Don't worry, when I was diagnosed a few years ago, I was completely overwhelmed as well. I completely ignored Metformin to this day and live a healthy life, so good on you. Diet is all you need, however depending on the person, Metformin maybe a requirement.
GLYCAEMIC INDEX
The main thing you need to look out for, are slow release foods. These foods release slowly into the bloodstream and help your body deal with the carbs much easier.
When I started out, I used the glycemic index table to find the right food.
The GI table goes from 0-100, Fruit Roll-Ups for example have a GI of 99. 99 Is really bad and should be avoided because it releases fast into the bloodstream. I usually focus on foods with a maximum GI of 55.
Again, this is me, every diabetic is unique and you must test every time, before and after every meal.

Weigh absolutely everything, before you cook your meal. Know the amount of carbs you eat per meal. When I started out, I focused on eating as few carbs as possible, between 10-20 carbs per meal. Again, this is me, there are other diabetics out there that eat that amount within a day.
Experiment, see what your body can handle. I recommend to go really low on the carbs until you get your sugar down to normal.
My meals usually consist out of beans in general, kidney beans or chick peas, vegetables and meats etc. I was able to bring my sugar down from 300 to normal range within three weeks.
Just to give you a basis, it takes me around 3-4 days to finish an entire 200g can of kidney beans.
FOODS I RECOMMEND
They are a little more carb heavy, around 30 carbs for 6 oatcakes, but are quite nice when you want a snack.
I will probably update the list, should I remember more.
WHEN TO EAT
It is recommended to wait at latest four hours after your last meal, before you eat your next meal. Check your sugar at around 2 hours after the meal.
You don't have to eat full blown meals every four hours, but a couple of carbs should suffice. Again, every diabetic is different, I can eat nothing for 10 hours and my sugar is fine.
EXERCISE
Go to the gym or walk every day, get active and lose weight, especially in the stomach area.
DRINKS
Stop drinking beer and any alcoholic beverage with a colour. Vodka has 0 carbs per shot and you can drink it in moderation. Don't forget to eat a couple of carbs when you drink.
I must admit, I consume a lot of diet drinks and should really cut down on them. I recommend you to do the same, so you decrease the appetite and sweet tooth that comes with it.
INGREDIENTS TO LOOK OUT FOR
It is very important to become an ingredient Nazi. Any product that has;
Ditch it all, do not buy.
Even wholemeal breads come with sugar and mixtures of white flour. I'm lucky that my local Aldi store sells 100% wholemeal bread. Try to find the same. A lot of packed peanuts have sugar as well, even pickled cucumbers.
Always cook fresh and ditch the instant stuff, it's all bad.
ALLOW YOURSELF A TREAT
It is ok to treat yourself now and again. Once you get your sugar down to normal and work out, you can have a glass of wine etc. I ate an Oreo biscuit the other day, although I regret it, that motherlover had over 10 carbs.

You'll be fine, don't you worry. Test your sugar rigorously, learn what you can eat and whatnot and after a while, you can manage everything with ease.

These are a few of what I think of as my guy friendly foods. It keeps hubby from snacking on the really bad stuff. I would recommend going to the store and just filling up a box on your own instead of ordering them online since it's so expensive to order that way. You can find some version of these in almost any sizable grocery store and it will cost you far less to make a care package yourself. I just looked them up online in case you have to go that route, plus you'll know what the packaging looks like.
On a side note if you need help with recipes or ideas just let me know. I think it's really wonderful that you are trying to help him. I hope you won't be too disappointed if he doesn't respond the way you would like. Being a hoarder sort of goes hand in hand with mental issues and a resistance to any kind of change no matter how small or important. I hope that he embraces some change and appreciates your effort.
Edit: Online prices for these items are very pricey, that's why I suggested looking for them in the store. In our store the family size bags of Utz no salt potato chips run about $3 and there are always generic store versions. I included the online link so OP could see what they look like and perhaps find it cheaper.
Dried beans are MUCH cheaper. They're a bit of a pain in the ass because you have to soak them overnight (or at least several hours) before you cook them but the savings is very much worth it. For a bonus, if you want to fart a lot and loudly, drink or cook with the water they soaked in instead of disposing it.
The same goes for any type of dry rice as opposed to the instant variety. Personally, I avoid the all white rice because the nutritional value is super low compared to any other type of rice. Although, even the white rice has more nutritional value than Ramen and it's cheaper.
Another good trick if you don't have much time is to buy a rotisserie chicken. I eat the legs for one mean with nuked frozen veggies and then shred the breasts to make several more meals. So for $7ish I can get 3-4 meals. It's easy to add variety too. I use the shredded breasts for anything from wraps to adding BBQ sauce and making sloppy joe type things.
For breakfast, Oatmeal is your friend. If you can afford dried fruits to add to it, its much better. You can get two 5lb bags of it on Amazon, that's over 100 breakfasts. If you want to make it super healthy, just add a TBsp of brewers yeast to it before you add the boiling water. That $20 of brewers yeast will last you years. I now also add Acai berries to mine but that's $30 every two to three months.

