What's more nomalicious than Chocolate??? This is seriously the best dutch process cocoa powder known to mankind. No really! That much might last you until your next bulkish order...maybe. Being a carnivore, I use this to make an awesome rub for pork and poultry along with ancho chile, a bit of chipoltle chile for heat, and a dash of Mexican oregano. It is available in smaller amounts but costs more per pound then. And on to that most excellent of spices Cinnamon! Once again, this is the most nomalicious Cinnamon known to mankind. I make an unbelievable rhubarb coffee cake and amazing monkey bread with this stuff. It seriously takes any recipe with cinnamon to the next level. It can also be used to add heat to savory recipes. And for my last suggestion I give you Powdered White Cheddar!?!? Nomalicious on popcorn, for making sauces, adding to bread, and sprinkling on vegetables. It does look like recent reviews aren't as stellar as they could be but my experience with this stuff has been all good. Were I to win I'd appreciate The Flavor Bible from my wish list which I'd point you to in a PM ;)

I know you said online, but cheese is one of the last food items I'd want to buy online. I also know you said you weren't close to a big city, but you should be able to find good parmesan in smaller-than-big cities. Even in most larger-than-small cities, I'd hope.
In any case (even if you do buy your cheese online) the easiest thing is to look for one of two specific kinds of parmesan: Parmigiano-Reggiano or Grana Padano. They are both made in Italy to particular specifications and they are both truly excellent.
You will find plenty of places selling Reggiano online, and at least a few selling Grana Padano too. If you buy online, however, you get the piece that somebody else picked out for you, instead of the one you picked out for yourself.
Both of these excellent cheeses are delicious right up to the rind, but (like most round foods) they are at their very most delicious in the center. A small crumble from the center of a freshly-cut wheel of Regiano is my very favorite cheese I've ever tasted.
When I sold cheese, I used to cut Reggiano in wedges, to distribute the rind among as many pieces as possible The wedges from the top and bottom of the wheel always sold well (maybe because they looked sort of like a piece of pie?) but those would be my last choice.
My first choice would be a piece with the lowest rind-to-center ratio. You can only find those by going out to the store and looking for them, though.
My local, non-big city chain grocery store doesn't sell Grana Padano, but it always has Reggiano for a regular price of $19/pound. A half a pound of Reggiano (or Grana Padano) will go a lot further than $8.50 worth of that Kraft cardboard-in-a-can crap would. But even if you buy some other domestic parmesan (Bel Gioso doesn't suck) at least buy a chunk of it and grate it yourself.

This is more or less just a PSA that parmesan cheese crisps make an excellent “guac vehicle”, a.k.a. tortilla chip substitute.
I buy these ones from Costco, and while they’re just small enough to be kind of annoying—I don’t have the patience to DIY them. I know I’ve seen recipes for this though. Maybe there’s a way to make them tortilla chip shaped too, idk.
You can use any guac recipe, for the record. This is what I call “guac for one”, but you can double the recipe as many times as you want. Adjust the avocado content to your personal macros. Also, really every ingredient here is “to taste”—if you like more, add more.
1 medium haas avocado - halved, pitted, and peeled
1 wedge of lime
1/8 medium onion - diced
1/4 roma tomato - seeded and diced
1 tsp fresh cilantro - finely chopped
1/3 clove fresh garlic - minced extremely finely, to a paste
sea salt - to taste
pepper - to taste
Put the avocado in a medium mixing bowl and mash the pulp. I like to leave it a little chunky, but you do you. Add salt and pepper to taste. I just use our tabletop shakers to avoid adding too much. Squeeze the wedge of lime to release some juice. Discard the wedge. Add fresh garlic paste. Mash the avocado again to combine. Fold in the onions, tomatoes, and cilantro.
You’re done. Enjoy with cheese crisps.

American here, can confirm Gjetost is delicious (YAY-toast) You can find it at Safeway or QFC, usually it's a brand called "Ski Queen" It's in a bright orange cube, hard to miss.
I'd describe the taste as a very sweet, very nutty cheese--it's good with fruit, or on warm toast.

I eat them plain, with dip, and crushed on salad. Sometimes I make Parmesan crisps myself, too, but these are just their own delicious version. They have 1g carbs and 150 calories for 23 chips, which is a really generous portion.

Parmesan whisps. I'm not a fan of pork rinds, so these are great for satisfying that crochet craving when i get tired of nuts. You can also get these at Costco usually if there's one near you. They're amazing.

This is true, you can! Although I found it at my local food service outlet store (a cash-and-carry Sysco outlet.) And if you have a GFS store in town you may be able to find it there as well.
ETA: This is this correct cheese referenced in my recipe. I don't know what alchemy they do to it to make it different but it does make a tangible difference from regular WhAm.

I guess I should have mentioned that you're forced to buy a three pack if you want prime shipping. It's a pack less than the site makes you buy, though.
Breakfasts - Bulletproof coffee, and some coldbrew coffees with cream till lunch
Lunches - protein shake, with some Cello cheese crisps
Dinners - Hubby's in charge tonight and tomorrow, so probably bacon wrapped hotdogs or some scramble (bacon, broccoli cheese and scrambled eggs). I'll make Hamburger salads or some keto veggie succotash (zuchinni, broccoli, and cauliflower cooked with bacon) later in the week. I've also got some low carb Chicken Tikka Masala in the fridge, make some cauliflower rice with it, Yum!!
