Edit: since this post is quite visible and lots of people are interested, I'll also plug slickdeals.net. You can set up an alert for dashcams and get a good deal if money is tight. I was able to pick up a couple Aukey DR02s for $50 each on sale. What I like about these cameras is the low profile install and capacitor.
I'd highly recommend finding a dash cam with a warranty. The main reason why dashcams die is from extended heat exposure.

this cam consistenly drops to $50 on amazon, i've got one in all my cars, it lacks a few features but is absolutely better than nothing. You'll need to find the right sd card (class 10 I beleive) and I think I paid around $20-$30 for a 64GB sd card, but its relatively cheap insurance!
I think they offer a front and rear cam option also...
Depending on where it is, check if KCBS has a traffic camera on that stretch.
Or check if any local businesses have security cameras.
Also: Dash cams are so cheap, if you need it once it will pay off
I purchased a dash cam a few months ago and it has given me great peace of mind. I got this dash cam and I have liked it so far. I would suggest probably also getting a rear cam as well, which I have yet to do. Also, just a heads up if you do get a dash cam, some sd cards may need to be formatted before they can be used on the dash cam, but this particular dash cam model (and probably most others) can do the formatting for you in the settings.
I have a dash cam by AUKEY. My car is always parked outside, ranging from a semi-covered spot at work to open parking lots at Downtown Summerlin or Town Square. It works pretty well, it's not specifically rated for heat but I haven't had any issues with overheating, the pad for sticking it to my windshield has held up, and reviews seem to indicate the same in regards to reliability in heat. It's pretty inexpensive (only $70) so it's budget conscious, but there are better options that are officially rated for high temperature and higher resolution (the AUKEY shoots in 1080p) if you have the money to spend.

I have a Viofo A119 I’ve had for a few years now that I’ve had good luck with. There are a few different A119 variants but they all seem to do well. Here is a link to something similar to what I have.

I know this is totally unhelpful after the fact, and honestly probably wouldn’t read a license plate at night, but a $50 dash cam is a great investment. I can vouch for this one:

Probably possible. Not sure if it would be worth it. A dash cam with motion detection and an additional battery might be enough to ease you worries. I had one installed and it makes me feel a little better.

That is the one I got. I honestly don't remember exactly why I picked this over everything. But it works perfectly as expected. Videos overlap by like 2 seconds so nothing is ever missed. It is sleek enough that people won't notice it. The only argument against it is that it doesn't have a rear view camera, but I doubt that's really important. As long as you can prove you did not do anything dumb to cause the accident, you're in the clear.

I have a Rexing V1 that works pretty well (there are some newer, fancier models as well). 1080p video and 170 degree field of view with file lengths of 3, 5, or 10 minutes. Auto locks video file if impact is detected and has a button that you can push to manually save a file. Once the card is out of space, it will overwrite the oldest files. If you look in my post history you'll see a question I had about a mounting issue, but it was easily resolved and is working fine now, so I have no complaints.
I have a friend with an AUKEY. The AUKEY camera has a motion detection feature that can activate the camera when the vehicle is off which could be a benefit if someone approached you at a gas station while filling up or when you're walking up to your car from a building. r/dashcams is a good resource for reviews/opinions and features of different ones.
I installed this one off Amazon into my wife's car about a year ago. It's got a capacsitor instead of a battery. They're better at handling the heat. It stays in the car full time and haven't had a problem yet. Really easy to self install and looks good.
As with their other electronics, Aukey cams are fair quality and usually well priced, but they are very basic. For example, this one is very low priced, but it lacks a lot of the features that other cameras have.
For only a little more, you can get a 1440p A119. They are about the same build quality.
What I use

Built in screen lets you review video from the camera itself. Saves to micro SD card. I highly suggest getting one like this "SanDisk High Endurance Video Monitoring Card" made specifically sustained constant writes. (Since it is constantly saving video)
It plugs in via USB to the cigarette lighter thingy in your car. I got one like this so I would have extra USB ports for charging phones, while still having my two spots for the dash cams. It comes with its own which I think has two USB ports total. I just wanted more ports.
When the device receives power, it boots up on its own, and turns off on its own when you turn off the car.
The way it writes video, it saves it in increments that are a few minutes long (You can set the duration) and when the SD card runs out of space, it just over-writes the oldest movie it has saved.
If you get in an accident, or just see something neat you want to save, there's a button you can press to make sure it saves the specific movie.
Since you'd have the long cables routing all over your vehicle, it's wise to route it so it doesn't get in the way/is hidden. I actually did need longer cables, but fortunately this dashcam uses a mini USB to standard USB.
EDIT: If you do not have a computer (and only a phone or tablet) your options for transferring the files from the Micro SD card are either getting an adapter to read micro SD on your respective phone or tablet, or buying a dashcam specifically with bluetooth connectivity if you would rather go that route.

This is actually the one I use - I just got it a few months ago. I'm not sure exactly what you're looking for, but this is small enough to hide and it has a long-ass cord and it comes with cable clips so you hide that cord. You can choose to record in 3, 5, or 10 minute intervals and when it's out of space, it'll just rewrite over unless you choose certain recordings to lock down and save.

I have capacitor dash cams in both of our cars, so you don't have to worry about the heat and rechargeable batteries. That, as well as format reminders, or automatic periodic formats are things to look for. Since these are endlessly writing to the SD card, you should format it, monthly. I had one card get messed up, in the past.

I have the Aukley cam, and hardwired it to be always one. It's been a few months so far and Haven't had a problem. The low voltage cutoff seems to work. Only issue would be if you have a short commute, you might not be able to charge the battery back to 100% after it being on all night. It works for me but I'm cheap and willing to be inconvenienced to degree to save money

I got this one, and it's serving me well. I chose it for the high temperature tolerance range (due to using a capacitor instead of a battery), and a good dual system. They have a single-cam version too, if you don't want to pay for a rear one.
Honestly, it's a waste to pay for more than 1080p. You're not going to be reading license plates with any dashcam.

Also, if you get one without internal storage, I recommend getting an SD card made for constant recording, typically "high endurance" ones.

I have a dashcam Idea for model 3! I wonder if anyone tried it, but there is a huge space behind the screen. I'm thinking of positioning a dashcam there behind. I would not even notice keeping the minimalistic design, a cable could easily drop to the phone usb ports without doing major updates to the car or wirings coming from the rearview mirror like most cameras.
