Total paint cost about $160, and the additional paintbrushes/trays $30, so all in less than $200. It took me about 5 full (~8 hour) days; definitely a lot of work, but worth it for the value. Super happy with the end result given how cheap it was.
This is so far the best option I've found because it specifically states its food safe. People will say that any old wood sealer wont leach but to be overly cautious, I'd rather use something that says its food safe. There are also cedar oils like this if you don't mind having to reapply every so often. I've just finished my own cedar bed so I've yet to make up my mind about which to use so I have nothing to back up either option. Do let us know what you choose to go with!
frost king foam duct insulation works well for that application
you can also buy butyl tape with foil backing at any big box home improvement store not the asphalt shit though that smells but works theres this stuff too
also latex elastomeric roof coating mixed with sand or microspheres is another one i use. works well for the floor pan. this stuff is already mixed

spray foam in the right spots or bed foam
then polyfil or whatever from walmart is nice too can stuff it in all the little spots nothing else will fit in using a coat hangar or whatever

I'm kind of in your situatuon. All of the walls of my new house were some shade of yellow when we moved in. I have since painted the bedrooms and the kitchen, and the rest of the house is still yellow.
I wanted a light color (lots of trees around so the house doesnt't get much direct sunlight) so I got a couple different off-white paint colors. The bedrooms I did in a very subtle green tint and the kitchen is a pinkish tint. I have a gray/blue tint for the main parts of the house for when I want to tackle it. These are all "white" paints.

I don't know how to choose colors; I'm not creative really. I just wanted to get rid of the dark yellows. I never even imagined the pink for the kitchen, but it was on sale. I painted the cabinets white and the contrast actually looks very nice.
I wanted different colors for the dining room and living room, but I can't without it looking stupid because the fireplace is partially in the dining area.
I am kind of winging it right now for my house because I don't know what I'm doing, but it's coming along ok. Sorry if this isn't more helpful.

I use drylok for my enclosures. Extreme goes on a bit easier than normal. It's a very good masonry waterproofing agent- a good two coats on your plywood will seal it well. No fumes with heat or otherwise, I painted a 7x2x3 in 2 coats in 3-4 hours in a 1bd apartment with only the screen door open- after the 3 hours for the final coat to dry, absolutely no smell was left.

I know people use vinyl spray paint to dye plastics as well and I've though about doing it for test purposes. They use it on car seats/dashboards and I've seen people use it on Nerf guns and xbox controllers and it seemed to hold up.

I used a oxidizing paint from Modern Masters. It's a two part process first is the paint then the oxidizing solution that creates the patina.
