It really depends on what you are doing. You say "Not planning on doing any super athletic or intensive activities"... does that mean mostly running from the house to the car, or walking from the car to the shopping mall? Out walking the dog? Or spending 3+ hours watching a football game outdoors?
If it's near freezing, I'll generally wear a heavy softshell and mid weight fleece (and good hat). Below that I'll switch to a hard shell and fleece. This is generally fine as long as I'm moving around... if I'm standing still waiting to get in line for a show, they can be too cold.
If I expect to be out for more than 15 minutes, if there's a big wind chill, I'll throw on a long sleeved thermal shirt and maybe add another light layer. Again, good if I'm walking around.
I have a cheap TNF Nuptse 700 fill down jacket that I wear if it's really cold, if I'm making a quick trip to the store and don't want to bother layering, if I expect to be out sitting in the cold for any length of time, or going to a friend's house who has his thermostat set to 80F and I don't want to have to strip off all the layers when I get there. I don't worry about down getting wet since I only break it out when it's well below freezing. When I'm sitting around at a sporting event, I'll add a fleece, a blanket, a pad to sit on, a thermos of hot drinks (and a Jetboil nearby so I can make more if necessary).
I generally don't wear thermal pants, just jeans. But I do have some cheap snow shell that will slip over the jeans, they don't insulate much but cut the wind which is generally all I need.
Boots... my hiking boots are great in the mountains, but not so much walking the streets around town. Good pair of Sorel Pac boots and wool socks make a huge difference. If I'm at a game sitting around, I'll not above using some toe warmers.
Good windstopper fleece hat like the Mountain Hardware Dome Perignon , gloves, scarf or neck gaiter.
I picked up many of these items at TJMaxx/Marshalls. Stocks are hit or miss, but I've bought a few nice hard shells, down jackets, hats and gloves, thermals, wool socks. I'm going into this season super stoked, but I need to replace a lot of my outwear this season since it doesn't fit me anymore (Went from XXL to L), and I'm not sure what to go with in terms of jackets/pants. I see a lot of talk of going with just a high quality Shell instead of an insulated jacket, and just layering accordingly. I was looking on Evo and found some items I liked, but wasn't sure if it'd be the best purchase, and was curious what you guys thought. The jacket I found was an insulated one and really liked the design, but if going the shell route is a better choice, I'd love to be pointed in a better direction.

Here's a comment I posted a month or two ago about this topic. Basically everything you'd need to wax, sharpen edges, and perform small-medium ptex repairs (think small core shots and scratches on the base of the ski).

The reason why I'd go with this kit over the ones you listed is because it comes with an edge sharpener guide + gummy stone. If you're sharpening edges you'd probably want to use a file&guide when starting out.

You can also buy a nylon brush and base cleaner/a rag to clean your skis but hot waxing and then scrapping also works for cleaning.
When I'm done waxing my skis I usually go over the skis with a wine cork to make sure everything is even and smoooooth. Not something that you have to do though

If you have major core shots I would probably go to a local shop and have someone fix it who does that stuff for a living. Really research what you're actually doing before you do it for the first time. You don't want to make things worse. After you get the hang of it it becomes a lot easier and can save you money. Can also do it for your friends on the cheap
We use ski goggles which can be had readily and cheaply in many areas with used recreational shops.
What you want regardless is a layer of foam or something similar that goes along the edge between the goggles and your face. Something that produces a breathable seal.
What I like about the ski goggles verses motorcycle goggles is they tend to have a large, wide face plate similar to diving goggles. I like having that extra space in my field of vision during whiteouts. I also like this because both of us wear prescription glasses and they fit over the top of the glasses.
Honestly both my SO and I did the daytime and nighttime goggles because that is what everyone says you need. They took up too much room and we NEVER have once needed them so we ditched the different types years ago. IMHO its a waste of money. Just get a solid clear pair and go. Less to carry, less to worry about switching back and forth, and the less you have to worry about out there the better.

I used them once last year and found them really solid. I have since upgraded to a much nicer pair, but I have a buddy that I go snowshoeing with and he uses this pair exclusively. I think you can do quite well with an inexpensive pair for your first couple of years. The pair I bought was only a bit over $100 and I don't see any reason to ever upgrade them. They seem like they are going to last me a decade and they do exactly what I want them to.

This is my first year snowshoeing, so I'm hardly an expert. They don't look tight enough. Invest in a skate key to help you pull the laces or just get something strong that will allow you to pull them tighter.
I used these Ozero Winter Gloves! all winter long and they kept my hands warm even on the 0 degree days (and my ride is usually around 45 minutes to an hour long), I would recommend those to anyone. Also, they're pretty cheap.
Build yourself a "Boxulus Rift" for now and use your cellphone as the screen. You can DIY with a cardboard box, cheapo ski goggles, and magnifying lenses... All probably sub $50 Dollars.

The other comments are great, but if you're still having trouble you might want to try getting some lace hooks, which help get things tighter if you're a little new at this.

The goggles are fairly fog resistant, though they did start icing over last night. Coldest I've been out in this is -15C/5F, no wind that day though.
The goggles make the biggest difference in the wind. Without them any exposed skin gets a bit painful.
