Trail staples like peanut butter, Nutella, trail mix, hard candies/chocolates will all keep really well without refrigeration. Things like Spam Singles and tuna singles are really shelf stable and versatile. Instant oatmeal is also an easy breakfast and pretty negligible in terms of weight, especially since all you need is some hot water. I like taking instant polenta for the same reason - fills you up, takes 3 minutes to cook and is great with some salami or cheese mixed in.
There's also a supermarket chain in Iceland called Bonus and there are quite a few of them around the place. They have a huge selection of things like salami and hard cheeses which were staples of what I carried while I was there (spent 3.5 weeks hiking/camping the whole country basically). Tortillas are light and easy to pack and would definitely last you a week.

Just remember you can mix and match some form of pasta and some type of meat and the possibilities are endless. If you're worried about food you can always fall back on the easy (albeit expensive) pre-made dehydrated meals at REI.

I would recommend something like amarena cherries, or luxardo cherries.
If you do fresh cherries they'll release a ton of liquid and sink. No good. Maraschino cherries are, well, not my favorite.
I would get either of the above, and I would drain them a little and if I felt like it, add some of that liquor to the souffle batter. Then I would chop or add whole as described above.

I had come across that canned tomato theory before recently and thought it made a lot of sense. That makes things even easier in regards to making pizza sauce.
Just so you know, my plan for the first can of tomatoes I buy is for the making of a Sicilian pizza. And after that it is NY style pizzas on my baking steel. So I am not looking for authenticity, just the best tasting (or best tasting at the best bargain price, aka bang for my buck) tomatoes.
If I can't get my hands on Sclafani Crushed Tomatoes locally, I will order them online for $1.70 a can, that's nice!

I just got a can of crushed Hunts, Cento and Contadina tomatoes. Will be fun to make pizza sauce with them and see how I like them. My #1 brand to still attempt to find and try is Sclafani but there's no rush. Now the journey to finding good natural casing pepperoni sticks and deli sliced mozz.
Breakfast: instant coffee and poptarts, once I read the calorie count (200 kcal per pastry, so 400 kcal per pack) I knew that they were the breakfast for me and that we shouldn't be feeding these to kids.
Lunch - meat sticks and cheese, various variations sometimes a roll of summer sausage, blocks of cheese, I quit trying to eat tortillas due to my moustache not cooperating.
Dinner - Instant refried beans and minute rice, I seriously ate this almost every night. The beans come in a foil pouch so I would pour half into a ziplock for another night, boil the water with the rice in it, pour/spoon it into the pouch. Same the pouch for the next night, and these pouches are good for packing out used TP. For variety add taco bell sauce packets, bits of cheese, individual spam packets. Minute rice can be found anywhere. These are my favorite beans, but the price looks like it is going up, they can also be found at Safeway. A couple of stores had another brand of instant refried beans that worked OK too.
Snacks - I would pack pouches of dill pickle sunflower seeds, both for the salt and to break up monotony. I ate alot of granola bars, usually when taking a break and felt like I was running out of steam. I found the cheaper granola bars were my favorite, but when I found cliff bars for $1/bar I would usually buy them even though I was getting tired of them (did you know some of them have caffeine in them!).
Edit: Yellowfin tuna in oil pouches rule! Either I would make extra rice at night to eat for lunch the next day with the tuna or mix it in with the beans and rice. Good fat/calories and the oil doesn't freeze when you are in the mountains like the tuna in water does.
I tried being vegan for a little while, and I went back to just being a vegetarian because you're right...it's so stinkin' hard to find stuff without dairy in it! I hope you'll like this cheeseless mac and cheese! And also this great book on vegan cheeses aka cheese replacements that are awesome.

Here is the math on the tuna cannery closing, and why I strongly believe that the minimum wage increase is a red herring (ha, ha, ha).
COS Samoa Packing, which owned one of the two tuna canneries on Samoa, closed in 2009. According to this quoted press release they employed a total of 2,041 workers. Let's assume that each worker earned the minimum wage at the time of $3.26. Let us also assume that each worker was, therefore, scheduled for an increase to the cannery minimum wage of $4.76 an hour, or an extra buck and a half an hour. Figuring that each employee works 40 hours a week, 52 weeks a year, we can assume that the labor cost for all employees would have gone from $13,839,612 to $20,207,533.

