Getting started will cost a bit of money.
So to make it lactose free, you need to buy a normal gallon of whole milk that is pasteurized. NOT ULTRA-PASTEURIZED. It will say on the carton if its ultra pasteurized or just plain pasteurized. I've never seen any lactose free milk that is not ultra pasteurized. If you use ultra pasteurized milk, the cheese will not form correctly. So now you have a gallon of pasteurized milk and your lactase drops. I put twice what they say on the bottle into the milk (it says 5 drops per liter (about 4 liters per gallon), so I use 40 drops for a gallon of milk). I don't use it until two days after I put the drops in (instead of the 12-24 hours they say on the package). I also shake up the milk every time I'm at the fridge just to make sure it distributes evenly. Two days after treating the milk you can follow the normal recipe.
I also take 4-5 of these pills when eating the cheese even though it probably is not necessary. I'd rather swallow a dollars worth of pills than risk ruining my day.
Only problem is that the cheese doesn't seem to melt very well.

If you have issues with eggs, take 1/2 tsp to 1 tsp of baking soda dissolved in a large cup of water at the same time as eating the eggs, and it'll help (baking soda absorbs hydrogen sulfide, the smelly gas I make when I eat eggs).

Most lactose intolerant people were not initially lactose intolerant. What we were taught in medical school was that nearly all babies are able to process lactose, but they lose the ability as they grow older, because they should be weaned off breast milk.
I suspect I am lactose intolerant. My symptoms, however, are mild - only gas, but not diarrhea. I would highly recommend buying some lactase enzyme and trying it out when you eat. If your symptoms resolve, you might be lactose intolerant!
You can definitely buy enzymes for very cheap. You do not need to buy brand names like lactaid. They can be very expensive from a pharmacy - last I checked, they were about 30-50 cents per pill from my nearby pharmacies.
I buy Costco brand (Kirkland Signature) from amazon, which costs about 12 cents per pill. Lactaid from amazon ends up costing 20 cents per pill, but the total cost is less because they're selling you fewer tablets. So in this case it may be the better option if you aren't yet sure that you are lactose intolerant.
I am not sure why you suspect you are lactose intolerant, but if you do not want to try the enzyme route, you could also go to the store and buy lactaid milk. Around here, a quart of brand name (Lactaid) milk is around $5.50, but they have America's Choice brand for $2.99 a quart. You can buy that, drink some, and see how you feel compared to when you drink regular milk.
Note - there's limited amount of enzyme in a pill, so if you do experiment with the pill, don't go overboard! (Don't eat a whole carton of ice cream and expect 1 pill to be able to help you handle it all). Follow the directions - you may have to eat more than one pill depending on the portion of dairy you eat.
Buy regular milk and use these drops to make it lactose free. In the long run it ends up being cheaper because regular milk is so cheap lately. RIP milk farmers. Still is sweeter but to me tastes more like milk than some of the other lactose free options.

Just want to reiterate the lactase pill suggestion — they're my lifeline. I'm 24 and have been lactarded (just saw that here, and I love it) for like 8 years, or at least have been conscious of it, and I can relate a lot to your concerns: being a poor college student, drinking half a gallon on milk a day + tons of cheese, ice cream, etc. Dairy is fucking delicious.
The doctors that suggested lactose intolerance actually thought I may have overwhelmed my body's lactase-producing mechanisms, and it just gave up. I had to cut back on my dairy intake, but I get some of these which come in little tear-open individual packets. I keep a couple of them in a credit card slot in my wallet, as they're not very big, and one of those will ensure I'm fine eating/drinking as much dairy as I want in about a 15-25 minute window. Otherwise, I may get some baaaad gas, severe stomach pain, or defecate in large quantities and/or frequencies in a manner which typically makes me want to take a shower and a nap afterwards.
tl;dr: keep store brand lactase pills in your wallet — cheaper than name brand and very useful. Also, activia yogurt and lactose-free milk are harmless, and a slice of cheese here or there won't kill you or those around you.
It's the same as normal recipies but you need to treat the milk with enzyme drops first. I buy the milk (make sure it's pasteurized, NOT ULTRAPASTEURIZED (this is why you can't just buy lactose free milk to make cheese with)), put in like twice the drops as the bottle recommends (I do 40 drops per gallon) and leave it in your fridge for 2 days. Shake the milk up a couple times a day if you can.
Then follow your normal cheese recipe. It can't make any hard cheeses though because those require lactose to eat. I still take a handful of pills when I eat the cheese though just to be cautious.

Unless something about the Original strength is more stable than the other types, this tells me that it should be fine to do exactly what you mention.
Note: This is just a logical conclusion on my part. I don't know what might break down the lactase enzyme as it is held in the pills, so it's possible that the individual wrapping is more than just annoying.
You should not have to deprive yourself of cheese if you are lactose intolerant. Lactose is a sugar. Read the label of the cheese and if it is 0 sugar, it is lactose free. The general rule is that aged cheeses are more than likely to be 0 sugar than things like American cheese. And velveeta has more lactose in it than the equivalent amount of milk. One bottle of that shit will DELACTIFY about "52 pints" (oh America, when will you stop using your silly made up measurements) of milk! Way cheaper than some of the ridiculous prices I've seen on lactose free milk in stores.

They do, and they're AWESOME. I'm a pastry chef. Do you know what 90% of pastries contain? :( Dairy. I'm not talking like muffins and bread, once they're baked the lactose doesn't bother me at all - I'm talking eclairs exploding with creme de patisserie or delicate custard tartlets, god forbid I get an order for some tres leches... quality control used to make me want to die.

They have lactase enzyme pills you can take when you eat dairy that will help a lot (lactose intolerance is what happens when your body stops producing this enzyme), but you'll probably still be gassy.
My husband is lactose intolerant and buying Lactaid is at least 2x more expensive than regular milk.
To cut down on costs, we add lactase to normal dairy products such as milk, cream, and evaporated milk. We also make lots of food from scratch, such as bread and ice cream.
Stop spending so much and just get the drops of lactase yourself. Lactaid milk is just normal milk with lactase added.

Consider getting some lactase pills. They basically cut my symptoms in half if I take enough. Just take some right as you take your first bite of lactose.
The only other way I "prepare" is not eating any dairy in the week leading up to the day I plan to eat a ton of dairy. But I think you've got that covered.
If I do that, the more unpleasant symptoms usually don't kick in until the next day. But everyone's body is different.

The liquid lactase is dramatically more expensive than the pills. A "dose" of liquid, as far as I've seen, has 750 "lactase units," (whatever they are) while the pills have 9,000 each. The bottle has 75 of these doses, and if you buy the costco pills, you get 180 for about the same price. So the liquid costs more than 20 times as much.

I'd try just crushing up a pill and putting it in the milk. The taste of the binders shouldn't be noticeable in a half gallon or more.
if she's lactose intolerant, try the lactase drops. I'm really lactose intolerant but man do these things work. I haven't tried it on cream cheese yet and heat will kill the reaction so you have to do it a few days in advance, but I've even put it on pizza and been better off. I put it in milk and can drink it within a couple of days, i would assume the same for cream cheese as long as you mix it up and whatnot.

What I do know is that they prevent any pain and diarrhea from eating wheat. What do you have to base your claim on that it doesn't work?
