, so I bought this. I bought this bag for $22 last time.

Breakfast: Most Chex are gluten free. Rice chex, corn chex, strawberry chex, chocolate chex, cinnamon chex and honey nut chex.

Waffles and pancakes are pretty decent made GF. Try Pamela's Pancake mix: can find it at most supermarkets: http://www.amazon.com/Pamelas-Products-Ultimate-24-Ounce-Packages/dp/B000DZDJ0K/ref=pd_sim_gro_4

Omelettes, or any other type of eggs.

Muffins: http://www.recipezaar.com/banana-maple-pecan-bread-muffins-gluten-free-365191

Lunch: I usually eat left overs or something simple. Apples, etc.

Dinner: see my other post.

Things to make in bulk over the weekend: pulled pork! I just made a batch. Om nom nom.

If you're looking for a chocolate fix, you can't go wrong with fudge. (dunno about casein free fudge though, most recipes I've seen call for cream or sweetened condensed milk). Maybe a GF dark chocolate cake: http://www.recipezaar.com/One-Bowl-Gluten-Free-Chocolate-Cake-209764

Not had that brand, but I've made waffles with Good Dee's before and they were pretty solid. Throw in some know or lily's chocolate chips and some zero sugar syrup and I didn't miss "normal" waffles at all.

We use Kodiak Cakes pancake mix. It’s whole grain high protein. I’ve added a scoop of protein powder before and they didn’t come out dry. I also add applesauce or Greek yogurt to the mix sometimes. Might not be exactly what you’re looking for but damn they are delicious.

The mix comes in different flavors like buttermilk, dark chocolate, and there’s a peanut butter flavor but I haven’t tried that one yet.

In stores they’re always like $5.50 per box but amazon sells 3 boxes for ~$14 so it’s a little cheaper.

I will not give you crap about pancake mix, because I totally have a box of pancake mix in my pantry right now. We like Kodiak Cakes...they taste a little whole wheat-y to me but the SO loves them!

u/Rios93 · 18 pointsr/ketorecipes

I used this: https://www.amazon.com/Good-Dees-Pancake-Gluten-Almond/dp/B0764HZQ9L/ref=pd_ybh_a_59?_encoding=UTF8&psc=1&refRID=BQSKQWQMJY4SQA9KWDT3

They came out pretty good. Sadly I don't have any low carb syrup but the savoriness from the bacon and sausage patties made it taste great!

Looks like there is at least similar products available, just browse both the section with regular pancake mix and he gluten free areas at your local grocery store: Glutino Gluten Free Instant Pancake Mix, 6.67 Ounce https://www.amazon.com/dp/B00CMQDKES/ref=cm_sw_r_cp_api_jwz5xbH55FWJW

u/Nyappykim · 6 pointsr/1200isplenty

I used this pancake mix.

It definitely tastes healthy but its actually my favorite breakfast atm! Instead of using water, eggs, and coconut oil, I used unsweetened cashew milk, egg beaters, and light butter which tasted a lot better and is lower in calories.

u/fleurius · 2 pointsr/glutenfreerecipes

I think it works pretty well, but I still swear by https://www.amazon.com/Cup4Cup-KTS-2519-Gluten-Free-Flour/dp/B0096MPAWQ. Still it's not a ready-made pie crust recipe.

Generally, I've found the best crusts have condensed milk powder in them. I'm not sure if the Pillsbury blend has it though.

Big fan of New Hope Mills Pancake Mix.

While there is, truly, shame in the pancake mix game...I still LOVE:

Carbon's Pancake and Waffle flour

IF you use a mix, use Carbon's, otherwise what you see in the thread is exactly what you are looking for. I would advocate adding a bit of vanilla to your home made pancake mix though.

And whatever you do...be sure to use peanut butter on your pancakes.

They don’t have protein gluten free ones. https://www.amazon.com/gp/aw/d/B01H2JGZRI/ref=mp_s_a_1_4_a_it?ie=UTF8&qid=1520904600&sr=8-4&keywords=paleo+pancake+and+waffle+mix&dpPl=1&dpID=51N1QGCwgsL&ref=plSrch

These are pretty high protein and gluten free. Not Kodiak but you can find them at some Costco’s

I used Lakanto Maple Flavored Syrup with them and I am 100% pleased. Also have some bacon here and avocado with nutrional yeast.

I 100% recommend checking out Birch Benders Paleo Pancake mix. They definitely have a different taste and texture from wheat pancakes, but they aren't terrible. Hopefully they're something that works for you.

Not egg dominant but decent protein:

Kodiak Cakes + Egg whites instead of water. You can mix in some milk as well/protein powder. This will also make them thicker/fluffier.

u/sweetmercy · 1 pointr/AskCulinary

Get yourself some malted flour. You will have crispy, flavorful waffles every time.

u/macbalance · 5 pointsr/WaltDisneyWorld

Here's the mix Disney uses, apparently:

https://www.amazon.com/gp/product/B000ILEMAU/ref=oh_aui_search_detailpage?ie=UTF8&psc=1

A can will make several batches. Read the instructions, as I screwed up the first batch because I did something wrong (you add an egg and water, but I still messed that up somehow...) but there's a bunch of mix in this container.

I need to make more one weekend when my wife and I are both feeling better (stupid cold). We did not have a special Mickey Waffle Maker, but just used a plain boring round one.

u/Melisinde72 · 1 pointr/xxfitness

Different varieties for Kodiak cakes, but here's one of them: http://www.amazon.com/gp/aw/d/B00LH6ZAN8/ref=mp_s_a_1_3?qid=1421866811&sr=8-3&dpPl=1&dpID=51u1DqxgsuL&ref=plSrch&pi=AC_SY200_QL40

No Splenda... and part of the proceeds go to the Grizzly and Wildlife Foundation!