Let's talk about cans. According to the BLS, in 2007 the two canneries on Samoa exported $445 million worth of canned tuna to the US. COS Samoa employed about 44% of that labor, so we can reasonably assume that they exported 44% of that tuna value. That comes out to $195 million in tuna exports.
The cost of a can of tuna in 2007 was apparently about a dollar. We can calculate the number of cans of tuna produced in Samoa through simple division, and figure that 195 million cans of tuna were made per year before the minimum wage hike. We can also ascribe a labor value to that can (13.839 million dollars divided by 195 million cans to get dollars per can), and figure that each can of tuna cost just over seven cents in labor to make.
After the minimum wage hike, that would have cost just over 10 cents in labor.
Assuming that COS wanted to make the same amount of profit, per can, that would mean that each can would have to go up by a total of 3 cents.
THREE CENTS.
THREE. FUCKING. CENTS.
In the meantime, we can now also see what the cost of a can of tuna is today, by visiting Amazon. It's a buck thirty-five per can.
In other words....
Despite closing their factory, claiming higher labor costs, and moving, the total cost increase that would have been caused by the minimum wage increase in Samoa has already been washed out ten-fold.
Hell, even if the minimum wage in Samoa were now ten dollars an hour, the total cost of labor would have only gone up by 14 cents, and so the cost increase on store shelves would STILL have outweighed any wage increase.
Here's another question: if labor costs have gone to one-fifth of what they were before, why haven't canned tuna costs dropped by about 5 cents per can?
So no.
No.
Stop. Just....stop.
The only logical explanation is that labor is not anywhere near as big a factor in tuna costs as the fine, upstanding folks at COS would have you believe. Don't buy claims that a minimum wage increase closed COS Samoa. It didn't. It was greed, plain and simple, no matter what the company's owners said. They wanted higher profits, and they got it.
I used to travel for business a lot and often found myself in conference rooms where lunch is brought in for a day long meeting (or some other lunch situation I would not be able to predict). My trick was to always carry one or two of those pouches of salmon or tuna and a plastic fork in my bag as an easy solution to not having a keto friendly option available. You can also carry small packets of mayo.
Also, don't be afraid to ask for the food stall to make you something without rice, you may be surprised how many people are willing to help you and be very friendly toward your request. Just say "hey I'm doing a low carb diet, can I get that with veggies instead of rice?", or "Do you have any low carb options?". The worst they can say is no, but you need to be bold and fearless, it's your health and future we are talking about. Otherwise you may end up like me; much older, much heavier, and wishing I had made better choices as a youth.
It definitely needed to be seasoned, and I like having more control over how well done my pasta is... I'm a fan of Roads End Shells & Chreess with tapatio. Annie's was way too sweet for me and I remember really not liking the Daiya Cheezy Mac but I don't know why... I'd love more recommendations if you've found a good boxed one!
Yup! We're not trying to replace the really cheap stuff; it'll always have a place in our cabinets as well! For us it's not about replacing the inexpensive options; it's about a nutritionally complete replacement for unhealthy convenience foods like fast food or pizza (for comparison's sake, usually around $5-6 a meal).
That being said, instant ramen isn't limited to the basic Maruchan and Nissin offerings! Shin Ramyun Black is a super popular one that goes for around $2.40 a pack and you can even find the ultra premium Ichiran for nearly $8 a pack! Even Nissin has their own premium "Raoh" offering for about $3 a pack. You can find an entire aisle full of dozens of different varieties and price points at a lot of Asian supermarkets and it's actually pretty fun to explore! We're currently working our way through as many as we can for......research purposes ;)
I'm not a fan of fruit in my beer, though I will drink one from time to time. That said, I'd use something like Oregon Fruit canned cherries- they've been pasteurized, they're easy to add to primary (which is totally fine, trust me), easy to find, cheap, and impart a lot of flavor.

