I've done this!! My SO loves the marshmallows, but doesn't like the cereal. She went to her folks for Christmas, and I separated 3 boxes for her while she was gone. She loved the gallon bag I made for her! :)

This is the most random item on my wishlist... mainly because I absolutely love lucky charms only for their marshmallow pieces (I usually buy the cereal box to eat all the pieces and leave the rest of the cereal)

So many good things here :D

I had: biscuits and gravy, eggs on hash browns for breakfast, half of the quesarito, a Moolatte from DQ, some Cheez-its (Grooves White Cheddar, they are really good), some Peanut Butter Chocolate fudge, Chinese Buffet (that was terrible), Sun Chips, 2 pieces of pepperoni pizza, some Panera Mac and Cheese that they sell at Costco now, a vanilla cupcake, a bowl of Lucky Charms with tons of marshmallows, and a fresh baked croissant with jam. :)

They lasted me about...3 weeks. If I'm being particularly lazy, I'll eat cereal for lunch as well as breakfast. I probably bought more Lucky Charms in those 3 weeks than any other time in my life. It was glorious.

Buy a bunch of the bags of just the marshmallows, then refuse to buy more lucky charms until the current box is finished.

I've had vegan marshmallows from the store. My boyfriend and I buy Dandies because they are readily available at our local Whole Foods and pretty good. Sweet&Sara is another.
