I recently got invited to go on a ski trip out in Colorado in January, and I've never been so I'm looking into what gear I need.
I already have solid base layer stuff from other sports but I don't have any of the snow pieces like pants and jacket.
I was doing some research into what types of jacket options there are and it seems like I can either go 3in1, non insulated shell + insulated mid layer, or insulated shell + layers.
While I personally have never been skiing I have a bunch of friends and family that go fairly regularly so I could see myself picking this up more going forward, so I'd like to get something I wouldn't need to upgrade quickly if I picked up the sport.

I grew up in Indiana, now in college in Michigan. If you're looking for a full winter jacket, I wouldn't go with this because it's likely too lightweight. Another frugal option is Eddie Bauer; they have constant sales so their MSRP is misleading, but they do make good clothes with a lifetime warranty. This is a good option for about $140 on sale. You can also find Alpha Industries N-3B jackets on Amazon for decent prices as well.
I'd expect to spend about $100-$120 on a jacket that will be warm enough for full Indiana winters and last a while.
The alpha industries slim fit parka is great for the price. You can find them in sale occasionally for a little over $100, but I'd pay the $140 they are on Amazon and still be happy with it. I had to size down to a medium to get the fit right. Link

If you're talking about this the reviews say its a bit boxy but honestly never had experience with that particular brand. I definitely like the grey toque paired with the navy pea coat idea!

Looking for a nice parka or really any kind of outerwear for winter. I've had my eye on the Alpha Industries Slim Fit N-3B Parka in sage/orange or replica blue/orange. I like it a lot, but I'm insanely skinny(5'8"-5'9" 115lbs.) and I feel like even a small would look huge on me. Has Carhartts quality kinda suffered recently? My old jacket was only in its second year when the seam where the pocket was ripped open. I had one of these and the pocket ripped open on the front and just held by a flap. I am guessing it caught in the washer but i have had cheaper hoodies that have not had that problem so it makes me weary of Carhartt.

First I recommend all the thermals and jackets.
Cold feet are the worst second only to wet ones. Invest in good boots and heavy socks.
If you have a thermos or if you are staying home I am a hot-cocoa addict. (Milk not water, melt marshmallows while too hot to drink, keep layering them until you can sip without burning your mouth, add cinnamon and nutmeg on top.) I recommend this to try out, its friggin' scrumptious.