I have an amazon pantry subscription for these San Marzano tomatoes and they are fantastic. I use them for everything that requires tinned tomatoes now, they're absolutely delicious and worth every penny.
As for sauce recipes, Chef John's tomato sauce recipe is pretty good for a solid tomato sauce, you'll just have to put up with the infuriating cadence of his narration.
Here in Germany, you can get Mutti San Marzano Tomatoes in some supermarkets and they are good, but very overpriced (over 2€ for a 400g tin). Tbh, you don't necessarily need them. Any genuine Italian canned tomatoes that are from a respected brand will do just fine. If you definitely want San Marzano Tomatoes, these are available on Amazon

Saute a large onion and a full head of garlic in a big ass pot, then add the 6 cans of tomatoes with salt, pepper, italian spices. Cook for 1.5 hours on medium/low stirring every 15 minutes. Let sit for a couple hours to cool down, then put into portion sized ziplocks. Freeze them, leaving 2 at a time in your fridge.
When you want a meal pan fry your favorite meat (I do chicken sausage or chicken thighs usually) and vegetables (bell peppers, mushrooms, zucchini are good) then add a portion of sauce directly to the pan with the meat/vegetables. Add noodles. I add fresh basil and anchovies (umami baby), but it's not necessary.
If you want a meal for launch day but don't want to cook, pre-prep the whole thing, fridge it, and just microwave it. Generally lasts 2 days in the fridge with noodles. Sauce lasts about a week in the fridge, a year+ in the freezer. Makes 14-18 meals worth of sauce.
You can buy sauce, but this is cheaper than the good stuff and tastes better.

You would be fine for the month, and just think how good that first real meal would be when the month is over. Plus, you'd save a lot of that card for other things. That's way too much oil. Far too much paste and not enough sauce. No need to add water. Needs garlic and basil. Also needs some alcohol. Tomatoes have some flavor compounds that are alcohol-soluble.
Here's my sauce:
Add 1/4 cup olive oil to a hot saucepan. Dice one large yellow onion, add it to the pot when the oil is shimmering. Turn the heat down to medium-low. You want to sweat the onions, not brown them. After 5 minutes, add in as much crushed garlic as you like. I personally use 4 cloves. Keep that cooking for another couple minutes.
Add 2/3 cup of red wine to the pot. Cook that a few minutes to burn off some of the alcohol. (Use wine you'd want to drink. Never, ever use "cooking wine". Cooking wine is undrinkable wine that couldn't otherwise be sold and should be avoided.)
Add in one giant can (28 oz) of whole tomatoes. (I like San Marzano tomatoes, but in a pinch a big can of diced tomatoes will do.) Add in a couple generous pinches of salt and as much black pepper as you like, along with a tablespoon of sugar. Simmer all that for about 45 minutes, stirring every once in a while. Smash up the tomatoes a bit as you cook, but leave some in large chunks.
Next add in one small can of tomato paste. Stir it in well until the sauce thickens. Now add in a big handful of chopped fresh basil. (I roll the leaves up and cut them so they end up in thin strips. Google "chiffonade" to see what I mean.) Toss your cooked pasta into the mix, or put some over pasta on a plate. Shred a little parm on top and eat.
You can freeze this very well, and can also use it for the basis of other stuff. Brown some ground beef, drain and then throw it into the sauce. Sometimes I put peeled shrimp into it when I put the paste in. I also sometimes add cooked hot Italian sausage to it, and sometimes I put the sausage on a hoagie roll and pour on some sauce. That sort of thing. I also sometimes put some thyme or oregano in there too. I occasionally add red pepper flakes.
If you're wedded to the idea of bacon, cook the chopped bacon in the pot first and use the rendered fat to cook the onions. No need for oil in that case.

But it's not really that close to the real thing. I think they make it from lamb heart and liver + pork. It doesn't compare to what I've had the few times I've been to Scotland/the UK.
That said, I'm going to a Burn's Supper in Los Angeles at a restaurant. They make their own haggis, which I think is made from more approachable ingredients as well. But it's about the best we can do here.

It's my own version of poutine!

I've tried so many different ways to finish a SV steak, including the chimney, torches, grills, pan frying, etc. But the hands-down favorite of mine is to dry the steak with paper towels really well, coat the steak with a 4:1 mixture of dried mushroom powder and kosher salt, pan fry the steak for 60 seconds on each side in a big cast iron skillet with a good quarter inch of high temp oil (e.g., ghee or avocado oil) at or near the oil's smoke point. The crust is perfection. I use a balsamic reduction as a steak sauce (though only a very faint smear, as balsamic naturally has a lot of sugar).

Dave Cavanaugh (dmcavanagh) was my tomato 'mentor.' :) He turned me on to NJ Sclafani's. That's was years ago, and I've been using Sclafani's ever since. I remember he used to privately admonish me for recommending Sclafani's publicly because he was worried if too many people started using them, the price would go up :) Great guy. I miss him. Anyway, here's Dave's thoughts on what you can find at Walmart:

The downside to shipping tomatoes is that the cans get bounced around and a few get dented. Even if you lose 50% to damage, though, I'd bet you that you'd still be spending less than SMs.