Yesterday was my first official day on my own as a boss, and it went alright. Not without some bumps, but thankfully they were small bumps that were easily fixed.
In Keto news, I'm down 2lbs more to make it 165! I don't remember when the last time I saw this number was, for sure before I got pregnant 11 + years ago. It's crazy! The mom stomach is a slow go, and I realize now that I’m going to have a loose skin/stretch mark combo that’s very becoming. Oh well! I guess I can’t win ‘em all with the weight loss. OH OH! I don’t know where I read about it, but I also bought Keto cereal and it has made me so happy!! I had it for dessert last night with some blackberries and it has totally satisfied the need for crunch and for the ritual of cereal.
I have to confess, that between Saturday and Sunday I had what totalled to be 8 red new potatoes. The hangover on Saturday was reeeeeeal (Still have confetti in my purse) and I just wanted a starch. I felt bad about it at the time but in the grand scheme of things it’s not much. Oh and on Sunday when I was meal prepping for my kid and my sitter, I had three 1 inch cubes of honeydew, sue me! I miss fruit!

This is a box with a fuckton of oats in it.
I pour a bit of milf into the bottle (to avoid clumping) and grind 1 cup of oats with the coffee grinder then pour them into the bottle.
Then depending on the amount of protein you need put a couple scoops into the bottle. Then toss your creatine in there. I don't put bananas in the shake but you could, I'd probably have to use my blender for that though.
Anyway now you have a bottle with a shit ton of powder in it. Add some more milk but save room for:
Chocolate syrup. (or whatever type of flavoring you want) I put a bunch in there, like 2 big squirts, but find out however much you need to make it taste good.
Then I take a big scoop of peanut butter and toss it in there. I'm not sure how much I put in but I'm pretty consistent, just be consistent. I think it's between 2 and a half and 3 tablespoons. Add milk till it's mostly full. Then shake the shit out of the bottle like you were trying to jerk off the demon from This is the End. The shake will be thick as balls so just open your throat and chug it Remy laCroix.

Every night I have a base of either quinoa or rice, prepared in my rice cooker with various vegetables and spices. If rice, I'll roll it up with nori for homemade veggie rolls.
With dinner I have a 12 ounce glass of water with two tablespoons of flax and one tablespoon of chia.
I buy my pinto beans and black beans loose in bulk at the local grocery store when picking up my vegetables, usually around 5 or 6 pounds of each at a time.
Cumin, garlic powder, tahini, and dry garbanzo beans go for a good homemade hummus in a food processor. Needs a fresh lemon or two squeezed into the tahini. Original recipe had olive oil and salt, I leave out the oil entirely and either cut the salt down to a dash or none at all.
I keep oats and almond meal on hand to make pdb cookies with the same food processor, just add a banana or two, cinnamon, nutmeg, almond butter, and raisins if you like. The original recipe called for dates and I said eat me I'm doing raisins.
I got peppermint in bulk to make tea with, both by itself as well as mixing with chamomile, mugwort, etc.
I keep almost all of the above in these convenient cereal containers to both extend shelf life, shelf space, and remove any branding or advertising. Mason jars are also awesome!
Don't forget you can dehydrate your own food as well!

I keep it pretty basic, just add milk, honey, and cinnamon. But you can go balls out with nuts, raising, fruit, etc., if that's your schtick. I really do think it's a lot better than the packets, although I do occasionally keep those around if I expect to be busy.

I posted this a few days ago, but posting again because I love it. This is my version of Keto & Co's plain hot breakfast.
My current breakfast obsession is:
Stir the dry ingredients together, then add water and mix well. Nuke for 1.5 min. Comes out very similar to malto meal or cream of wheat. I add 2 Tbsp butter and a ton of cinnamon, tiny splash of vanilla and 15 drops of ez-sweetz (sucralose) cause I like it sweet. SO freaking good and hot and cinnamon-y.
Macros for the whole thing, prepared as above: 303 cal, 4 net carbs, 3 protein, 27 fat.
Well, these are the first non-Quaker oats I've ever had, and I don't have the package. Here's a link. I don't actually know what steel cut are like, but these have an awesome texture. They cook just as fast as Quaker's instant - I just use the scalding hot water out of our water coolers at work and they're ready in less than a minute. Better flavor and texture than Quakers by far.

The easiest is probably to get better tasting oatmeal. If you're eating quaker's, it's only uphill from there. Quaker's has a muddy texture and tastes like cardboard tbh.

Prepackaged oatmeal, like Quaker brand, is processed rolled oats, which are oats without the husks. Check out steel cut oats, which are just chopped up whole oats. Way more nutrition out of those babies.

I started making my own granola. 100+ servings of rolled oats costs $17 and lasts me about three months of granola and overnight oats-making needs. Easily a $100/year savings, as bags of granola cost $5+.

No problem! You can definitely use all oatmeal, we just prefer the texture that the combination gives.
Rolled Oats are simply the whole oat, while oatmeal is the whole oat flaked or processed into small pieces. Here are Rolled Oats on Amazon and oatmeal would just be that ground a bit finer.

I received my order of 10 lbs of oatmeal and 240 bags of Bigelow green tea for under 40 bucks. I eat/drink both daily, so it was convent and the tea was much cheaper than the grocery store. I typically stock up on oatmeal when it is on sale, so not sure how much/if I saved any money there.
Anyone remember Rice Krispies Treats Cereal? The pieces were so sharp and jagged that it was like eating lava rocks, but it was worth it because it was so delicious.

That oatmeal with the gummy dinosaur eggs. Not that I go oatmeal shopping a lot but every time I looked they were nowhere to be found. Kinda like dunkaroos which would also be on my list of things to bring back.