Actually, a couple of the night I had sweet sue chicken breasts, it's basically a tuna pack but with chicken. I thought it was delicious. But there are plenty of spots on the trail (Yosemite, VVR, MTR, Red's, Tuolumne Meadows, other sidetrails) where you can get a 'real' meal. It'll cost an arm and a leg, but worth it.
Hells yes. I had one final canister of this stuff hoarded in the freezer from before they discontinued it, and went through quite a bit of it while pregnant. My grandmother always had a can of "Grated American Cheese Food" around, which is long gone, and I can't even find a pic of it on the Internets. Luckily this stuff is a fine replacement -- allegedly, it's actually Kraft powdered cheese.
Kraft offered a shaker can of the same cheese powder that came in Mac N Cheese (Dinner, to Canadians) but they discontinued it.
On popcorn, it was glorious, but you had to find zero-butter popcorn or it tasted like crap, for some reason
Scrapple, its Scottish cousin Haggis, and Glazier hot dogs. All delicious. Note that the haggis for the US market omits lungs, but I've had it and it's only slightly less delicious than the real thing.

To make:
Crumble a few noodles and reserve, cook the rest in boiling water, pour off a bit of the water and add the chicken, when warm, mix in the Khoi soi seasoning and coconut milk/cream powder, stir to combine. Add freeze dried shallots and cilanto and let them rehydrate, top with crumbled noodle bits, chili flakes to taste and some crushed peanuts, add a touch of dehydrated lime juice. Enjoy.

They're very, very good compared to any other instant I've had. Granted you'll never have fresh-from-Ichiran, but having been to the Fukuoka location and buying these, it's easily the next-best thing.
Also: Spam and eggs on the trail is just about the most heavenly start to a day of heavy hiking.

You can turn a beer can into a camping stove with a knife and some alcohol.
From there, you can use it to boil water. Make some couscous and some of these types of indian packet things. Or ramen.
Nuts and dried fruit are great healthy snacks that don't require refrigeration.

I wonder if "bacon" meant salt pork rather than the smoked bacon we are familiar with. I remember reading about the dust bowl era. It's just killing me now because when it first came out, we bought it for less than $10 per can! Unlike most canned meat, it's actually very good. It's good even if you don't heat it. It's fully cooked (but not actually smoked) high in sodium and still has a fair amount of fat. I think fat might be important since fats don't normally store well.

Amarena Cherries are also commonly used in cocktails though can be found in all sorts of cooking recipes. Personally, I prefer Amarena to Luxardo's. Fabbri is generally what you find behind most bars that use Amarena Cherries. The jar itself is reusable and much more attractive to have on display if that's your thing.

Edited to add it's like comparing canned tomatoes with tomato sauce. They may have an ingredient in common, but they're totally different things.
Possibly this weekend or the next, I've still got most of the last block left. It's not super convenient for me to get to, probably an hour and a half round trip but my retired parents go most weeks and they can pick some up for me (they're only a mile down the road from us). On and off I've been looking for alternatives I can get delivered but haven't seen anything really convincing yet. Might try the pizza mozzarella from here.

Well, if you're talking about recently - they've been hard to find because of some bad crop years out of Michigan, where 75% of the tart cherries in the US are produced. Harsh winters and early false springs have killed the blossoms and hurt the crop. 2012 was the worst crop in Michigan recorded history, apparently.
I have found frozen tart cherries at Costco in the last 6 months, I believe they were a Morello variety because they were dark colored. I've also found them in my local grocery store - but both times they were labeled organic fruit, so maybe your grocery stores are putting them in a different section? You can also get preserved Morellos in a jar from Trader Joe's - they've got a little bit of a different texture than frozen, but they'll do in a pinch. I've also heard fairly good reviews of the Oregon Fruit brand canned tart cherries in water, which you can get off amazon.
As a last resort, a lot of farms will overnight ship flash frozen tart cherries, if you're willing to pay the premium.
This is probably more tart cherry information than you ever wanted to know :)

Ingredients:
Dough sits in fridge for anywhere from 1-4 days. Oven set to 500F (max on my oven). Baking steel placed about 6" from broiler. Pizza goes in for 5-6 minutes on bake, and then about 2 minutes on hi broil. Basil added afterwards.
